Bring water to a gentle simmer in a medium pot. Gently lower eggs into water with a slotted spoon or strainer (do not drop eggs into water, as they might crack). Cook for exactly 6 minutes, then remove eggs with slotted spoon and serve.

Soft-Boiled Eggs for Ramen Recipe

water (about 8 ounces; 225 grams)

sake (about 8 ounces; 225 grams)

soy sauce (about 4 ounces; 115 grams)

mirin (about 4 ounces; 115 grams)

sugar (about 3 1/2 ounces; 100 grams)

Combine water, sake, soy, mirin, and sugar in a medium bowl and whisk until sugar is dissolved, or use an equal amount of chashu broth instead. Set aside.

Bring 2 quarts of water to a boil in a medium saucepan over high heat. Pierce fat end of each egg with a thumbtack to make a tiny hole (this prevents them from cracking and eliminates the air bubble at the end). Carefully lower eggs into water with a wire mesh spider or slotted spoon. Reduce heat to maintain a bare simmer (about 190°F). Cook for exactly 6 minutes. Drain hot water and carefully peel eggs under cold running water (the whites will be quite delicate).

Transfer eggs to a bowl that just barely fits them all. Pour marinade on top until eggs are covered or just floating. Place a double-layer of paper towels on top and press down until completely saturated in liquid to help keep eggs submerged and marinating evenly. Refrigerate and marinate at least four hours and up to 12. Discard marinade after 12 hours. Store eggs in a sealed container in the fridge for up to 3 days. Reheat in ramen soup to serve.

Onsen Tamago is a traditional soft-boiled egg that has runny egg white on the outside and almost hard egg yolk inside. Yes, it is the other way around to a standard soft-boiled egg where the egg white is hard and the yolk is runny. Onsen Tamago (Japanese-style Soft-Boiled Egg)

water

250 milliliters/1cup water (chilled to 4°C/40F° (note 2))

dashi stock

½ tbsp cooking sake

mirin

tsp light soy sauce

salt ((note 3))

mizuna leaves (or any other green leaves)

Put all the Sauce ingredients in a saucepan and bring it to a boil.

Turn the heat off and cool the sauce down to room temperature.

Sauce

Put 1000ml/4 cups water in a thick pot and bring it to a boil. Remove the pot from the heat.

Add the 250ml/1 cup chilled water to the pot.

Using a ladle, gently place each egg in the pot.

Place a lid on and leave for 25-30 minutes (note 5).

Transfer the eggs to a large bowl containing cold water to cool them down quickly and stop further cooking.

Making Onsen Tamago

Crack open the egg, in the same way as cracking a fresh egg, into a small serving bowl. The egg should slide into the bowl easily because the egg white is runny.

Gently pour two tablespoons of the Sauce around the egg white and place a leaf on top if using. Serve with a spoon.

How to Make Soft Boiled Eggs

Fill a medium pot with water and heat to a gentle simmer, just below boiling. Using a slotted spoon, carefully lower the eggs into the water and let simmer for 7 minutes (6 minutes for a runnier egg). Set a bowl of ice water nearby.

Remove and chill immediately in the ice water for a minute or two until the eggs are cool enough to handle.

Tap the bottom of each egg to crack off a little bit of the shell.

Take a small spoon and carefully slide it in and around the egg to loosen and remove it from the shell. This takes a little bit of practice to get exactly right. If your first eggs aren’t perfect, it’s ok. They’ll still be delicious!

Season eggs with salt and pepper, to taste.
