Stained Glass Cookies are sure to impress people of all ages! These crisp buttery cookies are cut into festive shapes and filled with hard candies, then they're baked and the candy melts into an even layer for a beautiful stained glass effect. A delicious cookie to add to the cookie tray this year!

Stained Glass Cookies

Jolly Ranchers hard candies ((approx. 20))

(226 grams) unsalted butter, (softened)

(200 grams) granulated sugar

tsp salt

eggs

tsp vanilla extract

(382 grams) all-purpose flour

Unwrap and separate Jolly Ranchers into each color then place in separate small resealable bags. Crush into small bits (not powder) using a meat mallet, set aside.

In the bowl of an electric stand mixer cream together butter, sugar and salt until well combined.&nbsp;

Mix in eggs one at a time then blend in vanilla.

With mixer set on low speed slowly add in flour and mix until well combined.

Scrape dough out and shape into a rectangle, wrap in plastic wrap and and chill 1 hour.

Cut chilled dough into thirds. Leave one portion out to work with and chill remaining.

Roll dough out onto a floured surface (about 1/5-inch thick). Cut out as many large stars as possible using a star shape cookie cutter (approx. 3.5-inch stars).

Transfer cut stars to baking sheet lined with a silicone baking mat*. Cut a smaller star (using a 1.75-inch star cutter) from the center of each and remove**. Re-roll and cut scrap dough.

Fill cut out centers about 3/4 of the way with crushed jolly ranchers. Chill cookies in refrigerator until firm, about 15 - 20 minutes. Meanwhile preheat oven to 350 degrees.&nbsp;

Bake cookies until set and candy center has melted, about 12 - 14 minutes.

Let cool on baking sheet until Jolly Ranchers have set and hardened. Repeat process with remaining refrigerated dough. Store in an airtight container.

Super-easy but stunning cookies that make for great ornaments or just a delicious holiday treat!

unsalted butter (226 grams, room temp)

sugar (200 grams)

all-purpose flour (480 grams, sifted)

cornstarch (65 grams, sifted)

kosher salt (3 grams)

vanilla extract (5 milliliters)

Hard candies (You can use any one you'd like.)

Preheat to 375 degrees F.

Sift the flour, cornstarch and salt into a large bowl and whisk together.

In a standing mixer fitted with a paddle attachment, cream butter and sugar together.

Add eggs one at a time then the vanilla while mixing on low.

Scrape the bowl down and mix in the dry mixture.

Separate dough into two disks. Wrap in plastic and chill for about an hour. I like to roll my dough out a bit between two sheets of plastic wrap at this point so there&#x27;s less rolling later on.

Roll chilled dough to a 1/4 inch thickness.

Cut out a shape using a medium to large cookie cutter. Cut out the window shape on the inside using a smaller shape.&nbsp;

Poke a small hole at the top of the cookie. This is for the ornament hook.

Place cookies on a silpat lined baking sheet.

Add hard candies to a ziplock bag. Choose a brand and flavor of hard candies that you enjoy.&nbsp;

Crush up, then add to the inside of the cookies. Distribute evenly.

Bake for 12 minutes at 375F then allow to cool on baking sheet.

Add ornament hook if hanging.

I did add a just over a teaspoon of baking powder and a pinch of baking soda to the recipe though as I live at the coast at sea level (Cape Town, South Africa). I will definitely make these again. Stained glass cookies are SO EASY to make and beautiful to look at. I love seeing light peek through the centers and yes, you can decorate your tree with them, or you might prefer snacking on them straight out of the oven! There are no wrong answers here. 
To make them all you have to do is cut your sugar cookies with a negative space inside, then crush your favorite hard candy and sprinkle it in the middle. Try not to get any hard candy on the sugar cookie as it will look messy. Also you really need a silicone baking mat for this, not sure baking paper would work for the release but you can let me know in the comments if you've tried it!
