This ma lai gao is fluffy, tender, moist and satisfyingly springy. Make this delicious dim sum cake easily with this step by step guide.

Ma Lai Gao (Chinese Dim Sum Cake)

g sugar (½ cup)

instant yeast

g bread flour (a bit less than ½ cup)

130 g cake flour (1 cup)

g milk powder (around 1 tbsp)

g sweet rice flour (around 1 tbsp)

⅛ tsp baking soda

1½ tbsp chicken fat (melted)

salt

tsp vanilla extract

In a mixing bowl, whisk eggs, 50g of sugar (about half of the total) together before mixing in warm water and yeast.

Sift flour, milk powder and sweet rice flour into the wet ingredients and stir until it&#39;s smooth.   To reduce the development of gluten, stir in a circular motion a few times until the dry ingredients are roughly incorporated, and then switch to stirring in the motion of writing &quot;Z&quot; and &quot;N&quot; to eliminate the lumps.

Prepare the Batter

Cover the mixing bowl and let it sit in a warm place for 2 hours.  When it&#39;s done proofing, the batter will be filled with air bubbles and will almost double in volume (see the the pictures in the post for reference).

Proof the Batter

In a small bowl, stir baking soda with a splash of water before adding the mixture into the batter.

Add the rest of the sugar, chicken fat, salt, vanilla extract and stir everything together with a whisk in a &quot;Z&quot; or &quot;N&quot; motion. The batter should shrink down to the original volume.

Pour the batter into a lined cake pan.  I use a 6&quot; cake pan here but you can use any container that will fit in your steamer. (See notes for more details)

Finish Up the Batter

Boil 5 cups of water in a pot that you are going to use for steaming the cake.

When the water is boiling, place your cake pan in the steamer and set your steamer over the pot and steam for 35 minutes over medium high heat.  During the steaming process, you should see a good amount of steam coming out from the the steamer.  If the heat is not high enough, you will end up with a denser cake.

When the cake is done steaming, remove the cake from the cake pan and parchment paper, let it cool down for 10 minutes before slicing.  The texture of the cake will be a bit sticky when it&#39;s hot, so give it some time to cool down and allow the extra moisture to come out.

Steam the Cake

This easy to follow Filipino puto recipe will give you light and airy steamed rice cakes. By using rice flour as a base, you can make this recipe in as little as 35 minutes!

Puto (Filipino Steamed Rice Cakes)

water

½ c coconut milk

c rice flour

tsp baking powder

½ c white sugar

Velveeta cheese

Preheat your steamer over medium heat on the stove.

In a large mixing bowl, whisk the egg whites, water, and coconut milk until fully incorporated.

Sift the rice flour and baking powder over the wet ingredients. Use the whisk to mix all the ingredients together.

Pour the sugar into the batter and mix to combine.

Scoop the puto mixture into mini muffin molds to about ¾ of the way up. Place the molds into the steamer and cover with a lid.

Steam for 8 minutes and remove the lid to see if the puto is fluffy and firm. If you would like to add cheese, cut the cheese into small ½ inch slices and place on top of the puto. Cover with the lid and allow it to melt for about 30 seconds. Remove when the cheese has slightly melted.

Remove the puto from the steamer and let sit in the molds for 30 seconds to cool before removing them from the molds. Serve immediately.

Wow. So good! I put a Canadian twist in mine as I dislike white sugar. I just halfed the amount of coconut milk and subbed for maple syrup. I also just used a pot with steamer and they turned out great! Thanks for sharing!
