Strawberry Jello Cake Recipe

eggs (cold

In a large mixing bowl, make jello according to the instructions on the package, but use 1/2 of the cold water. I.e. for a 6 oz package of jello, add 2 cups boiling water and 1 cup cold water. Let Jello sit at room temperature until it is soft set and jiggles a little (while you work on the rest of the cake), then beat in thawed 8oz cool whip (see step for the cake layers).

Line two 8" or 9" round cake pans (ideally one should be a springform pan) with parchment paper.

In the bowl of an electric mixer with the whisk attachment, beat together 6 eggs and 1 cup sugar on high speed for 12 minutes or until 3 times in volume and thickened.

Sprinkle flour over the top and use a spatula to gently fold in 1 cup all-purpose flour until all lumps are gone.

Divide your batter in half between the 2 lined baking pans and bake at 350˚F for 16-20 min or until top is golden brown and toothpick comes out clean. Remove baked cake from the pan being careful not to squish the top and let it cool to room temperature on a wire rack. Wash the springform pan.

To Make the Cake and Jello Filling:

Once your cake has cooled, place the skinnier layer back into the bottom of your springform pan.

Slice your strawberries in half (or thirds if they are very large) and place them facing tightly against the walls of the springform pan.

At this point, you'll want to beat 8oz cool whip into your jello which should be starting to thicken. Pour your jello cream over the bottom cake and strawberries being careful not to knock down the strawberries. Smooth over the top.

Place the second cake layer over the top of the jello and refrigerate for 2 hours or until jello is set then remove from fridge to decorate.

How to Assemble the Cake:

To decorate, beat together the cold heavy cream and powdered sugar until whipped and spreadable. I transferred it to a pastry bag and piped roses using a Wilton 2D tip. Start in the center and work your way out in circles; staying close to the surface of the cake.

Pile fruit in the center in whatever design you like; they look good just piled up too. Put back in the fridge a couple more hours or overnight to allow the jello to fully set before serving or the cake will be too dainty and will fall apart easier when sliced. Also, you take it out of the spring form mold, fold some plastic wrap and wrap it around the jello part of this cake to keep it in place while it firms up fully.

To Decorate the Cake:

This Strawberry Jello Cake has to be one of our all-time favorite desserts... made with yellow cake, strawberry mousse and a beautiful mirror glaze. It's perfect for holidays like Mother's Day, Valentine's Day, birthdays or a party!

Strawberry Jello Cake (Video Recipe)

15-oz box yellow cake mix

ingredients

oz strawberry jello powder (two small boxes)

Preheat oven to 350°F. Grease the bottom of a 13x9 inch glass baking dish and set aside.

In a medium bowl, prepare the cake batter according to the instructions on the box. [If you prefer a homemade version, see note below]

Pour cake batter evenly into the prepared pan. Bake for 15-20 minutes until golden and puffy.

Remove from the oven and cool in the pan at least 30 minutes. Meanwhile, make the strawberry mousse.

Cake

In a medium bowl, add 6 oz strawberry jello and 2 cups of boiling water. Stir slowly for one minute to dissolve.

Stir in 1 cup of cold water and set aside until half set (THICK BUT NOT FIRM).&nbsp;It takes about over 1 hour at room temperature or 5-10 minutes in the fridge. It's important to wait until it's half set, otherwise, your whipped cream and jello will separate&nbsp;when the mixture cools down.

Add the whipped cream/cool whip to the jello and mix until smooth. The mixture should be quite thick.

Once the cake is cool, spread the filling evenly across the cake using a spatula. Rap the pan on the counter a few times to level the filling and remove any trapped air.

Chill for at least 1 hour on a level surface in your fridge. Meanwhile, make the mirror glaze.

Strawberry Mousse

In a medium bowl, combine 3 oz jello powder with 1 cup boiling water and stir slowly for one minute until dissolved. Stir in ½ cup cold water and set aside to cool.

Remove the cake from the fridge. Arrange strawberry halves on top of the filling, approx. 4 widthwise by 5 lengthwise.

Once the jello is lukewarm, carefully pour it over the back of a spoon, dribbling across the top of the filling surface and over the strawberries.

Chill one more hour to allow the glaze to set. Congratulations, you're done - enjoy!

INSTRUCTIONS

[Cake Mix] In a medium bowl, prepare the cake batter according to the instructions on the box. [OR Homemade] In a medium bowl, beat eggs and sugar for 5 minutes until fluffy, then fold in flour until blended.
Pour cake batter into evenly into the prepared pan. Bake for 15-20 minutes until golden and puffy. Remove from the oven and cool in the pan at least 30 minutes.
While the cake is cooling, mix the partially set jello with the whipped cream in a medium bowl. Once the cake is cool, spread the filling evenly across the cake. Rap the pan on the counter a few times to help level the filling.
Arrange strawberry halves on top of the filling, approx. 4 widthwise by 5 lengthwise. Chill for 1 hour or until mousse is set; meanwhile, make the mirror topping.
In a medium bowl, combine 3 oz jello with 1 cup boiling water and stir until dissolved. Add ½ cup cold water and let cool about 30 minutes.
