all-purpose flour

Preheat the oven to 350 degrees F. Spray three standard 6-cup muffin tins with nonstick cooking spray.

Fill a bowl with hot tap water. Place the raisins in the bowl to soak and plump.

In the bowl of an electric stand mixer, cream the butter and granulated sugar, beating on high until light and fluffy. Approximately 3-5 minutes.&nbsp;Once the butter mixture is fluffy, beat in the egg and caraway seeds.

Meanwhile, in a separate bowl mix the flour, baking powder, baking soda,&nbsp;and salt.

Scrape the mixing bowl with a rubber spatula. Then turn the mixer on low and alternate adding the flour mixture and the buttermilk until both are well combined.

Drain the raisins in a colander, tapping to remove all excess water.&nbsp;Scrape the bowl again. Then turn the mixer back on low and mix in the raisins.

Use a 3 tablespoon scoop to portion the batter into 18 muffin cups.&nbsp;Sprinkle the top of each muffin with Turbinado sugar.

Bake for approximately 20 minutes, until a toothpick inserted into the center of one muffin, comes out clean.&nbsp;Cool in the pans for 5 minutes, then gently dump out the muffins.

Preheat oven at 375˚F. Generously grease a 10” cast-iron skillet with 1/2 Tbsp butter.

In a large mixing bowl, whisk together flour, sugar, salt, and baking soda. Cut butter into small pieces and use your fingers to work the butter into the flour until crumbs form stir in the raisins, breaking up any clumps of raisins. Make a well in the center.

In a large measuring cup, whisk together the buttermilk and egg then add this mixture into the flour mixture. Use a wooden spoon and mix just until lightly moistened and dough barely starts to come together.

Transfer to a floured surface and use floured hands to shape the dough just until it forms into a round loaf. It should be shaggy. If it’s too sticky to handle, dust lightly with flour. Do not over-mix or bread will be tough.

Transfer to the buttered pan, use a knife to score the top with a large and deep “X”. Bake in the center of your preheated oven at 375 for 50-55min. When you tap on the bread, it should sound hollow inside. Transfer bread to a wire rack to cool. Enjoy within 2 days of making it and refrigerate leftovers up to a week.

Set a rack in the middle of your oven and preheat it to 450°F. Mix the flour, baking soda, and salt in a large bowl until they are fully incorporated.

Form a well in the center of the flour mixture and fill the well with the buttermilk.
