Ready in 15 minutes, these spicy pork noodles are the perfect dish for a healthy weeknight dinner, and they make great leftovers too.

Spicy Pork Noodles

rice noodles

olive oil

sesame oil

pork chops,

green onions, thinly sliced, white and green parts separated

garlic,

snow peas, thinly sliced

carrots

soy sauce

chili paste,

honey

rice vinegar

Bring a large pot of water to a boil. Once boiling, add rice noodles and cook as per package directions until tender.

When the noodles have 5 minutes of cooking remaining, prepare the pork. In a large pan on medium-high heat, warm the olive oil and sesame oil. Add green onion (white parts only) and garlic and cook for 1 minute until tender.

Add the sliced pork to the pan and cook for 2-3 minutes, flipping it to cook on both sides, until lightly browned and mostly cooked through, then add snap peas and carrots, toss to combine with the pork, and cook for an additional 1-2 minutes.

Add the soy sauce, chili paste, and honey to the pan, and toss it with the pork and vegetables until everything is well coated. (Feel free to add more chili paste if you like things spicy.) Once everything is well coated, turn down the heat to low.

When the rice noodles are cooked, strain them, and then transfer them to the pan, gently tossing them in the pork until well coated. Drizzle with rice vinegar and toss again. Then taste and adjust the seasoning with soy sauce and/or chili paste as desired.

Serve the pork noodles immediately with a garnish of sliced green onion. Any leftovers can be stored in an airtight container in the fridge for up to 4 days or in the freezer for up to 3 months.

Delish! This is a keeper. Came together super fast and was really tasty. The noodles were a nice change from rice.

Made this last night for dinner and it was delicious! Just the right amount of spicy. I used bok choy instead of snow peas because I had it in the fridge and added some yellow pepper as well.

This was a yummy recipe! We used frozen stir fry veggies for it to be even easier to prepare. And instead of the Chili paste we used an an Asian crunchy pepper condiment (forget the exact name). My growing boys also enjoyed. Thank you!

Best recipe for Asian noodles. Quick and easy for weeknight dinners. I liked the crunch of the snow peas and carrots. The sauce is entry-level on the spicy scale so good for mild spices folks. I added sirracha sauce for a bit more zing. Thank you Kay for another winner!

The whole family loved this! The rice noodles especially were a hit. I used pork tenderloin instead of chops since we had it on hand. Will definitely make this again!

These spicy pork noodles are gloriously savory, chewy and delicious, with perfectly crisp cabbage and plenty of sauce. And they're so quick to make!

Spicy Pork and Cabbage Noodles

dry ramen noodles

canola oil oil

pork

yellow onion, sliced

green cabbage or Napa cabbage, chopped into bite-sized pieces

garlic, minced

tamari or soy sauce

doubanjiang* (substitutions in notes)

mirin

brown sugar

green onion and toasted sesame seeds, for topping

Cook the noodles according to package directions. Drain and set aside.

Heat the canola oil in a large skillet or wok over medium-high heat. Once the oil is shimmering, add the ground pork and break it up with your spoon to brown.

When the pork is mostly cooked, add the yellow onion and cabbage. Cook, stirring frequently, for about 5 minutes, or until the vegetables are mostly softened but still a bit crisp.

While the vegetables are cooking, whisk together the sauce ingredients in a small measuring cup or bowl: tamari, doubanjiang, mirin, brown sugar, and sesame oil.

Add the garlic and cook for an additional minute, or until fragrant. Pour in the sauce and add the noodles, then toss with tongs until everything is nicely coated in the sauce.

Serve topped with lots of sliced green onion and toasted sesame seeds, plus more doubanjiang if you like it extra spicy.

I have made this 3 times so far. Each was good with substitutions for the doubanjiang, but the last time, I ordered an authentic jar of it from Amazon.  The meal is AMAZING. I also use linguine because I prefer a firmer noodle. Otherwise its in normal rotation!
