S'mores Cookies are one of the BEST Easy Cookie Recipes I have ever made (or tried!). These Easy Smores Cookies are a favorite at our house for Christmas or any time of year. It can be our little secret that they're made with pre-made refrigerated chocolate chip cookie dough, dipped in milk chocolate, then graham cracker crumbs. Everything you love about S'mores in cookie form. DIVINE! Easy S'more Cookies for the win!

S'mores Cookies (Easy Cookies Recipes)

chocolate

marshmallows

milk chocolate melting wafers chocolate chips

graham crackers

Preheat oven to 350 degrees F.  Line a large baking sheet with aluminum foil or parchment paper.

Place cookies 2 inches apart on baking sheet and bake per package directions.

Also, while cookies are baking, crush the graham crackers and pour the crushed crackers in a small bowl.

When cookies are ready, transfer cookies and tray to a cooling rack.

Turn the oven to broil.

Place 8-10 mini marshmallows on the top of each cookie and very lightly press down (just so marshmallows will stay put).

Place the cookies back in the oven, under broil, just until marshmallows begin to turn golden brown.  **Watch closely – marshmallows burn quickly.

Remove the cookies from the oven, place the tray with the cookies on a cooling rack and allow them to cool completely.

Once cookies have cooled, melt the chocolate (melt in 30 second intervals until smooth and fully melted when stirred.) then dip each cookie halfway into the melted chocolate.

Sprinkle crushed graham cracker crumbs over the chocolate.

Transfer cookies to a cooling rack until chocolate is set.

These Brownie Cookies are my go-to cookies whenever I crave s&#39;mores without campfire. S&#39;more Brownie Cookies are filled with marshmallows, chocolate chips, and crushed graham crackers. Each cookie is bursting with campfire flavors – they’re that good.

S'more Brownie Cookies Recipe

brownie mix (510 grams, Ghirardelli Chocolate Supreme recommended)

eggs (100 grams)

unsalted butter (57 grams, melted (½ stick))

chocolate chips (170 grams)

mini marshmallows (43 grams)

Prepare

Line a baking sheet with parchment paper. Set aside.

In a large bowl, stir the brownie mix, eggs, butter, chocolate chips, marshmallows, and graham crackers together until combined.

Chill

Tightly cover the bowl of cookie dough and refrigerate for 30 minutes. While the dough is chilling, preheat oven to 350°F.

Scoop

Once the dough is chilled, scoop a heaping tablespoon worth of brownie dough onto a baking sheet. Repeat to have 6 cookies on a medium baking sheet or up to 12 on a large sheet, leaving at least 2 inches between each cookie.

Bake

Bake for 11-12 minutes, or until the edges are set.

Cool

Allow cookies to cool on the sheet pan for 5 minutes, then transfer to a cooling rack to cool completely. Repeat with remaining cookie dough.

These turned out so well!
Cannot wait to make them again when I have guests over.

Hi Becky, I tried your cake mix cookie recipe but I made peanut butter cookies and then made a very light and fluffy coi whip peanut frosting to go on top. They were a BIG hit!!!  They were gone before I could get a picture

S'mores Brownie Cookies

Our delicious S&#39;mores Cookies start with a thick and chewy graham cracker cookie base, loaded with chocolate and marshmallows.

S'mores Cookies

butter (, room temperature)

sugar

brown sugar (, packed)

vanilla extract

all-purpose flour

graham cracker crumbs

baking soda

salt

chocolate chips

(1.5 oz) Hershey's chocolate bar (chopped)

mini marshmallows

Preheat oven to 375 degrees F. Line a baking sheet with parchment paper.

Cookie Dough: In large mixing bowl cream together the butter, granulated sugar and brown sugar for 2-3 minutes. Add egg, egg yolk and vanilla then mix. Add flour, graham cracker crumbs, baking soda and salt then mix until combined. Stir in chocolate chips.

Chill dough in the refrigerator for 15 minutes.

Scoop cookie dough into 2 Tablespoon size balls and place on prepared baking sheet, a few inches apart. Press down slightly on the cookie dough balls, to flatten a little.

Bake for 8 minutes. Remove from oven and gently press 2-3 small pieces of Hershey&#39;s chocolate and 2-3 mini marshmallows on the top of each cookie.  Return to oven for 3-5 minutes.

Allow to cool on the baking sheet for 5 minutes before moving to a wire rack to cool completely.

I loved this recipe so much that I sent it to several friends and they loved it too. Very good!! Thank you.

I made these tonight, they turned out good. I put a full Hershey's piece in the middle for aesthetics and s’mores vibe and even then it turned out fine for me. Recommend putting your dough back in fridge between batches.

Smores is my husband's favorite dessert, so I made these for his birthday! They were a huge hit. We stuffed the marshmallows inside of the balls instead of having them on top, and they had a lovely texture. This did yield only 15 cookies and I had to add a few minutes to the cook time. I'd recommend just a little bit of crushed graham cracker on top with the Hersheys for a little extra crunch.

But, 🥲 does each cookie total 243 calories?

Great crowd pleaser, instead of mixing in the marshmallows I smoosh three or four on top right after I take them out of the oven. No melty mess and they look extra fancy!

Tried this recipe out and it tasted AMAZING

These were a big hit for family cookout. They are so delicious and soft! I also had a sticky mess on my first pan, so my advice to keep them from spreading out is to form a ball in your hand and try to keep the marshmallows on top. The rest turned out perfectly once I squeezed the dough together. Parchment is a MUST, as is the 5 min resting on the pan. Recipe also doubles nicely.

I am a very seasoned and experienced baker, I followed the directions to a tee, and these probably taste ok, but they turned into a horrible, melted mess. Was very disappointed since this site is usually a go to for new recipes. Do not waste the ingredients to make these

These were amazing. Suggest keeping dough cold so the cookies don't spread.

Melted into a horrible mess. Edges burned within 6-7 minutes and the middle was a pool. Followed the recipe down to the gram in measurements and I bake often. Seriously disappointed. I don’t know if it was missing more of a binder or what but it did not hold together at ALL. I should have listened to the previous comment stating this.

These literally turned into little flat melted piles in the oven
