Easy and delicious Korean style strawberry milk recipe

Korean Strawberry Milk

strawberries ((or frozen strawberries), (5 ounces), washed and stems removed)

sugar

milk cream

2-3 ice cubes ((optional))

Dice the strawberries into smaller pieces or use your hands/masher to mash them. (Or you can adopt both methods to give an interesting texture.). If using frozen strawberries, you can use a blender. If so, add the frozen strawberries and 2 Tbsp of hot water in a blender and gently mix them around to lightly thaw the frozen strawberries. Turn up the blender, using the lowest spin mode, until you get your desired texture. (Blending for a short burst of time will give you a more chunkier texture and blending a bit longer will give you a smoother texture.)  

Transfer the diced/mashed/pureed strawberries into a medium size bowl and add the sugar. Mix them well. Chill the bowl in the refrigerator for 1 – 2 hours, covered.

Prepare the serving cups and add 4 Tbsp of strawberry syrup into each cup. (You can add more or less depending on your preference.) Pour over the milk. Serve immediately. To drink mix the milk and strawberry syrup well with a straw.

This Homemade Strawberry Milk is loaded with the flavor of fresh strawberries. This easy 3-ingredient strawberry syrup is made with real ingredients - no dyes or artificial flavorings.

milk (preferably whole or 2%; non-dairy milk can be substituted)

whipped cream (for topping (optional))

Make syrup

Place the strawberries, sugar, and water in a saucepan set over medium heat. Simmer for about 10-12 minutes, stirring occasionally, until slightly thickened.

Drain syrup

Set a fine mesh strainer over a bowl and pour the strawberry mixture through the strainer. Use the back of a spoon to press the strawberries against the strainer, extracting as much juice/syrup as possible. If there is any foam on top of the syrup you can scoop it off now. Chill the syrup.

Assemble

To serve: pour ¾ cup of milk into a glass and add syrup to taste (I add about 3-4 tablespoons). Stir and serve.

This delicious Korean style Strawberry Milk is sweet, refreshing and can be made with fresh or frozen strawberries. If you have been searching for a drink that is pretty in pink, look no further.

Strawberry Milk Recipe

strawberries ((heaped)- 150 grams or 10 to 11 medium-sized)

strawberries (- 70 grams or 4 to 5 medium-sized)

vanilla extract

Almond Milk (or any vegan

Macerate Strawberries (Optional, read note)

Rinse strawberries and drain all the water. Trim off the leaves and discard. Give the berries a quick chop.

In a small to medium-sized sauce pan, add the chopped strawberries and sugar.

Coat the strawberries in the sugar by gently stirring them, and set aside for 20 to 30 minutes. The sugar will dissolve and a syrup will appear.

Make Strawberry Syrup

Place the sauce pan on the stove over low heat. Stir at intervals as the mixture gets heated up.

Let the strawberry syrup come to a boil.

When the syrup begins to boil remove from heat and place on your kitchen countertop. Mash with a vegetable masher, fork, wooden spoon or immersion blender until you achieve the consistency you desire.

Check taste, and, if necessary, add more sugar. The syrup should have a flowing, drippy consistency, not thick like with a jam or sauce. Let it cool completely. 

Making strawberry syrup

Assembly

Before serving, finely chop 4 to 5 medium strawberries - about 6 tablespoons.

Take 3 glasses and place 4 tablespoons of strawberry syrup in each glass.

Top with 2 tablespoons each of finely chopped strawberries (if using) and ¼ teaspoon of vanilla extract.

Pour in 1 cup cold milk of your choice - any nut milk or dairy milk will work. While drinking, stir with a spoon to blend.  Enjoy!

Making strawberry milk

Strawberry Tres Leches is an ideal summertime dessert. Strawberry milk is blended with three milks and then poured over a light and airy sponge cake until it’s all absorbed. The result is a sweet and delicious cake that’s full of flavor.

Strawberry Tres Leches

strawberries (stems removed)

(15-ounce can) evaporated milk

milk

heavy cream

all-purpose flour

baking powder

salt

eggs (separated)

vanilla

To a blender, add the chopped up strawberries and sugar. Allow them to macerate (sit together) until the strawberries have softened, about 15 to 30 minutes.  Pour in the evaporated milk and regular milk. Blend until pureed. Transfer the strawberry milk to the container and mix in the heavy cream. Transfer to the fridge to allow the strawberry puree to infuse the milk, about 1 hour.

I made this at the beginning of the recipe and then made the sponge cake and it was perfect timing. Run the strawberry milk through a strainer into a measuring cup or a bowl with a spout.

To make the strawberry milk:

Preheat the oven to 350 degrees F. Grease a 9x13-inch pan and set aside.

In a large bowl, whisk together flour, baking powder and salt. Set aside.

In a stand-up mixer with paddle attachment, beat egg yolks and sugar until pale yellow and double in volume. Mix in the vanilla and the milk on low speed just until combined, then fold the egg yolk mixture into the flour mixture.

Clean and dry the egg yolk bowl. Add the egg whites and beat with the whisk attachment on high until stiff peaks about 3 to 4 minutes.

Fold the egg white mixture into egg yolk and flour mixture.

Pour the batter into the cake pan and bake for 18 to 20 minutes. Let cool completely in the pan before proceeding with the rest of the recipe.

To Make the Tres Leches Sponge Cake:

Using a skewer or fork, create little holes on the top of the cake. Pour the strawberry milk mixture over the cake (it may seem like a lot but it will absorb!). Transfer to the fridge to 2 to 3 hours, ideally overnight.

Just before serving, make the whipped cream! To a bowl, using an electric mixer, mix the heavy cream and sifted powdered sugar. Top the cake with the fluffy whipped cream and garnish with slices of strawberry. Slice and serve.

To Assemble + Topping:

Made this for my daughter who loves strawberries and whipped cream , she loved it. Doubled the whipped cream as other people suggested. I also halved the sugar in the strawberry milk because we like things a little less sweet but other than that it was perfect. Take your time with soaking it to get a really nice even soak. I work at an auto body/service shop, and I bake for each of the employees on their birthdays! I had a request to make a strawberry tree leches cake and came upon this recipe! I didn’t want box mix  renditions, I love making homemade recipes! I was apprehensive and worried because I had read some of the comments, but also wanted to give it a try. It did not disappoint!!! I let the strawberries macerate with the sugar for a half hour, then after blended with the milks, added the heavy cream and gave them the full hour to sit as per recipe! Very important steps! The strawberry milk was delish!!! I could have just drank the whole pitcher right then!! lol! I’ve never made a sponge like this either, and was worried how it would turn out. It was perfect! I let the strawberry milk absorb in the cake overnight!! Definitely do this step, because it came out perfect!! The only thing I did differently, was I doubled the whip cream recipe and definitely would recommend doing that. It was just enough to cover the cake! There wouldn’t have been enough if I hadn’t doubled that part.

The strawberry milk tastes amazing. I would use that with a different cake recipe.

This cake was dense and would not absorb the liquid evenly. Some slices were mush and others were dry.

Cooked this exactly as the recipe said, and all the milk did not absorb. 2 stars.

This was amazing - the strawberry milk was such a tasty addition to tres leches! It was a winner dessert at our 4th of July party. And strawberry milk might be a new staple in my fridge :)
