These Korean inspired marinated soy sauce eggs pack an umami punch with garlic, scallion, ginger and soy sauce, truly earning their name Mayak eggs (so deliciously addicting).

Mayak Eggs: Korean Marinated Soy Sauce Eggs

Bring water to a boil

Prepare marinade while waiting for water to boil.

Soy sauce egg marinade: Combine soy sauce, water, garlic, thai chili, scallion, sesame seeds, ginger (optional) and sweetener of choice (honey, brown sugar, maple syrup, corn syrup or Oligodang syrup) and stir until thoroughly combined.

Once water reaches a vigorous boil, add eggs to boiling water (use large spoon to gently lower each egg into water).

Boil eggs approximately 6-7 minutes for runny yolk. See notes for cook times as stoves vary.

While eggs are boiling, prepare bowl of ice and cup of water for ice bath.

Using slotted spoon, move each egg gently from boiling water into the ice bath.

Allow the eggs to cool completely (approximately5-10 minutes).

Peel eggs and place in bowl or airtight storage container.

Pour soy sauce mayak marinade overeggs.

Depending on depth of your bowl or storage container, if eggs are not completely submerged you can flip them halfway through your target marinating time.

Allow to marinate minimum 6 hours and maximum 24 hours. The longer you marinate the bolder the flavor.

Serve mayak eggs over warm rice with additional soy sauce marinade to top.

Mayak eggs are Korean marinated eggs that are soft boiled then marinated in a tasty marinade of soy sauce, garlic, peppers, and sesame seeds.

Make marinade

Make marinade: Mix all the marinade ingredients in a bowl and set aside.

Make soft boiled eggs

Soft boiled eggs: Bring a large pot of water to a boil. Add vinegar for easier peeling, then gently lower each egg into the pot. Set a timer for 6 minutes for room temperature eggs or 7 minutes for cold eggs. See Note 2.Stir the eggs in one direction for the first 30 seconds for an even cross section.

Peel eggs

Peel eggs: After timer is up, place the eggs in an ice bath to stop cooking. Once cooled, crack the shell all over and carefully peel by inserting a spoon between the egg and shell.

Marinate eggs: Add the eggs in a container and pour the marinade on top. For best flavor, let it marinate overnight in the fridge.

Serve: To serve, cut each egg in half and drizzle toasted sesame oil on top before enjoying.

Bring water to boil

If the eggs are refrigerated, set them by the kitchen counter for 15 minutes to remove the chill. In the meantime, bring a pot of water to boil.

Simmer the eggs

Lower the heat to simmering (about medium to medium-low heat), add a splash of vinegar, then carefully and slowly lower the eggs into the water. Simmer over medium to medium-low heat for 6 minutes. This will give you a solid egg white with a running egg yolk center.

Watch out stovetop temperature

Pay attention to the stovetop heat as you want the eggs to be simmering (not boiling) throughout. You should see small bubbles circling around the eggs so adjust the stovetop heat as you go. Do not walk away.  You also want to gently move the eggs around so that the egg yolk remains in the center and the eggs are cooked evenly.

Shock in cold water

After 6 minutes, immediately shock them into a bowl of ice water. As soon as the eggs are no longer piping hot, use a back of spoon to gently tap the egg shell to remove it.

Combine egg sauce marinade

In a 5-cup (1.1 liters) container with a lid, combine the ingredients from garlic to sesame seeds and stir well. Add the eggs to the marinade, making sure they are evenly coated. If they aren’t fully submerged, rotate them a few times throughout the marinating process to ensure all sides absorb the flavor. You can also lay a clean paper towel over the eggs—the towel will soak up the liquid and help keep them coated.

Seal the container and refrigerate for at least 24 hours before eating.

What to do with leftover egg sauce marinade

You can bring the sauce to a boil, let it cool to room temperature, and add a fresh new batch of boiled eggs to marinate. You can only reuse the marinade once and after that you should discard it. You can also drizzle the marinade over blanched vegetables, rice, or boiled noodles, too.
