Homemade stovetop popcorn seasoned with chili powder and cumin.

Salty Spicy Popcorn

olive oil, divided

popcorn kernels, divided

salt

cumin

chili powder

black pepper

Put 1 tablespoon olive oil, kernels and salt into a large pan. Make sure the kernels are in a single layer.

Cover the pot and heat it over medium high heat. Wait about 30 seconds until you hear popping sounds. Take it from heat and shake the pan moving it back and forth. Put it back on the heat with its lid slightly ajar. Repeat this two or three times in a minute.

When the popping slows down, remove the pot from the heat and wait until you hear no sound, about a minute. Make sure the pot is still ajar.

When there is no popping at all, remove the lid. Drizzle 1 tablespoon olive oil over it, sprinkle cumin and chili powder and stir with a spoon well until all kernels are coated.

Last night I almost bought some spicy chips. Then I remembered I had some popcorn at home. I found and followed this recipe and was not disappointed. It was kind of addicting.  The only change I made was I added some cayenne also, to kick up the spicinesss. The chips at the store cost $3.79. This recipe cost maybe 35 or 40 cents, if that.

I'm really glad I found this recipe. It has been the base for alot of other spicy popcorn I have made in relation to the quantities and spice. I also add garlic powder and smoked paprika, bit I also think curry would be good with the cumin.
One question though: how would it go for these to be stored?

Sweet and Spicy Popcorn with Chili Oil

popcorn kernels

Tbsp chili oil

Tbsp sugar

salt (to taste)

Preheat the pan.  A well-heated pan ensures fluffy, well-popped popcorn that&#39;s not burned. Heat a heavy bottom cooking pot or skillet over medium heat.    Wait until it&#39;s hot, about 2-3 minutes.

Add chili oil, cooking oil, sugar, and popcorn kernels.  When the pan is hot but not smoking, add the chili oil and cooking oil into the middle of the cooking pan.  Carefully sprinkle the sugar on top of the oil.  Next, add the popcorn kernels.  Work quickly and be careful of splatter.

Pop the popcorn!  Cover with a lid. Gently shake the pot so the kernels are coated in the oils and sugar.  When the kernels start popping, continue to shake the pan from time to time.  When the popping sound slows down so there&#39;s 10 seconds between pops or stops completely, turn off the heat.

Season with salt.  Transfer the popcorn into a large bowl.  Add salt to taste and mix the popcorn kernels with a generous sprinkle of salt, so it&#39;s evenly distributed.  Taste and adjust the seasoning, adding more salt if your prefer.

Drizzle with more chili oil.  Optional but highly recommended -- add a drizzle of chili oil (just the crisp that&#39;s on the bottom, preferably) on top of the popped popcorn.  Mix well with a spoon and enjoy!
