strawberry chia jam

Sweetened naturally and thickened with chia seeds, this pectin-free strawberry chia jam comes together in just 20 minutes.

Strawberry Chia Jam

berries

maple syrup

chia seeds

lemon juice

Prepare Berries

Wash and dry fresh the strawberries, then remove the hull and slice them in half.

Stir

Place the berries, along with the maple syrup in a heavy-bottomed saucepan and give the mixture a good stir to combine.

Simmer

Over medium-high heat, bring the mixture to a boil and then reduce the heat to medium-low. Stirring and mashing often with a fork or potato masher, until the berries are soften. This should take about 15 minutes.

Remove the pan from the heat, and stir in the lemon juice and chia seeds. Allow the jam to cool to room temperature (at least 15 minutes).

At this point, you can opt to blend the jam for smoother consistency or transfer the jam to a jar or airtight container and store in the refrigerator for up to 10 days. While you can enjoy the jam warm, I find it is better to let it chill for at least 4 hours to allow the chia seeds to fully thicken the jam.

Blend

Directions for Blending: If desired, transfer the cooled jam to a blender or small food processor fitted with an s-blade. Blend on low speed or pulse lightly until the jam reaches the consistency you like. Transfer the blended jam to a jar or airtight container and refrigerate as directed.

Low Sugar Strawberry Chia Seed Jam Recipe

strawberries

vanilla extract

In a medium-sized pot, bring the berries and maple syrup to a light simmer. Reduce heat to medium low, stirring frequently, and continue to simmer for about 5 minutes. Mash the berries with a potato masher or fork. Leave several berries whole for added texture.

Stir in the chia seeds until thoroughly combined and cook the mixture for about 15 minutes, or until it thickens to desired consistency. Stir frequently so that the jam doesn’t stick to the pot.

Once the jam has thickened up, remove from heat and stir in the vanilla extract. The jam should keep for at least a week in an air-tight container in the fridge or store jam in freezer for later use.

Quick and easy! And I love the fact that I didn’t have to thaw my frozen strawberries.

I really liked the consistency of the jam. I was expecting it to be sweeter, as most jams are, but then I realized that the flavor of the fruit was good, and I needed to cut on sugar anyways. So I am happy with the results. I used frozen berries and it was easy to defrost them over a low-heat stove top. I am trying to prepare a bunch of breakfasts in a jar for work days so this is perfect to add to my overnight oats. Thanks!

I just discovered your blog when looking for healthy crepe recipes. I can't wait to try all of your recipes, they look fabulous!
