I was super skeptical about this recipe as I don’t like cream cheese and neither does my husband. He also doesn’t like vegetables and I’ve gone pescatarian.... so I’m trying to find food that we will both eat; hearty enough for my carnivore and no meat for me. This hit the spot! I’ll hold the asparagus for him next time (because I love him that much) but he ate it!! The sauce was really tasty and we liked the combination of veggies. Thanks Delish! You are my new go-to for great meals!

I make this recipe a lot just the way it is, very delicious and everyone who tries it loves it.

This is a good recipe. We made ours dairy free. I didn't use parmesan and used a coconut milk cream cheese alternative. Only used half a cup or so of pasta water since I didnt use parmesan. Garnished with a dash of salt and lemon juice. Yum!

The cream cheese adds so much tastiness to this!

Creamy Primavera Bow Ties

This Creamy Avocado Pasta is made with spaghetti coated in a delicious avocado sauce mixed with sweet corn and sun-dried tomatoes. This dish can be served warm or cold and is the perfect spring or summer meal!

Creamy Avocado Pasta with Corn and Sun-dried Tomatoes

spaghetti

flesh of 2 avocados

baby spinach leaves (tightly packed)

juice of 1/2 a lemon

salt + black pepper (to taste)

sweet corn (drained)

tomatoes

parmesan cheese (for topping)

Cook spaghetti in salted water according to package instructions until al dente. Be sure and reserve a cup of the pasta water if you drain the spaghetti.

To the bowl of a food processor, add the flesh of two avocados, spinach, olive oil, lemon juice and salt and pepper and pulse until smooth. Add a little pasta water while continuing to pulse until you reach a smooth consistency that will coat the pasta nicely, about 1/4 cup should do it.

Transfer cooked pasta to a large mixing bowl and add sauce, corn and sun-dried tomatoes. Gently toss with silicone tongs to combine all ingredients. You can add a little more of the pasta water to the bowl while mixing if needed to reach a nice, creamy consistency.

Season pasta with more salt and pepper to taste. Transfer pasta to a serving bowl and top with shaved parmesan. Enjoy!

This bright, creamy pasta dish features pan seared salmon over tagliatelle pasta coated in a delicious, tangy Greek yogurt sauce with mushrooms and asparagus. This dish is finished off with fresh lemon zest and creamy Burrata cheese.

Creamy Salmon Pasta with Burrata

olive oil (extra virgin, divided)

lb Atlantic salmon (skinless)

salt and black pepper (to taste)

Greek yogurt

vegetable broth

corn starch

juice and zest of one large lemon

pack baby bella mushrooms (sliced)

½ medium yellow onion (diced)

asparagus spears (rinsed and cut)

garlic (minced)

lb tagliatelle pasta (fettuccine

garlic powder

herbs de Provence (or Italian seasoning)

red pepper flakes (optional)

Parmesan

oz Burrata cheese (torn)

lemon zest and fresh parsley (for garnish)

Cut salmon into about 1-inch chunks and season with salt and cracked black pepper. Set aside.

In a medium bowl, whisk together Greek yogurt, broth, lemon juice and zest and cornstarch until fully combined. Set aside.

Heat olive oil in a large, deep skillet or Dutch oven over medium-high heat and add onion and mushrooms. Cook until onions are translucent, about 2-3 minutes. Add asparagus and garlic and cook until asparagus is crisp-tender, about 2-3 minutes.

Meanwhile, cook pasta in salted water according to package instructions until al dente. Strain pasta, reserving about a cup of pasta water.

Pour Greek yogurt sauce over veggies and cook until bubbling, stirring constantly. Season sauce with salt, pepper, garlic powder, herbs de Provence and red pepper flakes. Reduce heat to low, add grated Parmesan and simmer until creamy, adding a little pasta water as needed to reach a really smooth consistency.

In a separate large skillet, heat other tablespoon of olive oil over medium-high heat and add salmon. Cook until golden on the outside and medium on the inside, about 5 minutes.

Remove sauce from heat and add pasta to pan with sauce. Gently toss until all pasta is coated with sauce. Top pasta with salmon chunks, torn Burrata pieces and more grated parmesan. Finish with lemon zest and fresh parsley.

Bring 1 quart chicken broth to boil in a medium pot. Add pasta and cook 10 minutes until al dente. Drain pasta and keep warm. Reserve some of the pasta cooking liquid.

Heat olive oil in a large heavy bottom skillet over medium high heat. Add asparagus, onion and chick’n strips. Cook until onion and asparagus are tender and chick’n is warmed through, about 5 minutes.

Stir in soup and lemon juice; season with salt, pepper, garlic powder and red pepper. Add pasta and parmesan cheese; stir to combine.

Add a little pasta cooking liquid, a tablespoon at a time to thin sauce out to desired consistency if desired. Garnish with fresh parsley and serve immediately.

Tender succulent shrimp cooked with lemony orzo, fresh asparagus and peas. This dish comes together so easily and screams spring!

Lemony Orzo with Shrimp, Asparagus and Peas

In a small bowl, season shrimp with half of salt, half of pepper and red pepper. Set aside.

Heat 1 tbsp oil in a large heavy bottom skillet over medium-high heat. Add asparagus and cook for about 5 minutes until tender. Remove asparagus from pan and set aside.

Add other tbsp of oil to pan along with onion and garlic and cook for about 5 minutes or until onion is translucent, stirring frequently.

Add orzo and cook 2 minutes or until lightly toasted, stirring to coat with oil.

Add 2 cups broth and remainder of salt to pan, bring orzo to a boil. Reduce heat and simmer 15 minutes, stirring occasionally.

Stir in remaining 1 1/2 cups stock, peas, lemon zest, and shrimp; cook 5 minutes or until shrimp are done. Remove pan from heat. Stir in asparagus, lemon juice, pepper, and Parmesan cheese. Sprinkle with chopped parsley if desired. Serve immediately.
