Savory Slow Cooker Oatmeal with Crispy Bacon

gluten free rolled oats

potato

Butter oil

Optional flaxseed 2 tbsp

tsp minced garlic

Sea Salt

black pepper

c sliced cherry tomatoes

1/4c Parmesan yeast

tsp red pepper flakes

c broth

almond milk or coconut milk unsweetened

uncured nitrate free bacon strips

c sliced red onion

Sliced Avocado

spinach

Microgreens

Red pepper flakes

Parmesan shavings

crispy bacon and onion

Pepper

Optional egg

Place the gluten free oats, diced peeled squash, tomato, butter or oil, flaxseed, garlic, seasoning, milk, broth, and parmesan in the crock pot or slow cooker. Mix all together and set on high 3 hrs or low for 5. Could be more or less depending on your slow cooker.

Stir and scrape the sides of the slow cooker every hour if you are using real cheese. The flaxseed with help bind everything together and thicken it up like steel cut oats.

Add a 1/4 c more milk or water if you want to thin out the oats (to create more of a porridge) the last hour of cooking.

When the slow cooker oats are about ready, preheat oven to 350F and Line a baking tray with foil.
Place bacon strips and sliced onion on the tray on top of foil. Bake for 15 minutes or until crispy.
Reserve 1/2 to 1 tbsp of the bacon grease.

Stir the extra bacon grease into the oats before serving.

Spoon savory oatmeal into bowls. Add your toppings of choice (listed) and crispy bacon with onions to garnish.

Great recipe. I have been suffering from constant diarrhea issue and so the doctor had advised me to include oatmeal in my diet. I would definitely recommend it to people who face similar health condition. Thanks for sharing such an amazing recipe.

regular steel-cut oats (no substitution)

water

milk (any variety)

maple syrup

Grease

Grease the bottom and sides of the slow cooker insert using coconut oil, cooking spray, or butter.

Combine

Combine the steel-cut oats, water, milk, maple syrup, brown sugar, cinnamon, vanilla, and salt together in the slow cooker.

Cook

Place the lid on the slow cooker and cook for 6 hours on low for a firm texture and 8 hours on low for a softer texture. Alternatively, cook on high for 3-4 hours.

Serve

To serve, dish up oats and top with additional maple syrup and chopped nuts if desired.

I made this for the first time last night, as a trial run before I was hoping to bring it on vacation. Super easy to put together but when I woke up this morning, the top was burnt &amp; so was the bottom so only the middle was edible. The part that was edible was tasty but we lost about 1/2 of our recipe to the part that was burned. I followed the recipe exactly so I’m not sure why this happened. I’ll try once more and maybe cook for 6 hours instead of 8 and I’ll update my review.

Okay my luck with Pinterest recipes is awful - not this one though! My husband doesn’t even like oatmeal and he couldn’t stop eating this! This is by far our new favorite Sunday brunch meal. This recipe is so easy and DELICIOUS! I cannot say enough good things about this recipe!! mmmmmm!!!!

How soon can you mix this up and let sit?   Could I mix Friday afternoon and not then crock pot on until late Saturday night ?

This is my favorite recipe for oatmeal. I did have to cut my second patch down 2 hours because the oatmeal sticking the bottom and I even used coconut oil on my first try. It was still edible, but my second time was perfect. 
Being a vegetarian, I wanted something to last for a few days before starting a new recipe.
