This recipe for chicken riggies is sauteed chicken with peppers and rigatoni pasta, all tossed in a creamy tomato sauce. This spicy chicken rigatoni dish is pure comfort food and can easily be doubled to serve a crowd!

Chicken Riggies (Spicy Chicken Rigatoni)

rigatoni pasta

Classico Riserva Roasted Garlic Pasta Sauce

heavy cream

chicken breast (cut into 1 inch pieces)

onion

red bell pepper

hot cherry peppers (sliced (amount depends on your heat preference))

salt and pepper

parsley

parmesan cheese

In a large pan heat 1 tablespoon of oil over medium high heat. Add the onion and bell pepper and season to taste with salt and pepper. Cook for 5-7 minutes or until vegetables have browned and softened. Stir in the cherry peppers and remove the mixture from the pan.

Bring a large pot of salted water to a boil. Place the rigatoni in the water and cook according to package directions.

Wipe the pan out with a paper towel and heat the remaining tablespoon of olive oil over medium high heat. Add the chicken and season generously with salt and pepper.

Cook, stirring occasionally, until chicken is browned and cooked through, 6-8 minutes.

Add the pepper mixture back to the pan with the chicken. Pour the pasta sauce over the chicken mixture and stir to coat. Bring the sauce mixture to a simmer; add the heavy cream and stir until incorporated into the sauce mixture. Simmer for 3-4 minutes.

Drain the pasta and return it to the pot. Pour the chicken and sauce mixture over the pasta and toss to coat. Sprinkle the parsley over the top and serve with parmesan cheese if desired.

This is a great rand easy recipe. My daughter is lactose intolerant so can’t have the heavy cream. I substituted lactose free 2% milk that I warmed up and thickened with some flour softened in 1/8 cup lactose free milk.

It was delicious!

I made this for dinner a couple of nights ago and it was delicious. I altered the recipe by using rotini pasta, chili flakes instead of hot cherry peppers, and omitted the parsley. I added a lot of parmesan cheese.

Made this tonight and it was awesome! We used to live in Syracuse and loved going out for chicken riggies. Now that we're in Ohio, I'm glad to have a way to make it at home. I might try blending the cherry peppers into the sauce next time with my stick blender for a more noticeable kick. Great recipe! Thanks!

I would make pizza. My kids loves making homemade pizza. We make it family fun night. My husband at times brings home fresh dough from his store he works at. I never tried this sauce brand. Love to try it

Looks tasty!! I would use the sauce to make this very recipe!
Love your recipes!!

Oh my. My favourite pasta and CHICKEN. It looks delicious and must be tested!! I know I can rate 5 ***** because YOU always post a winner.

I'll be making a cheesy spinach lasagna recipe with no bake noodles if I win!

I checked out thesponsor link and also found a coupon! I've printed it and will be making this dish soon! Thanks

We make a ton of casseroles, usually as a way to clear out the cupboards and freezer of things that have been up there too long. You can make them countless ways, and when you throw cheese on top, the kids will not complain about it. We primarily use condensed soups in these casseroles, but these sauces, with the variety of flavors they come in, would be a great substitute.

I'm very curious about this sauce and will definitely give it a try. If I can save time with a good jarred sauce, I'm definitely in. Sounds so delicious, Sara!

This creamy cajun chicken pasta is loaded with tender pieces of chicken tossed in a tomato cream sauce to give you a burst of flavor in every bite. Best of all, this spicy chicken pasta comes together quickly with just a few ingredients, making it the ultimate comfort meal for the weekdays.

Spicy Creamy Cajun Chicken Pasta

olive oil (to marinate the chicken,

butter

chicken breast

rigatoni

tbsp cajun seasoning (divided)

garlic (minced)

onion (sliced)

red bell pepper (sliced)

tomato sauce (or crushed tomatoes)

pasta water

parmesan cheese (grated)

chili flakes and parsley (optional, for garnish)

In a medium bowl, add chicken, olive oil, and 1 tbsp cajun seasoning. Massage to coat evenly and set aside while preparing the other ingredients.

Cook pasta to about 1 minute shy of al dente, and reserve about a cup of pasta water. While your pasta is cooking, heat a skillet over medium heat, drizzle in some oil, and cook your chicken for about 2-3 minutes per side.

In the same skillet, add butter and sauté onion and garlic, followed by the bell pepper. Add tomato sauce, heavy cream, 1/2 cup pasta water, and the remaining 1/2 tbsp cajun seasoning.

Simmer the sauce for about 2-3 minutes until thickened. Stir in your pasta and half of the chicken sliced into bite-sized pieces. Cook for 1-2 minutes until the pasta is tender, add parmesan cheese, and season with salt to taste.

Serve each bowl of pasta with the remaining chicken pieces on top, and garnish with chili flakes and parsley. Enjoy!

Omg! I tried this recipe and my entire family devoured it. It’s soooo good! Thank you so much.
You have a new follower and I am looking forward trying out all your recipes in here.

I actually made this vegan by using vegan alternatives and missing out the chicken and it still turned out incredible (a sign of an amazing recipe!!)

Surprisingly delicious for how simple a recipe!

I made it for my family and we all absolutely loved it!! I didn’t change a thing, and I’ll be making it very often now!

This is a delicious recipe. I make it once every two weeks but fight the urge to make it every week. Tastes like a restaurant dish. So easy and the entire family loves it.

Absolute winner!! Had some cream to use up and found this recipe online and it looked good so gave it a go. So glad I did!! A winner with the whole family, fussy kids and all. Only change I made was I diced the chicken first, then seasoned and fried off.
Have printed the recipe and added it to our family favourites folder :-)

WOW! I absolutely love this site and your recipes. I have made 3 recipes so far and I’m so blown away on how good it is. I can’t wait to cook this pasta dish. My boyfriend request pasta for dinner so I’m going to make this. Gotta say your recipes are restaurant quality even better in my opinion. Thanks Elle for sharing these truly delicious recipes. Please continue doing what your doing.

This turned out absolutely incredible. Always love how simple and delicious your recipes are, Elle, thanks a bunch!!
