You can&#039;t beat the ease of this creamy and cheesy Smoked Sausage Pasta for a 30-minute dinner that the whole family will love!

Cheesy Smoked Sausage Pasta with Broccoli

elbow macaroni ((about 8 ounces))

broccoli florets

olive oil

sausage

finely-diced onion

butter

all-purpose flour

half-and-half cream

(about 2 cups) sharp cheddar cheese, grated

(about 1 cup) smoked gouda cheese, grated

dry mustard

Cook macaroni in a large pot of salted boiling water until al dente, according to package instructions. During the final 3 minutes of cooking time, add the broccoli florets to the boiling water with the pasta. Drain and set aside.

While the pasta and broccoli are cooking, heat 1 tablespoon of olive oil in a large cast iron skillet or Dutch oven over medium heat. When the oil shimmers, add the sausage rounds and the diced onion. Cook, stirring regularly, until the sausage is browned and the onion is tender, about 5-7 minutes. Remove sausage and onions from the skillet and set aside on a plate. Wipe out the skillet.

Add butter to the skillet and cook, stirring, until the butter melts. Sprinkle in the flour and cook, stirring constantly, for one more minute. Gradually whisk in the half-and-half. Cook and stir until the mixture bubbles and thickens, about 2 minutes. Reduce the heat to low; add the cheddar, gouda, and dry mustard; stir until the cheeses melt. Add cooked macaroni, broccoli, sausage and onion back to the skillet; toss to combine. Garnish with parsley.

garlic powder

red pepper flakes ((optional))

(28 ounce) can petite diced tomatoes, (well drained)

penne pasta

crispy fried onions,

Colby Jack or cheddar cheese, (divided)

peas

Optional garnish: chopped fresh herbs

Preheat oven to 425°F. Spray 9 x 13-inch baking dish with cooking spray and set aside.

In a large bowl, whisk together condensed soups, milk, chicken broth, parsley, oregano, rosemary, thyme, garlic powder, onion powder, salt, pepper, and red pepper flakes. Stir in the diced tomatoes, smoked sausage, uncooked pasta, ½ cup of the fried onions, and ½ cup of the cheese.

Transfer the pasta mixture to the prepared baking dish. Cover tightly with foil and bake for 45 minutes.

Remove the foil and give everything a stir in the dish. At this point, check to make sure that the pasta is al dente (tender, but with a firm bite). If it’s still too hard, cover again and return to the oven until the pasta is al dente. Once the pasta is al dente, stir in the frozen peas, sprinkle the remaining 1 cup of onions and ½ cup of cheese over top.

Return to the oven and bake, uncovered, for 5-10 more minutes, or until the pasta is tender and the cheese is melted on top. Garnish with sliced green onions or chopped fresh herbs and serve!
