Fluffy Japanese Pancakes (aka. Japanese Souffle Pancakes) are an airy pancake dream. Light, fluffy, and an experience you'll long to eat again. Time to spark a little joy...one fluffy souffle pancake at a time! 

Fluffy Japanese Pancakes

tbsp sugar

tbsp milk

tsp pure vanilla extract

tbsp cake flour

tsp baking powder

Whisk the egg yolk with the sugar until pale and frothy. Mix in the milk and vanilla.

Sift flour and baking powder into the mixture and whisk until incorporated.

Bowl 1 - Yolk Mixture

Whisk 1/3 of the meringue into the yolk mixture until completely incorporated. Add half of the remaining meringue and mix delicately. Add the remaining meringue and fold into the mixture using a spatula – be careful not to deflate the batter.

Heat a large non-stick pan (with a lid) over low heat. Add a very small drizzle of oil. Using ¼ cup scoops, scoop the batter into the pan. Cover and cook for 2-3 minutes.

Remove the lid, add another ¼ cup of batter on top of the pancake already cooking. Cover and continue to cook for another 4-5 minutes.

Flip the pancake…EVER. SO. GENTLY! Cover and cook for 4-5 more minutes until done. Repeat with the remaining batter. Serve!

Made these with Trader Joe's gluten free pancake mix instead of flour. Cut the sugar to 1 tbs with the yolk. The mix already has some sugar and baking powder so only added vanilla. The secret is in the meringue. They puffed up perfectly on my pancake griddle. a light coating of butter worked better than oil. the first one stuck when I tried to turn it. Turning them is tricky, takes a couple or more times to get the hang of it. I got 4 pancakes out of the recipe. My sloppy turning wasn't pretty but they tasted yummy. Didn't even need syrup.

They were perfect until I delicately transfered them to my plate : prrrrrrt ! Bye bye air... they became flat under my eyes @$!%€ ! Maybe they weren’t cooked enough ? 

So close, will definitely try again. And even if they became flat, the taste is simply delicious !

This was my 4th try at fluffy pancakes and it was a success!! The first time the pancakes came out wonderfully fluffy, probably more by chance than anything else!  Cream of tartar,? Nope. Steaming? Nope. But I lowered the heat to 3 (1-9 ceramic top) and covered. Bingo!  Can't wait to make these for my grandsons next Christmas! Thank you!!

Unfortunately mine (first attempt) were not as fluffy (maybe 1cm thick). When i poured the second layer it spread till beyond the first layer instead of clumping up on top of it. I didn’t know when to stop beating the egg whites, after 5min, still barely peaks that i just stopped at some point thinking i must be overbeating it already. Also i made my own cake flour mixing all-purpose with cornstarch. Taste-wise though it’s great. I’ll try again next time, will tag you when it’s perfect. Thanks for sharing!

Fluffy Japanese Pancakes (aka. Souffle Pancakes)

Fluffiest ever Japanese souffle pancakes sound complicated but are actually easier to make than you’d think! Whip these up for breakfast today and you’ll understand just why everyone is raving about these super delicious pancakes!

Japanese Souffle Pancakes

flour

sugar

baking powder

salt

¼ cups dairy milk

butter (melted)

almond extract

egg egg whites)

½ teaspoon cream of tartar

syrup and powdered sugar

In a medium bowl whisk together flour, powdered sugar, baking powder, and salt.

In a second bowl stir together milk, melted butter, vanilla or almond extract, and the egg yolk.

In a third bowl whip the egg whites and cream of tartar 3-4 minutes until stiff peaks form.

Stir milk mixture into dry ingredients until just combined (a few lumps are fine).

Gently fold whipped egg whites into the batter until just incorporated (do not overmix).

Preheat a deep skillet with a lid over low heat and spray the inside of a 3-inch baking ring (I used three rings at a time) with nonstick spray and place in the preheating pan.

Fill each ring halfway full with batter. Place lid on the pan and allow to cook for 5 minutes.

Slide a spatula underneath to life the pancake and ring and use tongs to quickly flip it over. Allow to cook another 2-3 minutes until golden. Repeat with remaining batter.

Serve immediately topped with syrup and powdered sugar.

These fluffy soufflé Japanese pancakes are irresistible. They're light, melt in your mouth and lower in calories compared to regular pancakes due to its lower fat content. Serve with fresh berries and your favorite toppings.

Japanese Fluffy Soufflé Pancakes - Sugar Free

eggs

all purpose flour or cake flour

tsp vanilla extract

tsp salt

tsp cream of tartar

tbsp sugar free sweetener (monk fruit erythritol)

Whipped Cream

Grab a large bowl and make sure it is clean and grease free.

Separate 4 egg whites into the large bowl and pop it in the freezer for about 10-15mins. Split 2 egg yolks in another mixing bowl, and the remaining 2 yolks can be kept in the fridge for other recipes. We're only using 2 egg yolks in this recipe.

Separate eggs

Add milk and vanilla extract into the bowl with 2 egg yolks.

Add sifted flour and baking powder and mix well. Don't overmix it.

