This Roasted Half Chicken recipe takes about 40 minutes. It's juicy, golden-brown, and perfect during a busy week for lunch or dinner.

Roasted Half Chicken

1.5kg (3 pounds) whole chicken

canola oil

tbsp roast chicken spices (rosemary, garlic powder, paprika powder, thyme, salt, and pepper)

Arrange the rack in the middle of the oven, then preheat the fan-assisted oven to 230 °C / 445 °F or the conventional oven to 240 °C / 465 °F. Line a baking sheet with parchment paper.

Place the chicken breast-side down with the wings facing toward you on the work surface. Use a sharp knife to cut the chicken in half. Pat the chicken dry with paper towels and place in a bowl. Season with canola oil and roast chicken spice mix. If this spice mix isn’t available in your country, use two tablespoons of your homemade spice mix. Combine rosemary, garlic powder, paprika powder, thyme, salt, and pepper. Optionally add a bit of harissa for some spiciness.

Place the chicken on the prepared baking sheet with the skin side up. Place in the preheated oven and roast on the middle rack for 35 - 40 minutes or until golden brown or a thermometer inserted into the thickest part of the meat registers 71 °C / 160 °F.

Made under 40 minutes, easy to make and super delicious.

Roast chicken with new potatoes

800 g new potatoes, jersey royal

cherry tomatoes

garlic

thyme

1500 g whole chicken

tsp smoked paprika

mustard powder

olive oil

Cut the potatoes into lengthwise quarters and place them into a pot, filled with salted water. Cook for about 10 minutes on medium-high heat.

Drain the potatoes and toss them into a baking tray lined with parchment paper. Add the halved cherry tomatoes, peeled cloves of garlic and a sprig of thyme. You can also add thinly sliced chilli. (optional). Preheat the oven to 230°C or 445 °F.

Cut the chicken in half lengthwise across the backbone but be careful not to cut it through the other side. This way it will bake quicker. In a small cup combine the smoked paprika, mustard powder (or dijon mustard), 2 pinches of black pepper and 1 teaspoon of salt. Rub the mixture all over the chicken, season with salt and drizzle with a bit of olive oil. Bake for 25 minutes in a convection oven or 30 - 35 minutes in a standard oven at 230°C or 445 °F.

Carve the chicken and divide it between 4 plates, with the potatoes and cherry tomatoes. You can use any leftovers in a sandwich or wrap.

Thin Sliced Beef Round Steak with Sauce

kg (2 pounds) beef top

70 g (1/2 cup) all-purpose flour

unsalted butter (for meat)

unsalted butter (for sauce)

shallots

tbsp all-purpose flour

ml (3 cups) beef broth

thyme, 1 bay leaf

Place the thin steaks onto a working surface and tenderize the meat using a meat tenderizer. The thickness of the meat should be 0.5 cm or 1/4-inch. Pat dry the meat using a paper towel, then season on both sides with salt and pepper. Sprinkle flour over a plate or baking sheet and coat the beef in flour on one side. Shake any excess flour off.

Place a skillet over high heat. Add the butter and oil. When the butter melts, add the beef steaks with the clean side down. Don't overcrowd the pan; work in batches of a few thin-cut steaks. Pan-fry for 1 - 2 minutes per side, then transfer to a plate and repeat the process with the rest of the meat.

Pour wine into the same skillet. Using a spoon, scrape all the flavors from the bottom of the pan. Cook for a minute for the alcohol to evaporate, then pour the wine over the steaks on a plate. Add butter, diced shallot, and flour to the same pan. Saute for 6 - 8 minutes over low heat. Add the minced garlic, and cook for another minute.

While continuously stirring with a whisk, slowly pour in the broth or water until combined. Add the thyme and bay leaf. Bring to a boil, then immediately reduce the heat to the lowest temperature. Add the beef, cover with a lid and cook for 2 hours to 2 1/2 hours, or until the schnitzels are super tender. Serve with your favorite side dish.
