Homemade Spaetzle - When it comes to making noodles from scratch, it doesn&#039;t get any easier than spaetzle. With a simple egg batter with a hint of nutmeg, these teensy dumplings cook up in less than a minute. This is the ultimate side dish when time is of the essence!

Homemade Spaetzle

Make the batter: Mix the flour, salt, and nutmeg in a large bowl. Whisk the eggs and milk together in a separate small bowl. Pour the milk mixture into the bowl of dry ingredients, and whisk the ingredients to create a smooth batter. You&#039;re looking for a batter that slowly drips off a whisk or spatula. If it&#039;s too wet add more flour, if it&#039;s too dry add for milk. Let the batter rest while you prepare to cook the spaetzle.

Cook the spaetzle: Bring a large pot of salted water to a boil. Pour the batter through a spaetzle maker or through the holes of a cheese grater directly into the boiling water. The spaetzle will cook very fast and they will float to the top of the boiling water when cooked through. Remove the dumplings with a slotted spoon once they float to the top.

Serve: Melt 1/4 cup butter in a skillet over medium heat. Cook until the butter smells toasty and begins to brown. Add the spaetzle, and sauté for 2-3 minutes, stirring often. Garnish with parsley and serve warm.

These homemade German Spaetzle are authentic and very easy to make. Made from a simple flour-egg batter, these classic little dumplings make the perfect side to saucy dinner ideas like goulash and go well with meat dishes like Rouladen!

Add the flour to a medium-sized mixing bowl and make a little well (or a mini volcano) in the middle.

Add the eggs and the salt to the flour and give everything a stir with a wooden spoon or your electric mixer. Now slowly pour in the water while mixing vigorously until the dough has a lump-free, elastic consistency. When you roll the wooden spoon in the batter, you should be able to create air bubbles as a result of the sticky yet smooth consistency. Another way to tell that the batter has the right consistency is when it drips off the spoon very slowly.

Bring a large pot of salted water to a boil. Once boiling, reduce the heat so that the water is simmering.

Now, spoon portions of the Spaetzle batter onto your spaetzle grater/maker and scrape the batter through into the boiling water. The spaetzle will float to the top when they are done. This takes around 2-3 minutes.

Remove the little dumplings with a large straining spoon and place them into a different bowl. Repeat the steps until you have used up all the batter. Enjoy!

Gluten-Free Spaetzle {German Egg Noodles}

Bob's Red Mill 1:1 Gluten-Free Baking Flour

eggs (beaten)

milk (or unsweetened almond milk)

butter (melted (or dairy-free butter))

gluten-free breadcrumbs

Place a large pot of boiling, salted water on the stove.

Place the flour and salt in a large bowl. Stir to combine. Add the eggs and almond milk and mix until smooth.

Using a spaetzle press, add about 1/2 cup of the dough into the press. Place over the pot of boiling water and slide back and forth to have the noodles come out. Cook very briefly, about 20 seconds or until the noodles rise to the top. Remove the noodles from the water with a strainer and place into a bowl. Repeat with the remaining dough.

Combine the melted butter and bread crumbs. Sprinkle over the cooked noodles. Serve immediately. Enjoy!

My family loved this! I made chicken and spaetzel soup! It was delicious! I didn’t have almond milk and I was out of regular milk so I used evaporated milk. It’s going in our menu rotation! Thank you so much!!!

Last year when I made this recipe I had a hard time scraping the dough into the boiling water. The dough was very sticky and a little difficult to work with.  This year I added 7 grams of whole psyllium husk to 70g of water, let it sit for 5 minutes, then added to the flour with the eggs and milk. It worked great!  I could easily slide the dough off the board into the water!

Tried these the other night and they turned out perfectly!

This has become my go-to recipe to use in place of noodles for soup, and for chicken paprikash, it's wonderful!  I use Gluten Free Jules flour and follow your recipe to the letter, never fails.  Thank you!!
