If you are looking for ways to cook summer squash and eggplant then I have a recipe for you. This Roasted Summer Vegetable Pasta is loaded with eggplant, zucchini, and tomatoes, mixed in with whole-wheat pasta for an easy baked dinner!

Roasted Summer Vegetable Pasta

½ lb whole-wheat spaghetti (boiled according to package directions, drained and set aside)

eggplant

zucchinis ((or other summer squash),

tomatoes

garlic (minced)

dry white wine

olive oil

salt (or

thyme (dried)

pepper (to taste)

tomato sauce (organic, unseasoned, preferably

parmesan cheese (freshly grated)

Preheat oven to 425 degrees F.

In a 13&quot; X 9&quot; casserole dish combine the eggplant, zucchini, tomatoes (if using), and garlic. Sprinkle over top the wine, olive oil and spices. Roast veggies until they are tender and brown, about 40 minutes, stirring once halfway through the cooking time.

Pull the casserole dish out of the oven and stir the noodles and tomato sauce in with the veggies. Top with the Parmesan cheese and stick the casserole dish back in the oven until the cheese is melted, about 5 more minutes. Serve warm and enjoy!

Here&#39;s a fun spin on a classic Mexican dish created by Catherine of Weelicious. This Slow Cooker Mexican Lasanga is gluten-free, has all the traditional Mexican flavors, and is ridiculously easy to make in the crock pot.

Slow Cooker Mexican Lasagna

onion (large, diced)

turkey (lean)

cumin

salt (kosher)

chili powder

egg (whisked)

sour cream

carrots

corn (defrosted)

cilantro (chopped)

corn tortillas (12 tortillas)

cheese (Mexican blend)

salsa

Heat 1 tbsp of olive oil in a large sauté pan and cook the onions for 3 minutes. Add the garlic and sauté an additional minute.

Add the ground turkey meat, cumin, salt and chili powder and cook for 6-7 minutes until cooked through. Place turkey mixture aside and cool.

In a large bowl, whisk the egg and sour cream together. Add the cooled turkey mixture, carrots, corn and cilantro and mix to combine.

Spread a 1 cup of salsa on the bottom of the crock pot.

Layer 5 tortillas on top of the salsa, cutting them if necessary to fit the crock pot and covering the salsa completely.

Place half the turkey mixture on top of the tortillas and top with 1 cups of salsa and 1/2 cup of cheese.

Add another layer of 3 tortillas on top of the cheese. Pour the remaining turkey mixture on top of the tortillas and top with another 1/2 cup of cheese.

Top the lasagna with another layer of tortillas, pour the remaining salsa on top and cover with 1 cup of cheese.

Cook on low for 2 1/2 hours.
