Sticky rice and mango pud with coconut milk - a simple, heavenly Thai classic

Soak the sticky rice in cold water for at least 3 hours, or overnight. Drain and rinse thoroughly. Line a steamer with double thickness muslin or a J-cloth (single thickness) and place the rice on top. Bring the water in the steamer to the boil and steam the rice over moderate heat for 30 minutes, turning halfway. Put in a bowl and set aside.

Combine the coconut milk and sugar in a small pan and heat gently, stirring all the time, until the sugar has dissolved. Do not boil. Stir in the salt and pour over the cooked rice, stirring gently; set aside to cool.

Peel the mangoes and cut off the two outer cheeks of each fruit, as close to the stones as possible. Discard the stones. Slice each piece of fruit into thin lengthways slices.

Put a mound of rice on a dish lined with a leaf and nestle the mango next to it. Pour the coconut cream over and sprinkle with sesame seeds.

Soak rice: Place both rices in a bowl and cover with water (5cm / 2&quot; above). Soak for 4 hours (up to 12 hours).

Strain the rice and add it to a small pot or large saucepan.

Pandan leaves: Add the knotted pandan leaves.

Simmer 30 minutes: Add 4 cups of cold water. Bring to boil. Turn stove down to low so it&#39;s simmering very gently (small, slow little bubbles). Simmer 30 minutes (no lid), stirring frequently for the last 15 minutes and almost constantly towards the end (so the base does not catch).

Consistency: Rice should be soft / fully cooked through, water reduced, and sauce should be creamy not watery (starch from rice thickens water).

Add sugar: Stir in sugar and salt until it dissolves (~20 seconds).

Ladle into bowls - it should ooze slowly, not be runny nor so thick it stays in a mound, see video for consistency. (If it&#39;s too thick, add a touch of water and stir).

Toppings: Mix coconut cream with salt. Drizzle onto rice pudding. Top with toasted coconut and mango if using. Serve immediately.

Yogurt Black Sticky Rice Pudding is an easy, delicious and healthy dessert, which can be whipped up quickly. The tartness of yogurt combining with the light sweetness, creaminess and richness of soft-chewy black sticky rice can be addictive.

Wash black sticky rice and soak for 4-6 hours. If you soak it for a shorter amount of time or skip this step, you will need to increase the cooking time.

After soaking, rinse rice and put in a pot. Tie pandas leaves into a knot, put in the same pot. Add salt and water, bring to a boil. Reduce to low - medium-low heat, cover and cook for 20 minutes.

After 20 minutes, add honey, stir and then cover, cook for 5-10 more minutes or until rice is soft and the pudding is glossy and thick as you like.

Transfer to a bowl and let it cool to room temperature. Whisk yogurt until smooth. Put 1 part black sticky rice pudding and 2 parts yogurt in serving glasses or bowls. The ratio of rice pudding and yogurt is customizable. Add crushed ice and honey if desire.
