Make the most of rhubarb season with these Keto Strawberry Rhubarb Crumb Bars. A tender, crumbly low carb crust with a sweet fruit filling, they make the perfect spring dessert!

Keto Strawberry Rhubarb Bars

almond flour

Preheat the oven to 350ºF and grease a 8x8 inch baking pan well.

In a large bowl, whisk together the almond flour, sweetener, coconut flour, and salt. Stir in the melted butter and vanilla until the dough begins to clump together.

Press about two thirds of the dough into the prepared baking pan and bake 10 minutes. Remove from the oven and let cool 10 minutes to firm up.

Crust

While the crust is baking, prepare the filling. Add the rhubarb, strawberries, sweetener, and water to a pan over medium low heat and bring to a simmer. Allow to cook until the fruit softens and begins to release liquid, about 5 to 8 minutes.

Remove from heat and add the glucomannan, whisking briskly to combine. Allow to cool and thicken 10 minutes.

Spread the filling evenly over the cooled crust and sprinkle the remaining crust mixture  overtop. Bake another 20 to 25 minutes, or until the crust is light golden brown.

Remove and let cool completely, then refrigerated one hour to firm up before cutting into bars.

Filling

Strawberry Rhubarb Crumb Bars

all-purpose flour ((141 grams))

brown sugar

sugar ((100 grams))

walnuts ((optional))

Preheat oven to 350°F. Prepare a square 9x9&quot; baking dish by lining it with parchment paper so that the bars will be easy to remove and cut once they have cooked and cooled.

In a mixing bowl, combine the flour, oats, soda, salt, sugars and walnuts, if using. Add to the melted butter and vanilla to the oat mixture and stir to incorporate. When the crumb mixture is evenly moist, press 2/3 of it into the bottom of your prepared baking dish. Set aside the remaining 1/3 of the crumb mixture for the top layer.

Crumb layer

In a separate mixing bowl, combine the chopped strawberries and rhubarb. Toss with the lemon juice, then add the sugar and cornstarch and stir to coat the fruit. Spread the strawberry rhubarb mixture evenly over the the bottom crumb layer, then sprinkle with the remaining 1/3 crumb mixture. Bake in the preheated oven for 45-50 minutes, until the top is golden brown and the filling is bubbling.

Remove from oven and allow to cool completely before cutting into bars.

Made these delicious bars two ways - as posted and with a gluten free modification. Both versions were a big hit, meaning several requests “who made these? You have to send me the recipe!”
Gluten mod: equal ratio of oat flour and coconut flour in same measurement as original flour amount. Check to make sure cornstarch is gluten free or replace with appropriate thickener.
Note: blueberries were added to the strawberry rhubarb
