Spicy Sofritas Tofu

poblano pepper

1-3 individual chipotle peppers

Roast your poblano

Hold the poblano over the flame on a gas range until it&#8217;s hot and blistery. Alternatively: turn your oven to the broil setting, coat the poblano with oil, place on a baking sheet, and roast for 15 minutes at a time until it&#8217;s soft and blistered. 

Make a sofritas sauce

Place poblano, chipotles, garlic, spices, and salsa in a small blender or food processor (EXCEPT tofu). Pulse until a mostly smooth paste forms.

Slice the tofu and press with a clean towel to remove as much excess moisture as you can (the drier the tofu, the better it soaks up the sauce). Heat a drizzle of oil over medium high heat. Scramble the tofu into small bits with a spatula or wooden spoon. You can do beans or no beans &#8211; this is a choose your own adventure here. Add the sofritas sauce with 1/2 cup water. Simmer for 15-20 minutes until the sauce is richly colored and thickened slightly. Add more water as necessary, and season to taste with the salt and lime juice.

I love Chipotle bowls and get teem pretty often. Never cooked with tofu, though. This veggie bowls look outstanding! Delicious and no extra charge for guacamole :) Pinned!

Tofu is an excellent source of protein and mixed with all the spices and veggies and in this recipe, it will look and taste like ground beef.

Everyone complains about the Philadelphia airport, but I love it because a Chipotle was recently added AND it offers sofritas. (The Chipotle in my town is not as tofu friendly and does not offer the sofritas. Hmph.)

Spicy Sofrita Veggie Bowls

Copycat Chipotle sofritas - tofu sofritas in the same style served at Chipotle, but even more flavorful (and healthier)! Firm tofu is pan-fried, then shredded and braised in a rich, spicy, and savory adobo sauce. Skip the lines and make your own vegan burrito bowls at home!

Copycat Chipotle Sofritas (Spicy Adobo Braised Shredded Tofu)

oz extra-firm tofu

1 and 1/4 tsp cumin seeds (lightly toasted)

coriander seeds (lightly toasted)

tsp black peppercorns (lightly toasted)

oregano

tsp coconut sugar (or other sugar)

chipotle peppers

tb additional adobo sauce

low-sodium vegetable broth (divided)

onion

garlic (minced)

tomato paste

tbsp low-sodium soy sauce ((or tamari))

tbsp cider vinegar

yeast

Press the tofu using a heavy object &amp; towels, or your tofu press, for at least 5 minutes to remove any excess moisture. Slice the tofu into about 8 slices.

In a skillet, add 1 tb. or so of grapeseed oil over medium-high heat, until shimmering. Add as many slices of tofu as you can fit without crowding.

Cook the tofu for 2-3 minutes on each side, or until evenly browned all the way around the outside. Remove from the heat and repeat with remaining slices of tofu. Set aside.

Once the tofu has cooled, chop it into very small pieces, or to the size desired.

Prep the tofu:

In a dry skillet over medium heat, toast the cumin seeds, coriander seeds, and peppercorns just until they start to smell fragrant. Add them to a spice grinder or mortar &amp; pestle, along with the oregano and sugar. Grind into a fine powder.

Prep the spice blend:

If you have a gas stove, then turn on a burner with a low flame and place the pepper over the flames, using metal tongs if needed to hold it in place. Rotate the pepper occasionally, until it is browned on all sides and soft in the middle. The pepper should look like it has collapsed in on itself. You could also grill the pepper, or roast it in the oven until browned and soft. See the notes for suggestions on managing the spiciness or substituting for this ingredients.

Remove the skin, stem and seeds from the pepper.

Char the poblano pepper:

In a blender or food processor, combine the poblano pepper, chipotle peppers, adobo sauce, about half of the water or broth, onion, garlic, tomato paste, soy sauce, vinegar, and optional nutritional yeast. Process until completely smooth.

Add the sauce to a large skillet or saucepan along with the chopped, fried tofu. Bring to a gentle boil and then reduce the heat to medium.

Add the rest of the water/broth, the salt, and about half of the prepared spice blend. Cover the pan, and cook for 5-7 minutes.

Taste for seasoning and add more salt and/or more of the spice blend as desired. Stir, cover again, and cook for about 5 more minutes, or until most of the liquid is absorbed and the raw onion and garlic taste is gone.

