Good meat, good beer and good pastry – it’s clear why this steak and ale pie is a winner. 

How to make steak and ale pie

225 grams/8 ounces plain flour, plus extra for rolling out

salt

250 grams/9 ounces unsalted butter,

150 milliliters/¼ pint ice-cold water

free-range egg, beaten, to glaze

tbsp plain flour

olive oil

300 milliliters/½ pint brown ale

garlic cloves, roughly chopped

onions, roughly chopped

250 grams/9 ounces carrots, roughly chopped

celery,

bay leaf

thyme

300 milliliters/½ pint good-quality beef stock

tomato purée

tbsp balsamic vinegar

chestnut

butter

salt and black pepper

Everyone needs a good homemade steak pie once in a while. Make it easy using ready-made shortcrust pastry. 

Steak pie

900 grams/2lb braising steak,

flour,

onions, sliced

parsley

tbsp chopped fresh thyme

570 milliliters/1 pint hot beef stock

225 grams/8 ounces ready-rolled shortcrust pastry

Make the most of inexpensive cuts of beef for this steak and kidney pie recipe - meltingly tender after long slow cooking.

A steak and ale pie is a comforting classic - this version has suet pastry and a dark rich gravy

Heat oven to 160C/140C fan/gas 3. Using a flameproof casserole dish with a lid, soften onion and celery in the butter. Stir in the flour until it has disappeared, then stir in the beef and Worcestershire sauce. Crumble in stock cubes and add thyme. Pour over ale, bring to a simmer, then cover and cook in the oven for 2½ hrs. Remove lid and cook for another 30 mins – this should thicken the sauce nicely.

Increase oven to 200C/180C fan/gas 6. For the pastry, whizz the flour, suet and 1 tsp salt in a food processor until there are no suet lumps. Keeping the motor running, dribble in 1 tbsp water at a time until the pastry starts to come together, then tip onto a lightly floured surface and bring together with your hands.

Roll out half the pastry and use to line a 20-22cm pie dish. Using a slotted spoon, spoon in all of the meat, then pour over some of the sauce until the meat is just coated. Put the rest of the sauce into a saucepan. Roll out the remaining pastry to cover the pie. Trim the edge with a small, sharp knife, then crimp or fork the edges to seal. Make a small heart from cuttings. Brush top of the pie and heart with beaten egg, then dip heart into poppy seeds and stick to top. Bake for 30-40 mins until golden brown and crisp. Reheat sauce and serve with the pie along with some mash and greens.

To make the filling, heat the oven to 160C/140C fan/gas 3. Heat half the oil in a large casserole dish, brown the meat really well in batches, then set aside. Add the onions adding a drizzle more oil, then cook on a low heat for 5 mins until coloured.

Scatter over the flour, stirring until the flour turns brown. Tip the meat and any juices back into the pan along with the ketchup and give it all a good stir. Pour over the stock, season, and bring to a simmer then cover with a lid and put in the oven for about 2 hrs, until the meat is tender. The filling can be made up to three days ahead and chilled or frozen for up to three months.

To make the pie, heat the oven to 220C/200C fan/gas 7. Tip the filling into a 24-26cm rimmed pie dish and brush the rim of the dish with some yolk. Unravel the pastry, drape over the dish and use a knife to trim and press the edges against the side of the dish. Re-roll your trimmings to make a decoration if you like. Brush the pie heavily with egg yolk. Make a few little slits in the centre of the pie and bake for 40 mins until golden. Leave to stand for a few minutes before serving.

Probably the fastest steak pie you’ll ever make! Cooking the pastry topping separately to the filling saves time and helps keep the beef tender and delicious.

This classic steak pie uses stout to make a rich gravy and ready-rolled pastry for ease. For the ultimate pie, the recipe suggests using shortcrust for the base and puff for the lid, but obviously you can just use the puff pastry lid if you prefer.

You will need a 28x23cm/11x9in pie dish that is 4.5cm/1¾in deep.

Season the steak all over with 1 ½ teaspoons of salt

Heat the oil in a large Dutch oven or cast-iron skillet over high heat

Once the oil is glistening, working in batches, add the steak and cook, stirring occasionally, until browned on all sides, 10 to 12 minutes

Reduce the heat to medium and add 2 tablespoons of butter, until melted

Cover and cook, stirring occasionally, until the onions are very tender, about 12 minutes

Add the garlic and cook until fragrant, about 1 minute more

Stir in the remaining 2 tablespoons butter until melted

Sprinkle in the flour and stir to combine

Add the stock, tomato paste, thyme, Worcestershire, garlic powder, pepper and the remaining ½ teaspoon of salt

Stir to combine well.Return the steak to the pot, along with any collected juices

Increase the heat to high and bring to a boil

Reduce the heat to low, cover, and simmer until the sauce is thickened and the beef is tender, about 1 hour

Transfer the beef mixture to a pie pan or baking dish

Brush the rim of the dish with a thin layer of the beaten egg

Roll out the thawed puff pastry and place it on top of the baking dish, covering the meat mixture completely, Press the puff pastry to adhere it to the edges of the dish

Using a sharp knife, make a few slits on the top to create vents

Brush the puff pastry all over with the whisked egg.Transfer the pie to the oven and cook until the pastry is golden brown and no longer doughy, 40 to 50 minutes

If the pastry begins to brown too much, cover it with foil

Remove the pie from the oven and let it stand for 5 to 10 minutes before scooping and serving.

First time making this type of pie and 100% will make again. Filling was nice  and thick and rich, meat tender. Perfect winter dinner for right at the bottom of New Zealand 🥰

700 g Stewing beef (See notes)

Carrots (Peeled and chopped. See notes)

tbsp Tomato purée

Salt and black pepper

600 ml Beef stock (See notes)

320 g Puff pastry sheet (See notes)

Egg (Beaten)

Heat your oil in a large frying pan or saucepan and add the beef. Cook for about 5-10 minutes until just starting to turn brown.

Add in the vegetables and cook for a further 5 minutes until they start to soften.

Add the flour and stir through everything, cook for 5 minutes.

Add the tomato purée, salt and pepper, Worcestershire sauce and stock. Pop the lid on and cook on a very low heat for about 2 hours or until the beef is very soft.

NB: Keep an eye on the beef as it cooks. Stir it well occasionally and if it looks like there is not enough liquid, don&#39;t be afraid to add a little more stock or water.

Spoon into a pie dish and leave to cool for at least 30 minutes if you have time.

Smooth the pastry over the top of the filling.

Decorate the pie with cut out shapes if you feel that way inclined and brush with the beaten egg.

When you are ready to bake the pie, preheat the oven to 220C and bake for about 30 minutes until the filling is hot throughout and the pastry is crisp and golden.
