Heat 1 tablespoon of oil in a large pan over high heat. Add the steak, season with salt and pepper, and cook until browned, 5-6 minutes. Remove from the pan.

Heat the remaining tablespoon of oil in the same pan, then add the red onion and cook for about 5 minutes, until softened and browned. Add the tomato, garlic, and aji amarillo paste, and cook for another 5-7 minutes, until the tomatoes have released some of their juices, but are still intact.

Add the soy sauce and vinegar and stir to combine, let cook for 1 minute.

Add the steak, fries, and cilantro. Toss gently to coat the fries in the sauce.

Simple Sweet Potato Glass Noodle - Japchae

Korean vermicelli, sweet potato glass noodles

tbsp tamari (or soy sauce)

maple syrup

tsp chilli garlic sauce

cornstarch

water

extra-firm tofu (drained and pressed)

onion,

carrots,

spinach, packed*

shiitake or enoki mushrooms*

tbsp sesame oil

Combine all the sauce ingredients in a large bowl.

Slice tofu into thin strips and gently add it to the sauce, making sure each piece of tofu gets coated. Allow the tofu to marinate in the sauce while you prepare the other ingredients.

Bring a large pot of water to a boil for your noodles and slice your onion, carrot, and mushrooms (if using enoki, slice off the woody end and toss it in your veggie scraps for homemade broth!)

Add noodles to the boiling water and cook as per the package (usually around 8 minutes). Drain in a colander and rinse with cold water. Transfer to a bowl and use kitchen shears to cut the noodles down to 6-8 inches. Drizzle the noodles with sesame oil so they don’t stick. Let sit. 

Heat up a large skillet with another drizzle of sesame oil (or use veggie broth or water). When hot, gently lift the tofu out of the marinade and place in your skillet (leaving the remaining sauce behind). Cook until browned for 3-4 minutes per side. Add more oil, water, or broth if the tofu is sticking. Remove the tofu from the skillet and set aside.

Add the onions to the skillet (adding more oil or broth if needed). Cook for 1 minute. Add carrots, stir, and cover, allowing to steam for 3 minutes. Stir periodically. Add spinach, about ¼ of the sauce, and the mushrooms. Cook for another 2 minutes.

Add the noodles and the sauce (you can reserve some for serving if you prefer) and gently toss everything to combine. Cook for another 1-2 minutes to combine all the flavours.

Add to your serving dish, top with tofu, and toasted sesame seeds! Drizzle with extra tamari, chilli garlic sauce, or a touch of sesame oil if desired. Enjoy!

In a small bowl, mix together the Parmesan cheese, Korean red pepper, sugar, and ramen seasoning.

Cut the potatoes into ribboned curls using the ribbon blade on a spiralizer. If you don’t have a spiralizer, insert a skewer into each potato and, working in a spiral motion, cut in the opposite direction you are turning the skewered potato, making a thin, even spiral all the way down the potato. A spiralizer is recommended.

Gather the potato curls together, then wrap each curl around a wooden skewer, spacing out the potato evenly. Set aside to dry for 5 minutes.

Heat the canola oil in a deep pot until it reaches 350ºF (180ºC).

Fry the potatoes until golden brown, 3-5 minutes, then drain on a paper towel-lined baking sheet.

While the tornado potatoes are still hot, season with salt and sprinkle with the cheese mixture.

Add the garam masala, turmeric, and cumin. Stir, reduce the heat to medium, and cook for another 10 minutes, or until the sauce clings to the potatoes and they soften slightly.

Stir in the lemon juice and cilantro, then add the fries and salt. Toss well to coat. Serve immediately.
