Making individual Christmas puddings is a clever idea and this recipe is perfect for that. Steamed in the Varoma, these puddings are moist and yummy!

Thermomix recipe: Thermomix Little Steamed Christmas Puds

60 Grams dark brown sugar

Grams treacle

Grams Plain Flour

Teaspoon each ground cinnamon, nutmeg, ginger, cloves, cardamon

Zest the citrus fruit finely and place into the Thermomix bowl. Juice the citrus.

Add juice, fruit mince, all fruit, nuts and brandy into the Thermomix bowl and mix **2 min/70ºC/Reverse/speed 1**. Set aside, cover and leave overnight, stirring occasionally.

Place butter, sugar and treacle into the Thermomix bowl and beat **30 sec/speed 4** until light and fluffy, scraping down sides of bowl if necessary.

Add eggs, flour and spices and mix well **20 sec/speed 5**.

Add brandied fruit and nuts and chocolate to the Thermomix bowl and mix **20 sec/Reverse/speed 4**.

Spoon into dariole moulds or ramekins and place in Varoma dish and tray.

Pour the boiling water into the Thermomix bowl and set Varoma into position. Steam **40-45 min/Varoma/speed 1-2**.

Remove puddings from moulds and serve with cream, ice cream, custard or Brandy Cream Sauce.

This recipe makes approximately 18 little puddings so they may need to be steamed in more than one batch.They freeze well and can be reheated in the Varoma for around 15 minutes/Varoma/speed 1-2.

These little puds look deceptively sweet, but they contain a sponge bursting with berries and the sauce is deliciously tangy

Heat oven to 180C/160C fan/gas 4 and put the kettle on. Butter 6 individual pudding basins or dariole moulds and line the bottoms with circles of baking parchment. Beat the butter and sugar until pale and fluffy, then beat in the eggs one by one. Fold in the flour and lemon zest with the juice from half a lemon. Divide between the moulds, and evenly scatter the blueberries over each.

Sit the moulds in a roasting tin or baking dish just big enough to hold them all. Pour in boiling water from the kettle to come halfway up the sides. Bake for 30-40 mins until risen and a skewer poked in the centre comes out clean.

Meanwhile, make the sauce. Tip the lemon curd into a small pan and gently warm. Gradually mix the juice from 1 lemon into the cornflour until you have a smooth paste, then stir into the lemon curd. Bubble for 1-2 mins, stirring, until smooth. Keep at room temperature.

To serve, carefully release each pudding from its mould by running a cutlery knife around the edge. Turn out onto serving dishes and spoon the lemon sauce on top. Eat with a dollop of crème fraîche or yogurt.

Steam a traditional fruity sponge pudding with suet, citrus zest and currants then serve in thick slices with hot custard

Put the flour and salt in a bowl. Add the suet, currants, sugar, lemon and orange zest.

Pour in 150ml milk and mix to a firm but moist dough, adding the extra milk if necessary.

Shape into a fat roll about 20cm long. Place on a large rectangle of baking parchment. Wrap loosely to allow for the pudding to rise and tie the ends with string like a Christmas cracker.

Place a steamer over a large pan of boiling water, add the pudding to the steamer, cover and steam for 1½ hours. Top up the pan with water from time to time.

Remove from the steamer and allow to cool slightly before unwrapping. Serve sliced with custard.
