These easy Strawberry Crumb Bars, with a buttery crust, sweet fresh strawberry filling, and crunchy butter crumb topping make wonderful dessert bars to take to a summer party, picnic, or potluck.

Strawberry Crumb Bars

white sugar

baking powder

all-purpose flour

salt

egg, (beaten)

vanilla

strawberries, (chopped)

cornstarch

Preheat the oven to 375 degrees F.&nbsp;

Place parchment paper on the bottom of the 8x8 pan that hangs over the side of the pan. (This is to make it easier to remove the Strawberry Crumb Bars after cooking.)

In a medium bowl, stir together 1/2 cup white sugar, flour, baking powder and salt.

Using a fork or a pastry cutter, cut the butter into the flour mixture. (VERY IMPORTANT:  Make sure the butter is very cold.) Work with the dough until the pieces are very small. Dough will be crumbly.  You can also pulse in a food processor to until you get pea sized crumbs.

In a separate measuring cup or small bowl, beat an egg with a fork. Add the egg and vanilla to the flour mixture, and combine until you have a crumbly mixture.

Pat half of the dough evenly into the bottom of the prepared pan.

In another bowl, stir together 1/3 cup sugar and cornstarch. Stir in the strawberries.&nbsp;

Spoon the strawberry mixture evenly over the bottom crust.

Crumble the remaining dough over the strawberry filling layer.

Bake in a preheated oven for 45 minutes, or until top is slightly golden brown. (My oven runs hot and baked in about 38 minutes.)

Cool completely before cutting into squares. I recommend refrigerating until ready to serve.

Vegan Strawberry Jam Bars

cup whole wheat flour

cup all-purpose flour

oats

dates

cinnamon

cup olive oil

almond milk

strawberries

chia seeds

Strawberry Zevia

Preheat oven to 325 degrees F. Line an 8×8 or 9×9 square pan with parchment paper and grease lightly. Set aside.

In a saucepan over medium heat, cook the strawberries until they start to break down and can be mashed with the back of a spoon, about 5-7 minutes. Remove from heat. Add the chia seeds and Zevia. 

In a food processor, combine the whole wheat flour, all-purpose flour, oats, dates, cinnamon, salt, olive oil, and almond milk. Pulse together until the batter starts to come together. 

Take half of the mixture and press firmly it into the bottom of the prepared pan. Spread the strawberry filling over the crust. 

Sprinkle the rest of the crumble mixture over the top of the filling, until all has been used.

Bake for 50 minutes, or until filling is bubbly and top is golden brown.

Remove from oven and after the bars have cooled for 10 minutes, chill for at least 30 minutes before cutting.

Strawberry Lemon Bars

butter

all purpose flour

almonds (chopped)

strawberries ((or 1/2 cup jam))

tsp baking powder

lemon juice

Lemon Juice

Preheat oven to 350˚F. In a food processor place the butter, 2 cups of flour, almonds and 1/4 cup powdered sugar and mix until this forms a ball, scraping sides as needed to incorporate all. Press this mixture into a 13”x9" pan that has been sprayed with Pam or greased with butter. Form a 1/2" rim around the edges and bake for 15 minutes.

Cookie Base

Either use a strawberry jam already made and omit the 1/4 cup sugar OR make fresh using strawberries and 1/4 sugar. If making fresh: wash and trim tops off of strawberries. Place in a small saucepan and add the 1/4 cup of sugar. Cook on low and mash with spoon as strawberries cook down and thicken, 8-10 minutes. Set aside to cool.

Strawberry Jam

In a mixing bowl whisk the eggs, 2 cups of sugar, the remaining 1/4 cup of flour, baking powder, lemon juice, and lemon zest until smooth.

Custard Filling

Pour custard filling mixture over the baked cookie base and spread to cover completely, staying inside the rim of the cookie dough.

Using a spoon, drop cooked strawberries or jam on top of lemon mixture and swirl slightly.

Bake for another 30 minutes until the filling is set, and the edges are golden brown. Cool completely and then sift the 1/3 cup of powdered sugar evenly over the top. Cut into bars and serve.
