This totally superb strawberry cobbler is crowned with a sugar studded cakey topping that has some lemony undertones for an insanely delicious dessert.

Strawberry Cobbler

strawberries (quartered)

sugar

lemon juice

instant tapioca

all-purpose flour

brown sugar (firmly packed)

baking powder

salt

unsalted butter

Preheat oven to 350 degrees. Spray an 8 X 8-inch&nbsp;baking pan with nonstick baking spray.

Rinse the strawberries, let whole berries dry, then slice in half or quarters.

In a large mixing bowl, gently fold together cut strawberries, sugar, brown sugar, lemon juice, and tapioca. Pour fruit mixture into prepared baking dish.

Meanwhile, in a medium bowl, mix together&nbsp;all the topping ingredients, except the butter and boiling water. Add the butter and cut in with a pastry blender or 2 knives until the mixture looks like coarse meal. Pour the boiling water into the bowl and stir just until the mixture comes together.

Drop the topping dough by the large spoonful evenly over the fruit mixture. Evenly sprinkle the top of the dough with 1  1/2 Tablespoons of sugar.

Place the baking pan on a cookie sheet and bake in the preheated oven for about 35 minutes, or until the topping is cooked through and golden and strawberries are tender.

Preheat the oven to 350°F.

In a large bowl, stir together the strawberries and ⅓ cup of sugar. Set aside to macerate.

Add the butter to a 13x9-inch baking dish and place in the preheated oven until the butter is melted, about 10 minutes.

Meanwhile, in a medium mixing bowl, whisk together the flour, baking powder, salt, and remaining ⅔ cup of sugar. Add the milk and vanilla extract, and stir just until combined.

Carefully remove the baking dish from the oven and pour the batter over the melted butter. Spoon the strawberries over the batter, leaving any extra liquid in the bottom of the bowl and discarding it.

Bake for 55 to 60 minutes or until the batter is golden brown and the strawberry juices are bubbling. Let cool for 15 minutes. Serve with vanilla ice cream, if desired.

Strawberry Rhubarb Cobbler

strawberries ((3 cups 14 ounces))

rhubarb

white granulated sugar ((150 grams/~5 ⅓oz)

cornflour (US cornstarch) ((8tsp-notes 1))

balsamic vinegar (optional (4 tsp-notes 1))

flour

67 g light brown sugar ((⅓ cup, packed / ~2 ⅓oz))

ml thickened cream (heavy cream) ((½ cup))

egg (lightly beaten)

demerara sugar (turbinado sugar)

Preheat the oven to  180°C (160°C fan forced) / 350°F.

Combine the strawberries, rhubarb, orange zest, sugar, cornflour, vanilla and balsamic vinegar in a large pie dish and mix well. Set aside.

Add the flour, sugar and baking powder to the bowl of a food processor and blitz to mix. No food processor? See notes.

Add the butter and process until there are only small pieces of butter left (about the size of a grain of barley).

Add the cream and process until it becomes the texture of wet, chunky sand. Flatten out chunks of dough into rounds then place all over the top of the fruit.

Brush the tops of the dough with beaten egg, then scatter over the demerara sugar.

Bake for around 50-60 minutes or until the top looks golden brown and crunchy and the juice is bubbling at the sides, looking thick and jammy.

Let it sit for 7-10 minutes before serving - this will give time for the molten, jammy sauce to cool slightly and thicken.

Try serving with creme anglaise, whipped cream or vanilla ice cream.

I do love crumbles and crisps for the perfect ratio of the filling to the topping, but I've never made a cobbler, though. This one looks add sounds wonderful, and the combination of rhubarb and strawberries is one of the main summer highlights to me!
