Strawberry Thumbprint Cookies are soft, buttery, and filled with a sweet strawberry jam center that is sure to satisfy any sweet tooth. These thumbprint cookies with jam are perfect for any occasion, whether it&#39;s a holiday party, a family gathering, or just a sweet treat for yourself.

STRAWBERRY THUMBPRINT COOKIES

butter (2 sticks, at room temperature)

sugar

tsp vanilla extract

all-purpose flour

salt

strawberry jam

Prep: Preheat oven to 375 degrees F. Line a cookie sheet with parchment paper.

In a large mixing bowl, cream together the butter and sugar on medium-high speed with an electric mixer until light and fluffy. This should take about 2-3 minutes. Then, add in and beat the egg yolks and the vanilla extract.

Add the flour and salt. Mix together until incorporated and the dough comes together into a ball. If desired, chill the dough in the refrigerator for 30 minutes (this is optional).

Shaping: Form the dough into1-inch-sized balls that are perfectly round and then place them onto the prepared baking sheet. Using the backside of a ½ teaspoon measuring spoon, press an indent into the center of the cookies to create a crater.

Bake &amp; Filling: Place the cookie sheet into the preheated oven and bake for 8-10 minutes.

Remove the baking sheet from the oven and if the indents look shallow, press them in again. Then, fill each indentation with a spoon full of strawberry jam.

Continue to bake in the oven for an additional 3-4 minutes or until the jam has melted slightly and the edges of the cookies are lightly golden in color. Let the cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely. Serve and enjoy!

Strawberry Thumbprint Cookies

unsalted butter (softened)

all purpose flour

tsp baking powder

tsp salt

white sugar sprinkles

Pre-heat

In a large bowl, mix to combine wet mixture - unsalted butter, granulated sugar, egg and vanilla extract.

In a separate bowl, bring together dry mixture - all purpose flour, baking powder, and salt. Mix well.

Add dry mixture into wet mixture. Using a spatula to combine everything.

Refrigerate

Optional: cover bowl and refrigerate dough for 1-2 hours.

Roll

Roll dough into small 1 1/2 inch balls. Then use the ends of a rolling pin or thumb to make an indentation at the middle of the dough ball. Press halfway down but not all the way.

Press

Press tops of cookies face down onto a bowl of white sugar sprinkles, and place them ~2 inch apart on the baking sheet.

Fill

Fill each of the indentation with strawberry jam.

Bake

Cool

Remove from oven let it cool on the baking sheet for a few minutes, then place them on cooling rack until they are completely cool.

Serve

I just made these today and they are perfect! The recipe is simple and easy to follow. The cookies pair perfectly with a cup of tea and they are so cute!

I tried this today, and OMG it was amazing. These cookies were moist and soft on the inside, and crispy on the outside. The bubbly jelly was absolute heaven. I recommend to sprinkle with powdered sugar after the final cookies have cooled. I would 10/10 make again!

Good gracious, these are delicious!!!  I added half gluten-free flour, plus about 10 drops of lemon essential oil to the dough (since I didn't have a lemon to "zest").  Her tip to chill the dough in between all steps was important for the cookies to not spread.  Perfectly delicious cookies the first time!  This recipe is a keeper.

OMG so good plus easy to make. They taste amazing, we love eating them with our tea!
