Spring Mix Salad

feta cheese crumbles (or goat cheese crumbles; optional)

chopped pecans, walnuts, almonds

apple, sliced or diced (optional)

Balsamic Vinaigrette, Dijon Dressing, Orange Vinaigrette, Ginger Dressing,

Make the dressing

Try Balsamic Vinaigrette, Dijon Dressing, Orange Vinaigrette, or Poppy Seed Dressing.

Prepare the vegetables

Slice the onion and if desired, soak it in cold water while preparing the rest of the salad (to remove the bite). Or, slice the shallot into rings. Peel the carrot into ribbons or julienne it. Chop the nuts.

Serve

Place the spring mix greens on a platter or salad plate, and top with carrots, onion, feta crumbles, and chopped nuts. Drizzle with dressing and serve (use about 1 to 1 1/2 tablespoons dressing per serving).

Dressing

Finely chop 1/3 of the herbs. Whisk together with olive oil, lemon juice, salt and pepper.

Salad

Place clean and dry lettuces and greens in a bowl. Toss with a couple tablespoons of the dressing and a pinch of salt (optional). Top the greens with pea shoots or peas, fennel, radishes, turnip and herbs. 

Drizzle with more dressing and a grind of pepper. Add any other enhancements and serve!

Fall Harvest Salad (Apple Cider Vinaigrette)

ounces Spring Mix, depending on servings

Goat Cheese, crumbled

Cranberries

Pecan Halves, roughly chopped

Apples,

Apple Cider Vinegar

Olive Oil

Dijon Mustard

Honey

Lemon Juice

Salt and Pepper

Mix up the Dressing. 

Mix up the dressing ingredients and season with a pinch of salt and pepper, to taste. I like to shake everything up in a mason jar, but you could also blend in a small processor/blender, or mix by hand in a bowl.

Assemble the Salad. 

When ready to serve, add the lettuce, and other salad ingredients in a large bowl. I like to reserve a little bit of each add-in for sprinkling on top. Toss together with your desired amount of dressing. Depending on the size of your salad, you may not use all the dressing (see note).

Serve and Enjoy. 

Can avocado oil be used instead of olive?? I made this and it was awesome , but not a super fan of olive oil ... I’d like to serve this along with dinner next week ...

This spring salad recipe is a perfect light meal or side dish. Filled with fresh veggies, herbs, and a zippy vinaigrette, it&#x27;s simple, bright, and delicious.

Bright Spring Salad

asparagus

peas (thawed)

salad greens

radishes (thinly sliced)

feta cheese

avocado

(toasted pistachios)

chickpeas

herbs (for garnish (basil, mint and/or chives))

Sea salt and pepper

basil

garlic clove

lemon juice (plus ½ teaspoon zest)

white wine vinegar

extra-virgin olive oil (more as desired)

Bring a large pot of salted water to a boil and set a bowl of ice water nearby. Blanch the asparagus for about 1 minute, until tender but still bright green. Transfer to the ice water for 1 minute, then drain. Allow the asparagus to dry and transfer it back to the bowl and add the peas.

Make the dressing: In a food processor, pulse together the herbs, garlic, lemon juice, zest, vinegar, olive oil, and salt.

Add half of the dressing to the bowl with the asparagus and toss to coat. Season to taste with salt and pepper.

Assemble the salad. Arrange the salad greens on a platter, then layer the asparagus/pea mixture, the radishes, feta, avocado, pistachios, chickpeas, and herbs. Drizzle with remaining dressing, season to taste with more salt and pepper, and serve.

You can soak your cashews in water for about 1 hour or overnight in the refrigerator if using a standard blender. You don't need to soak your cashews if you are using a high-speed blender.

Place cashews in the blender, add water, lemon juice, tahini, nutritional yeast flakes, garlic, and salt. Process until creamy. Add dressing to salad and toss to coat.

Prepare The Blue Cheese Dressing

Place spring salad mix in a large bowl, top with tomatoes, avocado, cucumber, beet, artichoke heart, red onion, olive, fresh herbs (I added cilantro and basil), and edible flowers of your choice, (I added marigolds and nasturtium).

Preheat oven to 350℉. Place walnuts in a single layer on a cookie sheet. Bake for 8-10 mins, keeping a watchful eye that they do not burn.

Remove from oven and let cool to room temperature.

Toasted Walnuts

In the bottom of a large mixing bowl whisk together oil and balsamic until emulsified. Whisk in remaining ingredients.

Balsamic Vinaigrette

Add Spring mix and addittional salad ingredients. Toss well.

This is one of my new favorite salads! The dressing is delicious and the combination of strawberries, walnuts &amp; feta works so well! This was a big hit at a recent get together!

This recipe is delicious and so easy to make.  I have made this for several parties, and it is always a huge hit, and everyone always wants the recipe.  I now print several copies to take along and give them when they ask.  I take the extra time to pick off all the stems on the spring mix and it makes for a prettier and cleaner looking salad.  it's clearly a matter of preference and time management.  I love the conversion chart to do all the math for me when I need to make 30-80 servings rather than the recipe's 8 servings.  So easy and convenient! An excellent, easy salad to make.  It was a huge hit with my girlfriends and my family.

This is the best strawberry salad recipe I have ever found.  My husband and I love the dressing; we use it now for other salads too.   I'm too laz to roast the walnuts, and it is still one of the best salads I have ever had.

This salad is completely addictive. The sweet with the tangy and nutty...my mouths waters just thinking of it.