Enjoy in a burrito bowl, or anywhere else with Mexican-inspired flavors!

13 oz block tofu (firm or extra firm)

Tbsp vegetable oil

Tbsp chili powder

tsp cumin

onion powder

garlic powder

Crumble up the tofu in a bowl with your hands and stir in oil and spices. Mix/shake up to coat the tofu well.

Lay in a single layer on a parchment-lined baking sheet and broil 5 minutes. Toss pieces and broil another 2 minutes.

Add the tofu crumbles to a skillet with the salsa, crushed tomatoes and salt, and cook on medium heat about 5 minutes.

Chipotle Sofritas

You may never go back to Chipotle after trying this copycat Sofritas recipe! Meaty tofu crumbles are simmered in a deeply smoky and tangy sauce made from chile peppers and spices. It&#39;s deceptively healthy and truly the best vegan burrito bowl topping!

Broil the poblano pepper or green bell pepper. You have two options; the gas flame gets you a smokier flavor. No need to peel or remove the seeds when done.a. Broiler: Arrange an oven rack 6 inches underneath the broiler flame. Lightly oil the whole poblano pepper. Add the pepper to a sheet pan and broil for 5 minutes, flip, and repeat. Allow to cool a bit, then remove the stem and seeds inside.b. Gas flame: Cut the stem off from the pepper. Turn a gas burner to high heat. Use metal tongs to arrange the pepper on top of the flame. Using tongs, turn the pepper occasionally, about every minute, until the skin on all sides is blackened and blistered, about 4 minutes total, but do not allow it to turn to white ash or catch fire.

Cook the aromatics. Heat 1 ½ tablespoons of oil in a medium nonstick frying pan over medium high heat. Once the oil is hot, add the onions and season with a pinch of salt. Cook for 5 to 6 minutes, or until just starting to get some color. Add garlic and cook for 2 minutes, stirring frequently. Add tomato paste, cumin, oregano, chile powder, 1 teaspoon of salt, and pepper and cook for 1 minute. Add the tomatoes and cook until they’ve softened, about 5 minutes. Clean out the pan.***

While the onions are cooking, cut the tofu into 4 slabs. Squeeze out as much water as you can. Crumble tofu into small pieces, about the size of a blueberry. See the photo for reference.

Transfer the onion-tomato mixture to a blender or food processor. Add the broiled poblano pepper, chipotle peppers in adobo, vinegar, and water. Blend until relatively smooth. Taste the sauce, adding any sweetener as needed or more vinegar or salt.

Heat the remaining 1 ½ tablespoons oil in the frying pan over medium-high heat. Once hot, add the tofu and spread out in a single packed layer and season with ½ teaspoon kosher salt. Allow to cook 2 to 3 minutes undisturbed. Flip and continue cooking for a total of 12 minutes, stirring only every 2 to 3 minutes, until most of the tofu is browned.

Pour in the sauce and simmer for 5 minutes, stirring occasionally. It’ll start to thicken, so turn the heat to medium or medium-low and cook for another 5 minutes, or until flavors have developed and tofu is saucy. If it gets too thick, add a few splashes of water.

Taste, adjusting seasonings as needed. If it’s a bit tangy, add a pinch of organic brown or cane sugar. Finish with a squeeze of lime juice.

If you ask me, these homemade sofritas are even better than Chipotle&#39;s! Saucy, smoky, flavorful, and fresh, they&#39;re delicious in burritos, tacos, and bowls.

Preheat the oven to 450°F and line two baking sheets with parchment paper.

Place the onion wedges, red and green bell peppers, tomatoes, and jalapeño on one of the baking sheets. Drizzle with avocado oil and sprinkle with salt. Place the tomatoes cut side up and the peppers cut side down. Wrap the garlic cloves in foil with a drizzle of avocado oil and place on the baking sheet. Roast for 20 to 30 minutes, or until the peppers and onions are browned (the peppers will be done first), and the tomatoes are soft.

Place the tofu on the other baking sheet, drizzle with avocado oil, and sprinkle with salt. Spread in a thin layer. Bake for 30 to 35 minutes, or until browned and firm around the edges.

Peel the garlic cloves and stem the jalapeño. Place them in a food processor with the onion, red and green bell peppers, tomatoes, chipotles, adobo sauce, tomato paste, chili powder, cumin, and salt. Pulse to form a thick, slightly chunky sauce.

