spinach crustless quiche

Spinach Egg Bake made with sharp cheddar cheese, frozen spinach and eggs for a grain-free breakfast that you can meal-prep on the weekend, then eat for a low-carb high-protein breakfast during the week.

Spinach Egg Bake

block frozen chopped spinach, thawed

eggs

garlic,

¼ cup half and half

Dijon mustard

paprika,

salt

¼ teaspoon ground black or white pepper

nutmeg

cheddar cheese, 1 cup

Preheat oven to 350 degrees F. Coat a deep dish pie plate with cooking spray.

Squeeze excess moisture from spinach. Transfer the spinach to the prepared pie plate.

Whisk eggs, garlic, half and half in a large bowl. Add mustard, paprika (if using) salt, pepper and nutmeg and whisk to combine until the spices are blended into the eggs and there are no large clumps of mustard. Pour the egg mixture over the spinach. Top with cheddar.

Carefully transfer to the oven and bake until the mixture is set in the center, about 45 minutes. Remove from the oven and let cool at least 10 minutes before cutting into wedges and serving. Or cool completely, slice and store, covered in the fridge for up to 5 days.

dry. maybe I made this in too small of a pan so i had to cook a bit longer so it was cooked through. I found it pretty bland, dry, and the next day uneatable.

I’m sad to say this was not our favorite. Too much Dijon and not enough other flavors. As my husband said, you need to really like Dijon to like this.

This easy and adaptable crustless quiche recipe is loaded with sliced mushrooms and spinach. A little fontina cheese adds a nutty finish, but mozzarella will work in a pinch. This recipe is vegetarian, gluten-fee, low carb and utterly delicous!

Crustless Quiche with Spinach and Mushrooms

milk

Fontina cheese

extra virgin olive oil, (plus more for the pan)

mushrooms

yellow onion, (minced)

garlic, (minced)

thyme

black pepper

balsamic vinegar

baby spinach leaves

Preheat the oven and prepare the pan: Preheat the oven to 375°F. Brush a 9-inch pie plate with olive oil and set it on a baking sheet.

Whisk the eggs and cube the cheese: In a large bowl, aggressively whisk together the eggs and milk. Cube the Fontina cheese and set aside.

Prepare the vegetables: Set a large skillet over medium-high heat. Add the olive oil to the skillet. Once the oil begins to shimmer, add the mushrooms, onion, and garlic. Sprinkle with thyme, salt and pepper. Cook until the mushrooms shrink and the onions are translucent, about 10 to 15 minutes depending upon the size of your mushrooms. Drizzle the balsamic vinegar over the vegetables and stir, cooking for another minute or two. Add the spinach, stir until wilted, this should take about 3 minutes. Taste and adjust the seasoning to your liking.

Combine: Add the cooked vegetables to the pie plate, sprinkle with the cubed cheese, and pour the egg mixture over the top. It should be full up to the rim. Carefully transfer the baking sheet to the oven.

Bake: Set the timer for 35 minutes and bake until the center is set. Let cool at room temperature for about 10 minutes before serving.

I am not a great fan of eggs but this is delicious.  Highly recommend this.  I swapped out the cheese for Feta.

I made this last night (Sunday) with the hope that it would last a few days for lunches to take to work. Not much hope because it was so delicious that my husband and I almost polished off the lot. I will definitely make this again and next time serve it with a salad.

I use fresh thyme, feta and guoda cheese. It comes out great everytime. Thanks for the recipe.

I also made it with what i had on hand. Kale, broccoli and Jack cheese. Sooo delicious! I’ll be making it at least once a month 🥰
