Low Carb Spinach Pinwheels with feta and parmesan turn the classic party food into an easy keto appetizer using magic mozzarella fat head dough.

Low Carb Spinach Feta Pinwheels

coconut flour

baking powder

xanthan gum

mozzarella cheese

eggs

spinach,

feta cheese ((about 3 ounces))

Parmesan cheese, (grated (about 1 ounce))

garlic, (minced)

dried marjoram ((or 1/4 teaspoon dried oregano))

salt

black pepper

Tablespoon unsalted butter, (melted)

Coarse sea salt, (for sprinkling)

Cover a work surface with a silicone baking mat or a large piece of parchment paper. In a medium bowl, whisk together the coconut flour, baking powder, and xanthan gum. Set aside.

In a large, microwave-safe bowl, heat the cheese on high in 30-second increments until almost liquid. Stir in the flour mixture and eggs and knead in the bowl using a rubber spatula.

Turn the dough out onto the prepared work surface and continue to knead until cohesive. Set dough aside while preparing the filling.

For the Nut-Free Magic Mozzarella Dough:

Preheat the oven to 375°F and line a baking sheet with a silicone baking mat or parchment paper.

Squeeze out as much moisture from the spinach as possible and place the spinach in a medium bowl. Stir in the feta, Parmesan, garlic, marjoram, salt, and pepper until well combined.

Lightly grease another baking mat or large piece of parchment paper and transfer the prepared dough onto it. Pat into a rough square and top with another piece of parchment or waxed paper.

Roll out the dough to a 16-inch square. Spread the filling on top, leaving a 1/2-inch border. Roll up the dough tightly and pinch the seam to seal.

Use a very sharp knife to cut the dough into 1-inch slices and place the pinwheels cut side down on the prepared baking sheet. Brush with the butter and sprinkle with a little coarse salt.

Bake for 18 to 22 minutes, until the pinwheels are golden brown and just firm to the touch. Remove from the oven and let cool completely on the pan.

Spinach Pinwheels

oz cream cheese (softened)

oz frozen spinach

garlic powder

puff pastry

cheese (mozzarella, Colby jack, or cheddar) (shredded)

egg (beaten)

Pre-heat oven to 425°F.

Melt butter in a skillet over medium heat, then add onions. Sear onions until they are softened and golden brown (this will take a few minutes). Set aside.

Thaw frozen spinach by submerging in warm water until they are no longer frozen. Then drain water and use paper towel to pat dry spinach. Try to remove as much moisture from spinach as possible.

In a large bowl, mix to combine cream cheese, spinach, caramelized onions, and garlic powder.

Spread out one of the puff pastry sheets, then spread half the cream cheese spinach mixture evenly all over puff pastry sheet. Make sure mixture is spread to the edges, especially the top edge of the puff pastry sheet.

Sprinkle with half of the shredded cheese all over the top of cream cheese spinach mixture.

Roll over the bottom of the puff pastry sheet and keep rolling until a tube is formed.

Seal the tube close by pressing down on the seams of the puff pastry sheet

Using a serrated knife, slice tube into 12 pieces of pinwheels.

Place pinwheels at least 2 inches apart on baking sheet lined with parchment paper or greased baking sheet. Brush the top with egg wash.

Repeat step 4-9 using the other puff pastry sheet.

Bake in the oven for 15 minutes. Bake in two batches if needed, do not overcrowd spinach pinwheels on baking sheet or overlap baking sheets in the oven when baking .

Remove pinwheels from oven and let them cool for a few minutes. Serve and enjoy!

Thank you. This recipe is a keeper. I've made it twice and it's addictive.  I adjusted only by adding chopped rotisserie chicken brest.

I am wondering whether I can make the dough rolls the night before and keep them in the fridge until the next day when I can bake them and serve them fresh.  Have you tried that?
