Albondigas are delicious Spanish meatballs in a rich and smokey tomato sauce. A must at any tapas feast, but equally delicious served with pasta or potato.

Albondigas (Spanish Meatballs)

250 g pork mince

garlic

sea salt and black pepper

paprika

0.5 tsp chilli powder (or

parsley

breadcrumbs

shallots (diced)

ml red wine

olive oil

400 g chopped tomatoes (canned)

tsp smoked paprika

In a large bowl, add all the ingredients for the meatballs.

Mix well and then form in to 20 meatballs.

Add some oil to a large frying pan and then brown them all all sides (this will take about 5 minutes). Remove them from the pan and set aside.

Start the sauce by adding some more oil to the pan and adding the shallots and garlic and gently cook for 2 minutes. Add the wine and then simmer for 2 minutes.

Add the rest of the sauce ingredients and simmer for 3 minutes.

Put the meatballs back in the pan with the sauce, mix well and simmer for 10 minutes until the meatballs are cooked through and the sauce has thickened.

Warm up your soul with these delectable Spanish Meatballs. Hearty meatballs coated in a fresh tomato sauce that only takes 35 minutes to prepare!

Spanish Meatballs Recipe

beef

Tbsp whole milk

garlic (minced)

tsp paprika*

salt and pepper (to taste)

yellow onion (finely diced)

bay leaf

tomatoes

In a large bowl add in the ground beef, breadcrumbs, milk, garlic, egg yolk, and paprika. Season with salt and pepper and then using your hands knead the mixture together until everything is combined.

Next, create 12 evenly sized meatballs from the meat mixture, place them on a plate and chill in the fridge for 10 minutes.

Next, heat the oil in a large frying pan over medium-high heat. Cook the meatballs for 5 minutes until the outside is nicely browned then remove and place on a paper towel lined plate. Note: The meatballs will not be fully cooked at this point.

Add the additional olive oil into the pan and turn heat to medium. Then add in the onion, garlic, bay leaf, and cook for 3 minutes or until the onion has softened.

Then, add in the paprika, tomatoes and return the meatballs into the pan. Reduce the heat to low and cook for 20 minutes stirring occasionally.

Finally transfer to a bowl and top with fresh parsley and enjoy!

While the sauce is simmering, heat 2 tablespoons of the olive oil in a large, non-stick skillet over medium-high heat. Gently roll each meatball in some flour, shaking off any excess, and brown them on all sides, about 5-8 minutes. Transfer browned meatballs to a plate.
