Grandma&#039;s tender and juicy meatball recipe simmered in a delicious tomato sauce and served with spaghetti noodles, classic Italian food.

Grandma's Italian Meatball Recipe

Saute the Aromatics

In a large pot or dutch oven, heat olive oil over medium-low heat. Once hot, add the onion and garlic, sauté until onions are translucent, about 3 minutes.

Simmer the Sauce

Stir in the tomato paste and cook for 1 minute. Stir in the crushed tomatoes, salt, and pepper. Simmer covered, with lid slightly ajar to prevent splattering for 30 minutes, stirring occasionally. Season with salt and pepper to taste.

Set the oven rack to the lower-middle position and set it to broil. Line a large baking sheet with foil and lightly grease it with olive oil. Set aside.In a large bowl, add the ground beef, eggs, breadcrumbs, parmesan cheese, minced onion, salt, black pepper, Italian seasoning, and minced garlic. Use hands to mix thoroughly until combined.

Form the Meatballs

Measure and roll the ground beef mixture into ⅓ cup (3 ounces) rounds, about the size of an egg. Evenly space the pieces on the baking sheet, there should be about 14 to 15 meatballs.

Brown the Meat

Broil the meatballs until the surface is browned, about 10 to 12 minutes. Turn over and cook for an additional 2 to 3 minutes to lightly brown the other side.

Simmer the Meatballs

Transfer the meatballs to the tomato sauce. Cover the pot with the lid slightly ajar, simmer on low heat for at least 1 ½ hours, checking and stirring every 20 minutes, or as needed. The meatballs should be fork tender when sliced.

Sauce Consistency

At the end of cooking, adjust the consistency of the sauce with water if needed, about 1 tablespoon at a time. Season to taste with salt and pepper.

Garnish and Serve

Serve meatballs with spaghetti topped with sauce, sliced basil, and Parmesan cheese.

Grandma's Famous Meatballs with Spaghetti

You can't beat a comforting bowl of spaghetti and meatballs, and this version is superhealthy too

Pork meatballs in red pepper sauce

pork mince

apple

fresh white breadcrumbs

red peppers (from a jar), roughly chopped

Put the pork mince in a bowl and stir in the apple, garlic, breadcrumbs and some salt and pepper. Shape the mixture into 16 balls, cover and chill for 10 mins.

Meanwhile, make the sauce. Heat the oil in a medium saucepan and add the onion. Cook for 2-3 mins, until softened, then tip in the tomatoes and half a can of water. Stir in the peppers along with some salt and pepper. Partially cover and simmer for 15 mins.

Heat the oil in a large non-stick frying pan and add the meatballs. Cook for 5-6 mins, stirring occasionally until they are browned all over. Set aside and keep warm.

Using a hand-held blender, whizz the tomato sauce until smooth. Carefully add the meatballs to the sauce and simmer for 5 mins, until cooked through. Meanwhile, cook the spaghetti following pack instructions, drain, then divide between serving plates. Top with the meatballs and sauce.

Spaghetti and Meatballs

bread crumbs (about 3.5 oz)

milk (or water - plus more if needed)

baking soda

water

ground beef (80-85% lean)

parsley (a good handful, finely chopped)

Parmesan cheese (fresh grated)

Salt (to taste (I ise at least a tablespoon of salt))

olive oil (if frying)

black pepper (about 15 turns of the grinder)

In a small bowl mix the baking soda with the water until well combined.  Set aside.

In another mixing bowl, Add the milk and stir together while adding more milk 1 tablespoon at a time to moisten the breadcrumbs fully. Let rest while you prep the rest of the ingredients (or at least 5 minutes).

In a large mixing bowl add the beef, garlic, parsley, and parmesan cheese and season with about a teaspoon of salt and freshly grated pepper (if using jarred sauce, it may be salty so season to taste).

Add the baking soda and breadcrumb mixtures and mix well with your hands, squeezing the mixture through your fingers until combined.

Shape mixture with greased hands into even size meatballs, about 1 ½-inches each (making about 16 meatballs).

Heat about ½ cup of vegetable oil into a large skillet. You’ll want about ½-inch of oil in the pan.Add the meatballs to the heated oil about 2 inches apart and brown them until crisp, turning with a pair of tongs so that they are evenly browned. Do this in batches rather than crowding the pan.Once browned, transfer to paper towels to blot.

Stir the cooked meatballs into warmed tomato sauce. Simmer on low heat if desired for even more tender meatballs (on a Sunday mine simmers all day) stirring often to keep the sauce from sticking to the pan.

Taste for seasoning, season with salt as needed, and serve over freshly cooked Spaghetti.

Follow the stovetop instructions through step 6. Then transfer to a slow cooker, stir the cooked meatballs. cover, and cook on low for 8 hours or on high for 3 to 4 hours, stirring occasionally.

But at what point do you put them in the 400F oven...??

Twenty minutes worked for me.

This rating is for the meatballs only. I used crackers instead of breadcrumbs, but that is just my preference. I can't believe how tender these come out. The baking soda is ingenious!
