Pasta Vongole is a delicious, easy pasta dish with clams, garlic, white wine and lemon. Perfect for a casual summer dinner.

Pasta vongole

kg (2lb) clams

500 g (1lb) pasta (spaghetti/linguine

olive oil

garlic (sliced)

tsp chilli flakes / red pepper flakes

tsp lemon juice

dry white wine

tbsp butter

tbsp fresh parsley (finely chopped)

salt and pepper (to taste

If you&#39;re using whole clams (which is what I would suggest), make sure they are closed before cooking. If they are open, gently tap them on the kitchen counter and they should close. If they don&#39;t, discard them.

Soak the clams in a large bowl of heavily salted water for 20-30 minutes. In this time, they should release any sand or sediment. After this time, rinse them well under cold water to wash off any sand and excess salt.

Bring a large pot of salted water to the boil. Add the pasta and cook until al dente then strain and reserve 1 cup of cooking water.

Steam the clams with a cup of wine or stock until they are open.

Discard any clams that are still closed then set aside the remaining clams. The cooking liquid can be strained (there might be some sand/grit in the bottom of the pan) and added to the sauce for extra flavor. 

In a large skillet or pan, heat the olive oil over medium high heat.

Add the garlic and chilli flakes and cook for a minute.

Pour in the lemon juice and white wine then bring to a simmer.

Add the clams and cook for 10 minutes until the sauce has reduced slightly.

Add butter and allow to melt into the sauce then sprinkle over parsley and season with salt and pepper.

Toss the sauce with cooked and drained pasta and a splash of the pasta water then serve immediately.

Una ricetta classica e intramontabile quella degli spaghetti alle vongole veraci, un primo piatto ai frutti di mare semplice e adatto a tutte le stagioni. Il tempo di preparazione è di trenta minuti circa, ma considerate il necessario tempo di ammollo per eliminare la sabbia.

Spaghetti alle vongole

300 g di spaghetti

ml di vino bianco

peperoncino

olio

aglio

pepe

Prima di preparare gli spaghetti alle vongole veraci, fate spurgare per almeno 12 ore le vongole in acqua di mare oppure in acqua fredda e sale. Passato il tempo necessario, scolatele e ripassatele di nuovo sempre con dell’acqua fredda. Picchiettate le concoglie su un piano per accertarvi che non ci sia più sabbia. Mettete le vongole in una padella con l'aglio e il vino bianco a fuoco vivo, fate evaporare l’alcol, poi sigillate con un coperchio fino a quando le vongole saranno totalmente aperte. Ci vorranno circa 3 minuti. Scolatele e recuperate l’acqua (sughetto) ottenuta che andrete a filtrare e a tenere da parte.

Fate rosolare a fuoco basso l’aglio con poco peperoncino a aggiungete le vongole, l’acqua filtrata in precedenza e insaporite per qualche minuto.

Tritate finemente del prezzemolo. Cuocete gli spaghetti in acqua salata e ritirateli molto al dente per non rischiare che in padella scuociano.

Scolate gli spaghetti e metteteli nella pentola con le vongole, amalgamate per qualche secondo, servite ben caldi con una girata di pepe e prezzemolo.

Spaghetti alle vongole, uno dei grandi classici della cucina italiana. Un primo piatto di origini campane, cucinato ovunque in Italia e nel mondo!
