This recipe for Southern Strawberry Shortcakes is a classic homemade sweet shortcake topped with sweetened strawberries and whipped cream.

Southern Strawberry Shortcakes

all-purpose flour ((I prefer White Lily brand))

Tablespoons sugar

baking powder

salt

heavy cream

granulated sugar, (for topping on biscuits)

strawberries

sugar

vanilla extract

heavy whipping cream

Preheat the oven to 450 degrees F and line a baking sheet with parchment paper and set aside.

In a large bowl, whisk together the flour, 4 tablespoons sugar, baking powder, and salt. 

Add in the cream and stir with a rubber spatula just until combined.

Use a large cookie scoop or ¼ cup measuring cup to portion out the dough and drop onto the parchment lined baking sheet.

Use the bottom of a glass or fingers to gently press the top of the dough down to make a round biscuit shape.

Sprinkle the top of each biscuit with ½ teaspoon of granulated sugar.

Bake for 12 to 15 minutes or until lightly browned.

For the shortcakes (biscuits):

Meanwhile, prep the strawberries by slicing and adding them to a bowl with granulated sugar and vanilla and stir to combine. Put into the refrigerator for a few hours until the strawberries produce juice.

For the strawberries:

In a large bowl, beat together the heavy cream, powdered sugar, and vanilla until soft peaks form (this is easiest with a hand mixer or a stand mixer with the whisk attachment).

For the homemade whipped cream:

When ready to consume, slice a shortcake in half and top with whipped cream and strawberries.

No-Bake Strawberry Shortcakes

Combine the sugar, cornstarch, lime zest and nutmeg in a small saucepan, stir to combine

Add 2 cups of the sliced strawberries to the saucepan and mash with a potato masher.

Bring the strawberries to a simmer over medium heat; stir until thickened, about 5 minutes.

Remove from heat and pour into a small bowl and place in the refrigerator to cool.

Strawberry Sauce

If using a frozen pound cake make sure it has been thawed. Cut the pound cake into thick slices and cut the slices into bite-size cubes. Cover with plastic wrap until ready to use.

Preparing the pound cake

Pour the whipping cream into a small bowl and beat on low for a minute until the cream starts to thicken. If you immedately beat the cream on high speed the cream will possibly splatter. Once the cream starts to thicken raise the speed to medium high and beat until stiff  peaks form.

Add 2 tablespoons of the cooled strawberry sauce to the whipped cream and whip to combine.  Keep in the refrigerator until ready to use.

Making the Strawberry Whipped Cream

Select four small cups or dessert dishes.

Put 1 - 2 tablespoons of the cooled strawberry sauce in the bottom of the cup/bowl

Alternately add the reserved sliced strawberries and cake pieces

Top with  1 - 2 tbls of cooled strawberry sauce.

Top your dessert with a large dollop of strawberry whipped cream and sprinkle on extra lime zest.

Keep this dessert refrigerated until ready to eat.

Purchase or make a small loaf of pound cake and cut into cubes. Set aside. 

Slice strawberries into small bites. Combine with sugar and water in a large bowl and set aside to make a syrup.

In a mixer, (ad) beat whipping cream until peaks form.  Add powdered sugar and vanilla.  Stir well.

In small glass containers, (ad) begin layering shortcakes by adding a few cubes of pound cake to each glass, followed by strawberries with syrup, then whipped cream.  

Repeat the trifle layering steps, and finish with a sliced strawberry on top.

In a large cold bowl, beat together the cold heavy whipping cream, powdered sugar, and vanilla extract until soft peaks form.

When ready to serve, slice a shortcake/biscuit in half and top the bottom part with whipped cream and strawberries (from the strawberry mixture).

Add the top part, add more whipped cream, and a strawberry on top. Enjoy!
