An iconic food in upstate New York, spiedies were a summer barbecue staple for my family and you're guaranteed to love them too.

Chicken Spiedies

white wine vinegar

soy sauce

lemon juice

garlic, (smashed)

bay leaves, (crushed)

oregano

Italian seasoning

red pepper flakes

basil,

Tbsp fresh mint, (chopped

parsley,

Tbsp fresh thyme, (chopped

Tbsp sugar

tsp kosher salt

tsp black pepper

extra virgin olive oil

lbs chicken breasts, (boneless, skinless)

skewers

Combine all of the marinade ingredients except the olive oil in a bowl and whisk well to combine.

Add the olive oil in a steady stream while whisking and set aside. (Alternatively process all of the marinade ingredients in a food processor until well blended.)

Cut the chicken breasts into 1 inch cubes. Place the chicken cubes in a ziplock bag and pour the marinade over the chicken.

Seal the bag and refrigerate for 24 hours, or even better, 2 days.

Preheat your grill to med/high heat. While the grill heats, thread the marinated chicken onto the skewers (about 8 or 9 cubes per skewer).

Grill about 5 mins per side, turning once. Serve with sliced Italian bread or rolls.

Spiedies are a fun sandwich from Binghamton NY consisting of cubes of meat marinated, put on skewers and grilled.

Pork Spiedies Recipe

olive oil

vinegar

garlic

thyme

basil

salt

black pepper

Italian bread (sliced)

Combine the olive oil, lemon juice, vinegar, minced garlic, thyme, oregano, basil, salt and pepper in a bowl and mix well.

Cut the meat into cubes and add it to a zippered bag. Pour the marinade over top cover the meat. 

Let the meat marinade, refrigerated, for 1 to 3 days. Turn the bag over occasionally in the refrigerator.

If you are using wooden skewers soak them in water for 30 minutes before assembling the spiedies.

Preheat your grill on medium-high.

Remove meat from the marinade and thread onto skewers. Put 6-7 pieces per skewer, enough to fill your bread or bun. Grill for 8 minutes, turning every 2 minutes.

To serve, pick up a pieces of bread, put the skewer on the bread, fold the bread over and pull the skewer out.

These are traditional served without condiments, but if you want to include a sauce garlic aioli is my favorite.

This is great on lamb chops. It my favorite way to cook them.

I have family in the Finger Lakes region and while I have never liked spiedies myself, I can confirm that people from that area, especially around Binghamton, RELISH these things and eat them any time and any place. Many local grocery stores sell the ingredients as a kit! A real micro-regional favorite.
