Perfectly seasoned soft-boiled eggs for the best homemade ramen.

Soft-Boiled Eggs for Ramen Recipe

water (about 8 ounces; 225 grams)

sake (about 8 ounces; 225 grams)

soy sauce (about 4 ounces; 115 grams)

mirin (about 4 ounces; 115 grams)

sugar (about 3 1/2 ounces; 100 grams)

Combine water, sake, soy, mirin, and sugar in a medium bowl and whisk until sugar is dissolved, or use an equal amount of chashu broth instead. Set aside.

Bring 2 quarts of water to a boil in a medium saucepan over high heat. Pierce fat end of each egg with a thumbtack to make a tiny hole (this prevents them from cracking and eliminates the air bubble at the end). Carefully lower eggs into water with a wire mesh spider or slotted spoon. Reduce heat to maintain a bare simmer (about 190°F). Cook for exactly 6 minutes. Drain hot water and carefully peel eggs under cold running water (the whites will be quite delicate).

Transfer eggs to a bowl that just barely fits them all. Pour marinade on top until eggs are covered or just floating. Place a double-layer of paper towels on top and press down until completely saturated in liquid to help keep eggs submerged and marinating evenly. Refrigerate and marinate at least four hours and up to 12. Discard marinade after 12 hours. Store eggs in a sealed container in the fridge for up to 3 days. Reheat in ramen soup to serve.

I have this 6-qt Instant Pot, which is important only because the size of the pot may affect the timing. These instructions work perfectly for my IP, but it did take some trial and error to get the timing down.

Another variable that could affect the timing is altitude: at higher elevations, you'll need to increase the cooking time. Again this may take some trial and error to get right.

Instant pot boiled eggs peel so incredibly easily. As the title says, these instructions are for soft-boiled eggs, which are so delicious on many a dish, namely toast: quinoa-flax toasting bread.

Perfect Instant Pot Soft-Boiled Eggs

Pour the 2 cups of water into the insert of the Instant Pot. (Note: Do measure 2 cups as opposed to using the markings on the inside of the insert.) Lay the steamer insert inside. Place 4 eggs on top.

Cover the pot. Using the manual button, set the pot to 3 minutes and low pressure. Make sure the valve on top is set to sealing. Fill a bowl with ice water or cold tap water. (See notes above regarding timing: timing will vary based on what model IP you have; timing will vary based on elevation as well. It may take some trial and error to get right.)

When the 3 minutes are up, which will take more like 9 minutes, switch the valve to venting, let the steam escape for no more than 1 minute, carefully remove the lid to avoid steaming your face, transfer eggs to water bath, let cool for 30 seconds or so, then peel, season and eat.

I followed the instructions and my eggs, although very easy to peel were medium! I should have looked more closely at the picture you show. I would not really call those soft.  Back to the drawing board.

I find it strange that the people who had trouble do not answer your follow up questions and I find it hard to believe that you could pressure cook an egg for three minutes and have it come out raw. I have a 6 qt. Duo Plus and I love it.

Followed recipe exactly. Perfect eggs and peeled like a dream!  If you have your own chickens or buy fresh eggs locally and are having trouble peeling. Try to use eggs that are not as freshly collected.

My first venture with the instant pot! The yolks were softer and runnier than I expected so the first egg I tried to peel I accidentally crushed, haha. Luckily once I got the hang of peeling them I actually liked the runnier yolks better.

I always prefer scrambled one when it comes to cooking eggs.  I tried several times, but it always ended up a hard-boiled one until I just gave up.  But this easy instruction changed the game.  Now I can say that I can cook a perfect soft-boiled egg.

Every hard boiled egg recipe I have tried in the instapot has been a fail- really dry eggs with a gray ring or even a discolored white.  These were absolutely perfect!  I probably left then a tad too long before releasing so the weren’t quite soft but YUM!

Followed the recipe instructions and ended up with super raw and unpeelable eggs. The whites didn’t even fully firm up 👎🏻

I live by the ocean at sea level so altitude can’t be an issue, and I only put 3 eggs in the 6qt instant pot.

It's very important that you measure not only 2 cups of water, but be sure that it is actually cold.   I used the cold water dispenser from my fridge, and my girlfriend was ecstatic about how fast and easy this was and how perfect they turned out for her ramen.

PERFECT!  Ive had an instant pot for maybe 4 years now, and have made hard/soft boiled eggs at least a few dozen times.  The results Ive had in the past varied even by using the same water level/timing.  I decided to try something new and came across this 2 cup method at low pressure. I love soft-boiled eggs and was so excited to try this IP recipe. Very easy to follow and fast which is great for meal prepping/work-days. My eggs were a little on the medium side with the 3 min time, but still tasty, and next time I'll just set to 2 min. Thank you for sharing! This has already made my weeks easier!

Yay, after trying so many different methods, this one was fool proof! I used cold fridge water for my 2 cups (as others in the comments indicated) and only let the steam release for a minute before submerging them in an ice bath. I was wondering if the quantity of water and the time would be the same if I were to boil a bunch of eggs at once? (like 12-20)?

