I love lemons and my Lemon Pound Cake with Pistachios is definitely a keeper!  You&#039;ll love this moist and delicious cake and the lemon-lime glaze is the perfect addition.

Lemon Pound Cake Recipe

lemons (4 tablespoons of juice)

cake flour

baking soda

salt

unsalted butter (softened)

superfine sugar*

full fat Greek yogurt (at room temperature)

lemon zest

salted pistachios (or unsalted your choice)

confectioners' sugar

tbsp juice lemon

tbsp juice lime

lime

Preheat the oven to 350 degrees and butter and flour one standard size loaf pan

Using a zester or grater carefully remove the zest of two lemons, being careful not to get into the white part of the skin.

Juice the lemons, removing the seeds and set aside.

In the bowl of a food processor, add the sugar and lemon zest and pulse until well blended (5 or 6 times) You can do this by hand if you like.

Allow this to set for 5 minutes to build the aromatics.

Sift together the flour, salt and baking soda and set aside

beat the butter in the bowl of your electric mixer for two minutes on medium to high speed (scrape down the bowl as needed)

add half the sugar mixture and whip for an additional minute, then add the remainder and continue to whip the butter /sugar mixture for four more minutes, scraping down the bowl and blade as needed.

Remove the eggs from the water, dry them off and add the eggs one at a time, beating for about 30 seconds in between each addition.

On a very low speed add in the flour mixture, mix until just blended.

Add in the Greek Yogurt and lemon juice , mixing just enough to incorporate them.

Pour batter into prepared pan, and top with the pistachios

Place the cake on the center rack of your oven and bake for 55-60 minutes. (start checking your cake at around 50 minutes. It should be browned on top and a tester stuck in the middle should come out clean when the cake is done)

Allow cake to cool on a wire rack for 15-20 minutes then remove from pan.

Lemon Pound Cake

mix the juice from one lemon and one lime with the confectioners&#39; sugar and mix until well blended, then add zest.

Allow glaze to set for 10 minutes before using.

Top pound cake with glaze adding and additional coat as it drys.

Slice pound cake and enjoy!

Salted Caramel Mocha Coffee

cocoa powder

2-2 1/2 tbsp salted caramel (recipe below)

non dairy milk

coconut cream

caramel drizzle for topping

sea salt

sugar

tbsp coconut sugar

maple syrup

tsp coconut oil ((optional))

tbsp coconut cream or oat milk

Add the coconut sugar, maple syrup, oil, and salt to a skillet over medium heat and mix well.

Once the maple syrup is bubbling consistently, add in the coconut cream or milk and mix in

Cook this mixture until it bubbles evenly, and continutes to bubble. Cook it for another minute after that, and take off heat.

For the Caramel:

Combine the coffee, 2 to 2.5 tbsp salted caramel, milk, and cocoa powder in a blender, and then blend the mixture.

For hot coffee, you can transfer this mixture to a large cup to warm in the microwave until its hot, or you can serve this chilled. Distribute the mixture in two cups. Add a good dollop of whipped cream on top, and drizzle the remaining caramel. Sprinkle a pinch of sea salt on the whipped cream, as well as some granulated sugar, and serve.

To Make the Mocha:

Chill a 15 oz can of full fat coconut milk overnight.  remove the can from the fridge without shaking or tipping it. Remove the top of the can, then spoon out the thick layer of coconut cream from the top of the can. (We won’t use the coconut water/thin milk that has settled to the bottom of the can. You can add it to curries or freeze to use later )Using a whisk attachment in a mixer bowl or a hand mixer, beat the coconut cream on medium speed for 2-4 minutes, you can add 1-2 tbsp powdered sugar and whip again. Use as much as you like and store the rest in the fridge for upto 3 days.
