In a 10-inch pan over medium high heat, add oil. To the hot oil, add minced ginger and garlic and let them sizzle for 2-3 seconds. Add the ground pork. Mix well and brown the meat, breaking up all the clumps. You want some crispy parts, but mainly you want to cook the pork well.

While the meat cooks, chop up the green onions and cilantro. Mix them in a bowl and set aside.

After about 8 minutes when the meat is almost done, push the meat to the sides to create a small space in the middle. Add the sliced green and red chilis.

Pour in soy sauce, sesame oil, the sambal olek if using and stir well.

Turn off the stove and let the pork rest uncovered for 3-4 minutes to cool a little.

Stir in the chopped green onions and cilantro. Sprinkle the lemon juice and stir well.

Separate the butter lettuce leaves and allow your diners to serve themselves some of the spicy pork mixture into each butter lettuce, leaf. Or skip the lettuce and just eat the meat—good either way.

Keto Ground Pork Stir Fry Vegetables

Sweet and sour pork is a delicious, quick and easy Chinese stir fry that takes just 30 minutes to make. Serve this homemade takeout over steamed rice.

Sweet and Sour Pork

salt

Shaoxing wine (optional)

soy sauce (or oyster sauce)

egg, beaten

cornstarch (or all-purpose flour)

vegetable oil

red bell pepper,

green bell pepper,

onion,

cup pineapple, fresh or canned and diced into 1-inch pieces

green onions, finely chopped

white sesame seeds (for garnish)

ketchup

chicken broth (or water)

sugar

white vinegar or apple cider vinegar

cornstarch

Marinate the pork

. In a large mixing bowl, add cubed pork, salt, Shaoxing wine (if using), soy sauce, and egg. Stir well and press the marinade to coat evenly. Let the marinated pork rest for 5 minutes to soak in all the flavour.

Dredge the pork

. Prepare a shallow bowl with cornstarch (or flour) and dip the marinated pork to coat evenly on all sides. Set aside on a plate.

Cook the pork

. You can deep fry, air fry, or bake the pork.

To air fry: Place the battered pork in a single layer in the air fryer basket and lightly spray with cooking spray oil to coat evenly. Cook the pork (in 2 batches) at 350F for 10-12 minutes until golden brown and cooked through. Shake the basket halfway to cook the pork evenly. Set aside on a plate.

To bake in the oven: Place the battered pork in a single layer on a parchment lined baking sheet and lightly spray with cooking spray oil. Bake in a 400F preheated oven for 15 minutes until golden brown. Set aside on a plate after baking.

Prepare the sauce

 In a small mixing bowl, whisk together all the sauce ingredients including ketchup, soy sauce (or oyster sauce), water (or chicken broth), sugar, vinegar, cornstarch, and salt until smooth. Set the aside.

Stir fry

. Heat oil in a large skillet over medium-high heat until the hot oil sizzles, about 1 minute. Add bell peppers, onion, and pineapple and sauté for 1 minute. 

Add sauce

. Stir in the sauce mixture and let it simmer over medium heat for 3-4 minutes until thickened to a desired consistency, stirring constantly.

Add pork

. Add the cooked pork and toss well to coat, about 1 minute.

Serve

. Garnish with sesame seeds and green onions and serve warm with a bowl of steamed rice or fried rice.

Chinese Ginger Pork Stir-Fry (Keto/Whole30/Paleo)

tbsp coconut aminos

0.45 oz ginger (julienned)

Slice

Thinly slice the pork to ⅛-inch thin pieces. If it’s easier, put it in the freezer for 20-30 minutes prior before slicing.

Marinate

In a large bowl, marinate the pork with ingredients from coconut aminos to white pepper. Mix well. Set the bowl in the fridge while you prepare other ingredients.

Prep

Prepare the ginger and garlic in one plate. Julienne the peppers to matchsticks (thin strips). If using longhorn chilis, remove the seeds and dice them to small sections (little less than 1-inch).

Preheat

Preheat a wok or large skillet over medium-heat until it feels hot when placing your palm near, about 2-3 inches away. Add 1 tbsp oil and swirl it around to distribute it evenly.

Stir

Add the starch to the pork marinade bowl. Stir-well.

Stir-fry

Turn the stove heat to medium-high. Add the pork and quickly spread it out in an even layer. Don’t touch them for about 2 minutes then flip and quickly stir fry for another 1-1.5 minutes or until they turn pale pink but not over cooked. Scoop out and set aside. Your skillet should not be watery at this point. If you want to be exact, the cooking temperature for pork should be 145F (62.7C).

Start the skillet dry, add 2 tbsp oil. Saute the ginger and garlic with a pinch of salt for 8-10 seconds. Add the peppers and 2 more pinches of salt. Saute for 1 minute or until the peppers turn vibrant green but not mushy and still crisp.

Return the pork and the sauce to the wok. Toss to combine for 30 seconds. Serve hot or warm.

Wow. We love all your stir fry recipes but this one was so good! And once everything is prepped it just takes a few minutes! I had forgotten to take something out to defrost at supper so I sliced up the pork when it was still pretty frozen- with a very sharp knife I could cut it so thinly so it really did take only 3 minutes to cook. Yummm