Fill a medium sized <a href="https://www.bbcgoodfood.com/content/five-best-saucepans">saucepan</a> with water and bring to a rolling boil.

Make sure your eggs aren't fridge cold. By having the eggs at room temperature, it will be less of a shock for the egg reaching the hot water and therefore less likely to crack. You can also use an egg pricker to make a very small hole in each egg before boiling, which will also reduce the chances of it cracking in the heat. Slowly lower the eggs into the water using a spoon.

Set your timer for 4-5 mins for runny/dippy eggs to serve with soldiers, or 6-7 mins for soft-boiled eggs for a salad. If serving in a salad, plunge the eggs into a bowl of cold water as soon as the timer goes off – this will stop them cooking and cool the shells quickly for peeling.

Quick sous vide eggs that turn out to be perfect: set whites, rich and creamy yolks cooked in 13 minutes.

Perfect Sous Vide Eggs

Affix your sous vide precision cooker to a warm water bath and set the temperature to 165º F (74º C). Let water bath preheat.

Carefully lower eggs into water bath, being careful not to crack. Set a timer for 15 minutes. Prepare an ice bath: fill a container large enough to cold all eggs halfway with ice then cover ice halfway with water.

After 15 minutes, immediately remove eggs from water bath and transfer to prepared ice bath. Cool 3-5 minutes then drain, crack eggs, and slide cooked sous vide egg into a bowl or onto a plate, piece of toast, etc. Season with salt and pepper.

Prepare the perfect ajitama ramen egg, with or without a sous vide. These Japanese soft-boiled eggs are full of umami with a touch of sweetness.  Ajitama are great for much more than just ramen; use them as a snack, on a salad, with rice, or on toast.

Ajitama Ramen Egg Recipe (sous vide and non sous vide options)

Sous Vide Method:Preheat water plus 1 tablespoon of vinegar to 194°F (90°C). Prick a hole on the fat end of the egg with a needle or tack and gently drop in the four eggs (shell-on), cooking for 8 minutes and 30 seconds precisely. Immediately chill eggs in an ice bath for ~15 minutes. Gently crack eggshell all around the egg and peel off shells. Be sure to peel off thin membrane on the surface of the egg white.

Steamed Method:Fill pot with 1.5 inches of water and insert steamer and cover. Boil water to a hard boil.Prick a hole on the fat end of the egg with a needle or tack and add four eggs to steam for precisely 7 minutes. Immediately chill eggs in an ice bath for ~15 minutes. Gently crack eggshell all around the egg and peel off shells. Be sure to peel off thin membrane on the surface of the egg white.

Boiled Method:Fill pot with 4 cups of water plus 1 tablespoon of vinegar. Bring water to a rolling boil. Prick a hole on the fat end of the egg with a needle or tack and carefully add 4 eggs with a slotted spoon. Lower heat slightly to bring water to a simmer. Immediately chill eggs in an ice bath for ~15 minutes. Gently crack eggshell all around the egg and peel off shells. Be sure to peel off thin membrane on the surface of the egg white.

Three Options for Cooking Eggs

Combine mirin and sake in a small saucepan.

Heat saucepan on medium high heat to a boil. Lower the heat to a simmer and add sugar. Stir to dissolve sugar. Simmer for roughly one minute in total.

Remove from heat, add minced garlic, and cool completely. Use the fridge to cool if needed.

Add soy sauce

To Make the Marinade

Place the eggs in a Ziploc bag or airtight container and add the marinade. A Ziploc bag will create the most coverage for the eggs. If you prefer to use a container, you may need to increase the amount of marinade or dilute the marinade with water and marinate it for longer. We want the eggs fully covered in marinade.

If using a Ziploc bag, squeeze excess air out of the bag and seal. Use a clip or rubber band to pinch the bag just above the eggs to help fully submerge the eggs. Refrigerate in marinate for 12 hours. Eggs may be kept refrigerated 3-4 days.

To Marinate the Eggs

Cut In half lengthwise. A sharp knife, clean fishing line, or a wire cheese cutter will help keep the cut clean.

Prepare ingredients

Rinse your Shirataki

Rinse your Shirataki under a warm water fully.

Roast shirataki

Roast the Shirataki noodles on medium heat in a pan or dutch oven.

Prepare your protein

Take a few pieces of fresh chicken and cook them in a pan as you would typically for other dishes.

Boil your veggies

Place all the veggies you plan to use into the boiling water and let it simmer for 1-2 minutes.

Rinse all under cold water

Once your veggies are softer, place them into a strainer and quickly run through with cold water. That will retain the color, and the veggies will stop cooking immediately.

Assemble

Ensure all ingredients (except avocado) are warm and your broth is boiling. Add the noodles into a ramen bowl first. Layer all other ingredients and add the chicken broth or soup stock as last.
