Place the steak into a sealable bag. Place the peppers and onion into a separate sealable bag. Add the olive oil, lime juice, chili powder, ground cumin, cayenne pepper, salt, black pepper, and garlic to a jar with a screw top or tight fitting lid. Shake until well combined. Pour 1/3 of the marinade over steak, 1/3 of marinade over vegetables and reserve the remaining marinade in the jar for using when cooking the steak fajitas. Seal the bags tightly and refrigerate for one hour to overnight.

When ready to cook, heat a large skillet over medium-high heat. Pour the vegetables into the skillet and cook until just tender crisp, about 5 minutes. Remove the vegetables from the skillet to a plate and add steak strips to the same skillet. When the steak is cooked throughout (about 7-10 minutes), add vegetables back to the skillet along with the reserved marinade.

Serve with warm tortillas and desired optional garnishes.

Steak Fajitas

skirt steak (or flank steak, sirloin, flat iron, or hanger steak)

½ cup sliced zucchini (¼-inch thick)

brown mushrooms (rinsed, dried, and quartered)

sliced bell pepper (¼-inch thick, red, green and yellow peppers)

Add steak to a large plastic bag or casserole dish.

In a medium bowl whisk together olive oil, soy sauce, jalapeno, garlic, cumin, salt, pepper, and lime zest.

Remove ¼ cup of the marinade and transfer to a small bowl. Whisk in lime juice and set aside.

Pour the remaining marinade over the beef, flip several times to coat. Marinate for 30 minutes, flipping halfway through. The beef can be refrigerated and marinated for up to 24 hours.

Steak Marinade

Heat a large cast iron skillet over medium-high heat.

Add 1 tablespoon of olive oil to the pan. Shake off the excess marinade from the beef, scrape off any garlic and jalapeno to prevent burning then pat dry with a paper towel. Carefully add steak to the hot pan.

Sear without moving the beef until the surface browns, about 2 to 3 minutes. Flip over and cook until the internal temperature reaches 120 to 125ºF (49 to 52ºC) for medium-rare, about 2 to 4 minutes depending on the thickness. Transfer to a cutting board, cover with foil and allow to rest for 10 minutes before slicing.

Add 1 tablespoon of olive oil to the pan. Once hot, add the onions and saute for 1 minute. Add the zucchini, saute for 1 minute. Add mushrooms, saute for 1 minute. Add bell peppers, saute for 2 minutes. Season with ½ teaspoon salt and ¼ teaspoon black pepper, stir to combine. The vegetables should be crisp-tender.

Slice the beef across the grain, on a bias, into thin ¼-inch thick strips.

Add the beef slices on top of the vegetables. Whisk the 1/4 cup of reserved marinade and then pour over the fajitas. Season with salt and pepper as desired.

Garnish with chopped cilantro leaves. Serve the steak fajitas with warmed tortillas and desired toppings.

Marinate

Add all of the marinade ingredients to a bowl or shallow dish and stir. Add the steak, toss to combine, and marinate for 1 to 4 hours.

Cook steak

Heat a large skillet over medium-high heat. Add the steak and cook for 3 to 4 minutes on each side. Remove the steak to a cutting board and let the steak rest for several minutes.

Cook veggies

While the steak is resting, heat the oil in the same skillet on medium-high heat. Add the onion and bell pepper slices and saute for 4 to 5 minutes, stirring frequently.

Slice steak

When the onion and bell peppers are just about done, slice the steak into long, diagonal strips.

Stir together

Add the steak back to the skillet, and stir everything together.

Serve

Serve immediately with tortillas and your favorite toppings, such as sour cream, pico de gallo, and avocado (or guacamole).

This recipe is phenomenal and easy to make. The peppers and onions almost stole the show, seriously.  Instead of guacamole or salsa, topped the fajitas with a chipotle sauce.
