<p>This is hands down the best vegetarian (or vegan) chili we've ever devoured, whether by slow-cooker or stovetop. This vegetarian chili can be made in your Crock Pot or simply on the stovetop, your choice. You won't miss the meat with these big, bold flavors.</p>

The Best Vegetarian Chili (Slow-Cooker or Stovetop)

olive oil

onion,

garlic, chopped

tsp sugar

TB chili powder

TB cumin

cinnamon

TB oregano

tsp coriander

tomato paste

green bell peppers

(14.5 oz each) fire roasted tomatoes, with juices

vegetable broth

(14 oz) black beans, rinsed and drained

(14 oz) white beans, drained

(14 ounces) garbanzo beans, drained

(14 oz) corn kernels,

(12 oz each) packages vegetable burger crumbles

kosher salt and black pepper

Optional Garnishes: shredded cheddar cheese (vegan if desired,) cilantro, avocado, limes

For Stovetop

In a large heavy pot or Dutch oven, heat olive oil until hot. Add onion and garlic, stirring until fragrant, about 30 seconds. Add sugar, chili powder, cumin, cinnamon, oregano, and coriander. Stir to combine, 10 seconds. Add tomato paste and stir 30 seconds.

Add bell peppers, fire-roasted tomatoes with juices, 1 tsp kosher salt, 1/4 tsp black pepper, and broth. Scrape bottom of pot while stirring. Bring chili to a simmer. Simmer covered 20 minutes. Add beans and vegetable crumbles, stirring to combine well. Bring chili back to a simmer and cook, covered, another 20 minutes. Remove from heat. If desired, add kosher salt and black pepper to taste. Serve warm with desired garnishes.

For Slow Cooker

Add all ingredients into slow cooker. Cover and cook on Low for 6 hours.

I love this recipe and I've made it a couple of times as written.  This time I made a few changes - left out a bag of the veggie crumbles and added soy chorizo.  Oh my goodness.  It is so good!!!  Thanks!!

A rich, hearty Whole30 chili with no beans. Easy stovetop recipe loaded with healthy ingredients like sweet potatoes. Not too spicy and SO delicious!

Whole30 Chili

ghee (coconut oil, or extra virgin olive oil)

beef

onion

salt

black pepper

oregano

chili powder

cumin

chipotle chili powder (use less if you prefer a less spicy chili)

garlic powder

chicken broth

potato

red bell peppers (diced)

green bell pepper (diced)

pumpkin purée

tomatoes

jalapeno

Heat a large Dutch oven or similar large, sturdy-bottomed pot over medium heat. Add the ghee or oil. When it is hot, add the meat, onion, salt, and pepper. Cook, breaking apart and browning the meat, until the it is no longer pink and the onion is beginning to soften, about 7 minutes. If it seems very greasy, drain it off (the amount of fat that cooks off will depend upon the meat you use).

Add the oregano, chili powder, cumin, chipotle chili powder, garlic powder, and cinnamon.      Stir to evenly coat the meat and vegetables with the spices. Cook until fragrant, about 30 seconds.

Splash in about 1/2 cup of the broth and run a wooden spoon or rubber spatula along the bottom of the pot to scrape up any brown bits (this is flavor!). Add the next 1 1/2 cups broth, sweet potato, red bell pepper, green bell pepper, pumpkin and diced tomatoes and stir to evenly combine.

Bring the chili to a boil, then reduce the heat to a simmer. Use a lid to cover the pot part way. Continue to simmer until the chili is thickened and the sweet potatoes have softened, stirring it periodically to prevent it from sticking, about 20 to 30 additional minutes. If the chili isn&#x27;t becoming as thick as you like, let it simmer for 5 to 10 minutes without the lid. If the chili seems too thick, stir in additional broth to reach your desired consistency (chili thickness is completely personal preference. We like ours fairly thick, and the chili will thicken further as it cools too). Taste and adjust seasonings. Serve hot with desired toppings.
