Strawberry Shortcake Cheesecake with layers of strawberry cake and cheesecake. This delicious layered cake is frosted with whipped cream cheese frosting and sprinkled with strawberry shortcake crumbles!

Strawberry Shortcake Cheesecake

15.25 oz of Duncan Hines Classic White cake mix

vegetable oil

milk

oz box of Strawberry Gelatin mix

strawberries (optional)

oz cream cheese

sugar

tbsp vanilla extract

cornstarch

eggs

heavy whipping cream

11.5 oz packages of butter cookies

unsalted butter

tbsp ice water

oz box of Strawberry Gelatin Mix

red food coloring

whipping cream

confectioners sugar

Sprinkle the cake mix into a large bowl, then whisk to get rid of the lumps.

Next, sprinkle a 6 oz package of strawberry gelatin into the mixing bowl, then whisk in with the cake mix.

Add in 3 large egg whites, 1/4 cup of vegetable oil, and 1 cup of milk.

Mix the cake batter at a low speed until the cake batter is smooth and lump free.

Spray two 9-inch cake pans with baking spray.

Pour the cake batter into each cake pan, filling them each about 3/4 full.

Bake the cakes on 350 F for about 20 minutes or until done.

Remove the cakes from the oven, let sit for 5 minutes, then remove from the pan, and cool on a cooling rack.

Make the Strawberry Cake Layers:

Place 16 ounces of cream cheese, cornstarch, and 1/2 cup of whipping cream into a mixing bowl and mix.

Start adding in the eggs, but one at a time.

Next, add the vanilla extract, followed by the sugar. Mix until the cheesecake filling is nice and smooth.

Grab a 9-inch cake pan and spray it with baking spray. Place some parchment paper at the bottom of the cake pan.

Pour 3 cups of cheesecake filling into the pan.

Place the cake pan on top of a cookie sheet, the pour about1 1/2 cups of water into the cookie sheet, NOT THE CHEESECAKE.

Bake the cheesecake for about 30 minutes on 350 F.

Remove the cheesecake out of the oven, and let cool completely.

Next, add about 15 butter cookies into a food processor along with 4 tbsp of butter and 1 tbsp of ice water.

Pulse until it resembles cookie dough.

Spray a 9-inch springform pan with baking spray, then add the cookie mixture to the pan.

Press the cookie mixture into the bottom of the pan and about 1/4 inch up around the sides to create a crust.

Bake in the oven on 350 F for about 15 minutes.

Remove from the oven and let cool.

Pour the remaining cheesecake filling into the springform and smooth it out.

Bake on 350 F for about 30-35 minutes.

Make the Cheesecake Layers:

Add the remaining cookies into the food processor along with 1 tbsp ice water and 4 tbsp of butter. Pulse until it resembles large crumbs.

Remove half of the cookie mixture and set it to the side.

Add a 6 oz package of strawberry gelatin into the food processor and a couple of drops of red food coloring. Pulse about 5 times.

Line a cookie sheet with foil, then sprinkle the red and white cookie crumb on the sheet,

Bake on 350 F for 10 minutes.

Remove, and let cook, then stir the crumbles until they break apart.

Make the Shortcake Crumbles:

Add 1/2 cup of softened butter and 8 oz of cream cheese into a mixing bowl. Mix until well incorporated.

Add in 1/2 cup of whipping cream and 1 tbsp of vanilla. Mix until well combined.

Sprinkle in 2 1/4 cups of confectioners sugar, and mix until the frosting is smooth and lump free.

Make the Whipped Cream Cheese Frosting:

First Layer: Cheesecake with Crust

Second Layer: Strawberry Cake

Third Layer: Crustless Cheesecake

Fourth Layer: Strawberry Cake

Frost the sides and top of the cake.

Sprinkle the shortcake crumbs on top of the cake and pat onto the sides as well.

Let the cake sit for about 20 minutes before cutting into it.

Strawberry Shortcake Cheesecake | I Heart Recipes

Strawberry Shortcake Cheesecake Cake, creamy cheesecake sandwiched between layers of homemade vanilla cake, fresh sliced strawberries and whipped frosting.

Strawberry Shortcake Cheesecake Cake

cream cheese (softened)

salt

sour cream

vanilla extract

all purpose flour

cake flour

baking powder

mup milk

unsalted butter (softened)

whipped topping

Preheat the oven to 325°F. Spray a 9-inch spring-form pan with baking spray and set aside.

In a large bowl, cream the cream cheese until smooth with a hand mixer.

Add in the sugar and salt and mix for 2 minutes on medium speed. Add in the eggs and mix.

Add in the milk, sour cream and vanilla. Mix on medium speed until combined.

Add and mix in the flour. Scraping the sides of bowl before each additional ingredient.

Pour batter into pan and bake for 50-60 minutes, until cheesecake is just slightly jiggly in the center.

Remove from the oven and cool on a wired rack for an hour. Wrap in plastic wrap and place in the fridge for at least 2 hours or up to overnight.

Cheesecake Layer:

Preheat oven to 350°F. Spray two 9-inch round cake pans with baking spray.

In a large bowl, add in the cake flour, sugar, baking powder and salt, whisk to combine.

In a medium sized bowl, add the egg whites, milk and vanilla and whisk to combine.

Add the butter to the dry mixture and using a hand mixer, mix together on medium speed, this will form a crumbly texture.

Add in the wet ingredients and beat on medium speed for 1 and a half minutes until everything is combined and smooth, scraping down the sides of the bowl as needed.

Evenly divide the cake batter between the two pans and bake 25 to 30 minutes, until a toothpick inserted into the center comes out clean.

Transfer to a wire rack to cool in the pan for 20 minutes, then take them out and let cool completely on a wired rack. Wrap cakes in plastic wrap until ready to assemble the entire cake.

Vanilla Cake:

Using a hand mixer, cream butter in a large bowl.

Add in the powdered sugar a little at a time, this will form a thick paste.

Add in the vanilla and milk, and mix to combine.

Add half of the whipped topping and whisk in on low speed until smooth. Take the remaining whipped topping and fold it in with a spoon or spatula. Place it in the fridge for 15 minutes until ready to frost the cake.

Whipped Frosting:

Wash and pat dry strawberries. Slice and set aside.

Take the cheesecake out of the fridge, take off the outer ring, and run a knife under the cheesecake to separate it from the bottom of the pan.

Place one layer of the cake on cake stand with pieces of wax paper slightly underneath the cake, this will help to not get the cake stand messy while frosting.

Spread a thin layer of frosting with an offset spatula.

Place sliced strawberries on top, trying not to get right on the edges. Add another thin layer of frosting on top.

Top with cheesecake layer, add another layer of frosting, then strawberries with another layer of frosting.

Top with the last layer of cake.

Frost entire cake with a very thin layer of frosting for a crumb coat. Make sure not to dip the spatula into the entire bowl of frosting, this will transfer crumbs.

Pop the entire cake into the fridge and let set up for at least 30 minutes.

Add an additional layer of frosting, as thick as you like, to the entire cake.

Place back in the fridge until ready to slice and serve. This cake can be made well in advance, and the layer it sits in the fridge, the easier it will slice.
