- 3 lbs boneless leg of lamb, (about 3/4 lb more if bone-in)

Set up your smoker as per the manufacturer’s...

Set up your smoker as per the manufacturer’s instructions and preheat to 225 – 250 F. Add your choice of wood chips per the specifications of the manufacturer. 

Liberally rub all sides of the lamb with...

Liberally rub all sides of the lamb with seasonings blend. Either mix one with salt, pepper and oregano (all to taste) or use your favorite.  

Place the lamb directly onto the grill/smoker rack,...

Place the lamb directly onto the grill/smoker rack, fat side up. Smoke. Replenish the charcoal and smoking wood as needed to continue smoking in the 225 – 250 F range.

Smoke until the internal temperature of the leg...

Smoke until the internal temperature of the leg of lamb registers in the 140 - 150 F range. This is medium-rare going on medium. If you prefer it more done, leave it a little longer. 

Transfer the lamb onto a cutting board and...

Transfer the lamb onto a cutting board and let rest for 10 minutes. You may loosely tent it with aluminum foil to keep it warm.

Carve and serve immediately.

Smoked Rack of Lamb with Garlic and Rosemary - Reverse Seared

Racks of Lamb (preferably already frenched and trimmed)

Tbsp Avocado or Olive Oil NOT extra virgin

Garlic

Sprigs Fresh Rosemary (removed

Kosher Salt

Black Pepper

If your lamb bones came unfrenched remove the fat cap from the broad side of the lamb and the trim excess fat from in between and around the exposed boes using a boning knife.

Mix the oil, garlic, rosemary, kosher salt, and pepper in a bowl.

Coat each rack with the garlic mixture and then wrap in plastic wrap, place in an aluminum pan and marinate in the refrigerator for at least 2 hours, preferably overnight.

Prepare the Rack of Lamb

Light the smoker or set up the grill for indirect cooking with a smoker box and preheat to 225° F.

Add wood chips to the smoker tray, smoker box, or add a chunks to the firebox/charcoal.

Once the smoker/grill is up to temperature and smoke is being produced, place the racks on the smoker. An easy way to do this is to position them with the bones facing upwards and interlaced, leaning against each other.  Or, you can tie them into a crown roast shape using butcher&#039;s twine

Insert a temperature probe into the thickest part of the middle of one rack to monitor the temperature

Set up the Grill or Smoker

Once the rack of lamb has reached an internal temperature of about 105°F, either open the vents, or turn up the temperature or burners as high as they will go.

If using direct heat, sear the rack of lamb, about 2-3 minutes on each side until brown and sizzling.  If turning up the indirect heat in a charcoal or electric smoker, cook at the highest possible temperature for 5-6 minutes or until outside is sizzling and internal temperature reads no higher than 125°F.

Remove the lamb from the smoker/grill and place on a plate, uncovered, to rest for 5-10 minutes while you finish the sauce. Check that the internal temperature is no higher than 130°F for a perfect medium rare doneness.

Reverse Sear the Rack of Lamb

Slice the lamb with a meat slicing knife into double boned chops and serve roughly 2 chops per person.

The Best Smoked Rack Of Lamb: Australian Lamb on a Big Green Egg

Tender, juicy smoked boneless leg of lamb on the Traeger pellet grill is a popular Easter main dish. Here’s what you need to make this delicious smoker lamb recipe…

Smoked Leg of Lamb (Boneless Recipe On Traeger Smoker)

leg of lamb (boneless)

olive oil

tbsp mustard (dijon)

garlic (diced)

tbsp rosemary (fresh diced)

½ tsp oregano (dried)

½ tsp thyme (dried)

salt (kosher

¼ tsp pepper (fresh cracked, black)

Preheat the Traeger Grill

Preheat the Traeger Grill or whatever pellet smoker you’re using to 225 degrees F for 15-30 minutes.

Decide

Decide if you want to take off the netting from the lamb leg before smoking it. Technically it holds together the lamb leg, especially since the bone has been taken out. But we left the netting ON the lamb for this demo and it did take off chunks of the seasoning crust when it was done smoking. It’s your choice.

Season the boneless leg of lamb

Season the boneless leg of lamb. Start by adding olive oil to the outside and massage it in with your hands. Next, in a small bowl, make a rub with the dijon mustard, garlic, herbs and seasonings. Message them all the seasonings into the lamb.

Smoke leg of lamb on Traeger Grill

Smoke leg of lamb on Traeger Grill. Place the boneless leg of lamb directly onto the pellet grill grates, fat side up. Close the lid.

Pull boneless lamb leg off the smoker

Pull boneless lamb leg off the smoker. Expected cooking time for smoked boneless lamb leg is about 2.5 - 3 hours for medium rare. MEDIUM-RARE TEMP: we removed the boneless leg of lamb when the internal temperature reached 125 degrees F. MEDIUM TEMP: If you prefer a medium finish, pull the boneless leg of lamb off the smoker when the internal temperature of the meat reaches 135 degrees F.

Rest smoked lamb leg

Rest. Allow your boneless leg of lamb to rest for at least 15-20 minutes, covered with foil so it reaches a higher internal temperature. MEDIUM-RARE FINISH: Let it rise to 135 degrees F. MEDIUM FINISH: Let it rest on a cutting board until the inside temperature rises to 145 degrees F.

Slice and serve smoked lamb

Slice and serve smoked lamb. Remove the netting and cut the boneless leg of lamb into slices, thick or thin slices (our fav) depending on your preference. Enjoy!
