Spaghetti Squash Lasagna

Bake

Place a rack in the center of your oven and preheat the oven to 400 degrees F. Roast the spaghetti squash according to this recipe for Roasted Spaghetti Squash.

Stir

While the squash is baking, heat the remaining tablespoon oil in a large skillet over medium high. Add the turkey, 1 teaspoon salt, remaining 1/2 teaspoon pepper, Italian seasoning, and red pepper flakes. Stir and cook, breaking apart the meat into small pieces, until it is fully cooked through and browned on all sides, about 4 minutes. Stir in the garlic and cook until fragrant, about 1 minute more. Reduce the heat to low. Stir in the pasta sauce and red wine vinegar. Let simmer 1 minute. Taste and adjust the seasoning as desired.

Place the spinach in a large mixing bowl. Use a fork to separate any large clumps. Add the ricotta, 1/2 cup fontina, and remaining 1/2 teaspoon salt. Stir with the fork to combine. When the squash is cool enough to handle, use a fork to fluff the insides into strands and add the strands to the bowl. With the same fork, stir to combine, evenly distributing the ingredients as best you can. Return the squash halves to the baking sheet, cut sides up.

Fill

Fill the squash: Pile the ricotta/squash filling evenly into each of the four halves. Top with tomato sauce, remaining shredded cheese, and Parmesan. Return to the oven and bake until the filling is fully heated through and the cheese is melty, about 10 to 15 minutes.

Broil

Brown the top (optional): Turn the oven to broil. Broil the squash until the cheese is extra bubbly and lightly browned, about 2 minutes. Watch it carefully, and do not walk away so that it doesn&#039;t burn. Sprinkle with parsley and enjoy!

This spaghetti squash lasagna is a deliciously satisfying no noodle spin on the classic! It's full of so much satisfying flavor, you won't miss the noodles.

Favorite Spaghetti Squash Lasagna

Preheat the oven to 400 degrees Fahrenheit.

Roast the spaghetti squash

Using a small sharp paring knife, cut the spaghetti squash lengthwise. To cut, pierce the knife into the squash and swing down, making small slices around the squash until it breaks in half. Use the knife to cut around the seeds, and then scoop them out with a spoon. Rub the insides of the squash with 2 teaspoons olive oil total. Place the halves on baking sheet cut side down, and roast 40 to 55 minutes, depending on the size and freshness of the squash, until tender all the way through when pierced with a fork. Alternative method: Go Instant Pot Spaghetti Squash and cook the 2 squash separately (they each cook in 13 minutes).**

Meanwhile, prepare the filling

In a large bowl, combine the ricotta cheese, 1 cup of the Parmesan cheese, 1/2 teaspoon kosher salt, and 1/4 teaspoon black pepper. Stir to combine.

Make the squash noodles and steam 5 minutes

Allow the squash to cool slightly, then use a fork to scrape out the squash into “spaghetti” strands into a colander. Save the hard &#8220;shell&#8221; of the squash to use for serving, or you can use a 9 x 9 baking dish. Allow the squash to steam in sink for 5 minutes.

Season the noodles

Place the noodles in a large bowl. Mix in 1 teaspoon kosher salt, 1 tablespoon olive oil, and the Italian seasoning. Add the cheese mixture and stir gently to combine (don&#8217;t overmix). Now for the important part: taste the noodles and add up to 1/2 teaspoon more salt, until the flavor pops. The exact amount will depend on the weight of your squash and the brand of ricotta. We typically end up adding between 1/4 to 1/2 teaspoon more. 

Layer the lasagna

Using the 4 squash shells or a 9 x 9 baking dish, do the following: place a layer of the cheesy squash and top it with a layer of 1 cup sauce (split among the shells if desired). Then top with the final layer of cheesy squash and the remaining 1 1/2 cups sauce. Sprinkle the top with 1/2 cup shredded mozzarella cheese and the remaining 1/4 cup Parmesan cheese (split across the 4 shells or in the pan).

Place in the oven and bake 10 to 12 minutes until cheese is melted. Top with torn or chopped fresh basil. 

This easy spaghetti squash lasagna is a deliciously cheesy dinner! Made with just a few simple ingredients, this low carb vegetarian lasagna is a tasty main dish!

spaghetti squash (about 3 cups cooked)

Carefully slice your spaghetti squash in half. (Be careful!)

Use a spoon to scoop out the seeds and flip them cut side down on a large microwave-safe plate.

Add a little water to the bottom of the plate (to create steam) and microwave on high for 10 minutes.

In a small casserole dish (6&#215;8 or 8&#215;8) add a thin layer of tomato sauce to the bottom.

Combine the rest of the tomato sauce with the ricotta cheese.

Once the spaghetti squash is done in the microwave, let it cool, then scoop out the insides with a fork.

Layer the spaghetti squash over the sauce.

Top with sauce and repeat with spaghetti squash.

Cover the whole pan with mozzarella cheese and cover with aluminum foil.

Turn to broil for an additional 2-3 minutes, or until the top becomes brown and bubbly.

Roughly chop the fresh basil and sprinkle over top!

Was very good added spinach and Italian spices.   Drained everything but still had lot of water after it cooked.  Otherwise we loved it and will be making again for sure.

Strands of roasted spaghetti squash are layered with marinara sauce, mozzarella and ricotta cheese, then baked in the oven until the cheese is melted and all the flavors bake together.