Heat the avocado oil in a large skillet over medium heat. Add the sauce and the tofu and stir to combine. Add the water and cook, stirring, for 7 to 10 minutes, or until the sauce thickens. Season to taste.

Serve in a burrito bowl or try one of the serving suggestions in the post above.

Easy Sofritas Recipe (That's Better Than Chipotle)

(1 large block) extra-firm tofu

olive oil (divided)

smoked paprika

Mexican oregano

chipotles in adobo (plus 2 tablespoons adobo)

tomato (chopped)

vegetable broth

lime juice (or vinegar)

Press the tofu in a tofu press, or wrap it in a towel and press it between a hard surface with a cast-iron skillet on top for 25-30 minutes (or overnight in the fridge).

Once it&rsquo;s pressed, crumble it into small pieces and set aside.

Tofu

Roast the poblano, either over a gas flame, in a cast-iron skillet, or in the oven until blackened on all sides. Once blackened, add it to a freezer bag or a bowl with plastic wrap overtop to steam for about 10-15 minutes.

Open the bag and remove the blistered skin. Cut off the stem end, but don&rsquo;t worry about removing all of the seeds unless you&rsquo;re sensitive to spice. You can rip or slice the poblano into strips to make blending easier.

Poblano pepper

Heat 1 &frac12; tablespoons of olive oil in a skillet over medium. Once hot, add the diced onions and saut&eacute; them for ~4 minutes until translucent.

Add the garlic and cook for another minute, then add the smoked paprika, cumin, Mexican oregano, and ancho chile powder, stirring to open up the spices.

Mix in the tomato paste, chipotle peppers, and adobo. Then add the chopped tomato and cook the mixture, stirring occasionally, for 7-8 minutes until the tomatoes are tender.

Aromatics

Transfer the tomato mixture to a food processor. Deglaze the pan with the vegetable broth, scraping up all the little bits left behind.

Add the vegetable broth to the food processor, along with salt and pepper and the poblano strips. Blend or pulse until the mixture is fairly smooth with a few chunks remaining. You can also blend it until it&rsquo;s fully smooth if you prefer.

Blend

Heat the other 1 &frac12; tablespoons of olive oil in a large skillet over medium. Once hot, add the crumbled tofu in a single layer.

Let it cook, without stirring, for 3-4 minutes to brown it. Stir and repeat the same process until each side is golden brown (about 12 minutes total).

Pour in the sofritas sauce, stirring to combine. Cook the mixture, stirring occasionally, for about 8-10 more minutes to thicken the sauce and meld the flavors.

Taste and adjust the seasonings, then add a squeeze of lime to finish the sofritas off. Serve in tacos, burritos, bowls, and salads. Happy eating!

Wrap the block of tofu in paper towels. Place a heavy skillet on top of the wrapped tofu. Let the tofu press for at least 20 minutes. Alternatively, you can do this the night before preparing sofritas and leave the tofu pressing in the refrigerator.

Cut Tofu

Once the tofu is pressed crumble or tear each slice into small pieces, about ½ inch each.

Prepare Tofu

Char Poblano Pepper

While the tofu is pressing, char the poblano pepper. On a gas stove or grill, turn the heat to high. Place the poblano pepper directly over the flame. Allow the skin to blacken and bubble up, flipping to char each side. Alternatively, you can char the pepper under your oven broiler, turning it every few minutes.  Place the charred pepper in a plastic bag and seal. In about 5-10 minutes, take the pepper out of the bag and the skin will peel right off. Discard the skin and roughly chop the pepper.

Blend Sauce

Place the pepper, salsa, chipotle peppers, adobo sauce, cumin, salt, paprika, garlic, maple syrup, and ¼ cup of water into a food processor or blender and blend until smooth.

Prepare Sauce

Heat Oil

Heat a cast-iron skillet or heavy-bottomed skillet over medium-high heat. Add in the oil and let heat until shimmering. Add the tofu to the skillet and saute until browned, stirring often.

Saute Tofu

Add in the sauce and bring to a low boil. Reduce heat to medium-low and simmer for 10 minutes, adding up to an additional ¼ cup of water if needed. Finish with the juice of the lime and taste to adjust seasonings as needed.

Serve in burrito bowls, burritos, tacos, or as desired.