Prepare flour mixture

Add cream of tartar and salt to the mixture.

Now beat the egg white mixture with an electric mixer on medium speed for about 30 secs until it turns frothy.

Then slowly add your sweetener in thirds and turn on your electric mixer to the highest speed.

Beat the egg whites until it's smooth and glossy. Continue to beat until stiff peaks form. It will take about 3 minutes. Make sure to not overbeat it.

Now fold the meringue into the flour mixture in thirds. Mix well but do not overmix it

Beat Meringue

Heat up 1 or 2 large pans over low heat (or the lowest heat on gas stove). Grease your pan(s) lightly with oil and wipe off excess oil with a paper towel. If you have two large pans then you can make all 6 pancakes in one go.

Scoop 2 large (almost overflowing) tablespoons of the mixture to the pan for each pancake, making 3 pancakes each pan.

Cover it for about 5 mins. Then add another 1 tablespoon of the mixture on top of the pancakes. Don't spread the mixture sideways if you want thicc pancakes. Stack it up high!

Add about a tablespoon of hot water to the pan and then cover it to let it steam for another 5 mins.

If you have any extra batter, stack it on top, add more hot water, then steam it for another 2 mins or so.

Then open the lid and gently flip the pancakes over. Add more water to the pan and cook the pancakes for another 4 mins.

Your pancakes are done! Add your favourite toppings, whipped cream or maple syrup. Dust some sugar free powdered sugar on top and enjoy!

Making the pancakes

These famous Japanese soufflé pancakes are so delightfully jiggly, light, and fluffy. These are most definitely a treat to have for Mother&#039;s Day or a casual Sunday brunch!

Jiggly Japanese Soufflé Pancakes

Tablespoon milk

vanilla extract

½ lemon, zested ((optional))

all-purpose flour

white vinegar ((or lemon juice))

Neutral oil ((for greasing))

water

In a mixing bowl, whisk together egg yolks, milk, vanilla extract, and lemon zest. Add the flour and baking powder and whisk until smooth. Set aside.

In another mixing bowl, combine egg whites and vinegar. Beat the egg whites on medium high speed until frothy. Start to gradually add sugar to the egg whites while continuing to beat at medium high speed until the meringue reaches stiff peak.

Add ⅓ of the meringue into the batter base and mix until incorporated. Add the remaining meringue to the batter and gently fold the meringue into the batter until just incorporated and no more streaks are visible.*DO NOT overmix. It will deflate all the meringue.*

Heat a large non-stick pan over low heat*. Lightly grease the pan with a neutral oil. Make sure to wipe away excess oil. *If using a gas range, lowest heat setting is recommended. If using electric stovetop, medium low heat will work best.*

Reserving ¼ of the batter, scoop the remaining batter into the pan to form 3 even mounds. Do not flatten. Cover the pan with a lid and let the pancakes cook for about 3 minutes to firm up slightly at the base.*You can also make smaller pancakes, but do note that the cook time will differ.*

After 3 minutes, evenly distribute the reserved batter onto each mound of pancakes. Add about 1 TBSP of water around the pan and replace the lid. Let the pancakes cook for about 5-6 minutes until the water has evaporated, the sides of the pancakes are no longer wet, and the bottom of the pancakes have turn a nice golden brown.Flip the pancakes and add the last TBSP of water to the pan. Cover the pan and cook the pancakes for another 5-6 minutes until an inserted toothpick comes out with just a few crumbs on it.

Serve the pancakes immediately while it&#039;s tall. Enjoy it with lightly sweetened whipped cream, maple syrup, compotes and fresh fruits!

sugar (icing sugar)

Dry Ingredients

In a large mixing bowl, combine flour, cornstarch, pea protein powder, baking powder, baking soda, cream of tartar, salt, powdered sugar, and cacao powder.

Wet Ingredients

In a separate bowl, mix together the plant milk and apple cider vinegar. Set aside for a few minutes to allow it to curdle, then stir in the vanilla extract.

Aquafaba + Batter

Whip the aquafaba until stiff peaks form, resembling the consistency of whipped egg whites. Combine the whipped aquafaba with the curdled milk mixture, and then fold this into the dry ingredients until a smooth batter forms.

Skillet Preparation

Line dessert rings with parchment paper and preheat a skillet over low-medium heat. Place a small sheet of parchment paper into the skillet, then place the lined dessert rings on top. Add a spritz of cooking spray into each dessert ring to prevent sticking.

Filling Dessert Rings

Divide the pancake batter by pouring it into the dessert rings, filling them roughly up to 2 inches high.

Cook Pancakes

Cover the skillet with a lid and cook the pancakes on low heat for 14-17 minutes. Once the soufflé pancakes appear firm on top, gently remove the dessert ring and parchment paper.

Flip Pancakes

Carefully flip the pancakes to cook on the second side for an additional 2 minutes, or until golden brown and cooked through.

Serving

Serve the fluffy pancakes as a stack of two and top with fresh fruit, such as strawberries, a sprinkle of crunchy nuts, and a drizzle of maple syrup or chocolate sauce.
