Meal maker curry - Soya chunks also known as meal maker or soya nuggets. This recipe yields delicious soya chunks cooked in onion tomato gravy. It is best served with plain rice, jeera rice, ghee rice or roti.

soya chunks (or meal maker or soya nuggets)

onions (finely chopped)

curry leaves (or bay leaf)

mustard ((optional))

½ tsp cumin (or jeera)

green chili

tsp ginger garlic paste

red chili powder

tsp garam masala

coriander powder (or daniya powder (optional))

coriander leaves (finely chopped)

salt (or use as needed)

asafoetida (or hing (optional))

tomatoes

tbsp Coconut (or 8 cashews)

Bring 3 cups water to a boil, switch off the stove.&nbsp;

Add soya chunks and leave them in hot water till they soften.&nbsp;

Debris settles down, discard the water and squeeze off the water.

Rinse them in cold water and repeat squeezing off the excess water. Set this aside for later use.

If you are using large chunks you can cut each one to two.

Grind the tomatoes and coconut to a smooth paste.

Preparation for soya chunks recipe

Heat oil in a pan. Then add mustard and cumin.&nbsp;

When they begin to splutter add hing, curry leaves, onions and green chilies.&nbsp;

Fry till the onions turn golden.

Add ginger garlic paste and fry till the raw smell disappears

Add the grinded tomatoes paste.

Fry till it begins to leave the sides of the pan.&nbsp;

Add red chili powder, garam masala, coriander powder, and salt.&nbsp;

Fry everything well until the raw smell of the masala goes away for 3 mins.

Next transfer the soya chunks.

Fry for 3 minutes stirring often, till the meal maker are coated well in the masala.

Pour water just enough to make a thick gravy.

Bring the water to a boil and cover.&nbsp;

Cook on a low flame for about 5 to 8 minutes, till soya chunks are cooked well. The oil begins to float on top.

Garnish soya chunks curry with coriander leaves.

To cook soya granules - ingredients required : 2 cups soya granules , 4 cups water and 1 pinch of salt. First boil water in a pot, let it boil well, then switch of the flame. Add the soya granules and salt , stir well. Soak the soya granules in the hot boiling water for THREE minutes , drain the hot water , add cold tap water , rinse using your hands . Now take a handful of granules in your hand, SQUEEZE THE EXCESS WATER FROM THE GRANULES ( make sure to press firmly and remove the water from granules). Note - add salt only if you're making savory dish. For making sweets / desserts - then you can skip the salt.

Alternative way to drain water instead of using hands - pour the boiling water with granules into a fine meshed sieve , then show the mesh in under the tap water and rinse it. Use a tablespoon / flat bottomed spatula and press hard the granules and remove excess water (use fine mesh sieve for better results).

Drain the hot water from the pot , and fill with cold tap water, and rinse chunks using your hands in cold water 2 to 3 times. Now take a handful of chunks in your hand, SQUEEZE THE EXCESS WATER FROM THE CHUNKS ( make sure to press firmly and remove the water from chunks).

You can now use the soya chunks in the dish as it is. Or you can chop it into preferred smaller size by using a knife or mince it using a mixer ( make sure to only whip the mixer once or twice to break it down , don't grind too much, because the texture is very important). Now you can use it in the dishes as the recipe call it . Note - add salt only if you're making savory dish. For making sweets / desserts - then you can skip the salt.

Teaspoon Olive Oil

(2 Cups) Soya Chunks

Teaspoons Sea Salt ((Divided))

Tablespoon Garam Masala

Lemon

Teaspoon Maple Syrup

Tablespoons Tamari

Add the soya chunks, 4 cups boiling water, and 1 teaspoon sea salt to a large bowl or saucepan.

Leave the soya chunks to hydrate for 10 minutes.  Drain the water from soya chunks.

Rinse the soya chunks with cold water, then squeeze out the excess water.  At this point the soya chunks are edible, and we are now going to add some flavor and crispiness to them.

Add the oil to a large frying pan over a medium heat.

Add the hydrated soya chunks to the pan and cook for 2 minutes.

Add the remaining 1 teaspoon of sea salt, and garam masala to the pan and stir for 1 minute.

Add the lemon juice, maple syrup, and tamari and stir. Cook for a further 2 minutes.

Preheat the oven to 200C/400F.

Mix the hydrated soya chunks with the remaining 1 teaspoon of sea salt, garam masala, oil, lemon juice, maple syrup, and tamari in a large bowl.

Spread the soya chunks out on an oven tray lined with parchment paper (greaseproof paper) and bake for 10 minutes or until golden.

Spread the soya chunks out in the air fryer basket lined with parchment paper (greaseproof paper) and bake for 5-10 minutes at 200C/400F or until golden.
