Arayes Lebanese Stuffed Pita

ground beef (90% lean)

onion

garlic (minced)

parsley (chopped)

tbsp seven spice

tsp cumin

coriander

paprika

tsp kosher salt

tsp pepper

pita bread (double ply and preferably thin)

olive oil

In a large bowl mix the ground beef, onion, garlic, parsley, seven spice, cumin, coriander, paprika, salt and pepper using your hands. Make sure all is combined well. The mixture might be sticky.

Cut the pitas into quarters and spread the beef mixture between the two thin layers of each piece. You&#39;ll need 2 to 3 tablespoons of beef mixture for each piece.

Place a grill pan over medium heat and make sure it&#39;s hot. Brush the pan with the olive oil and place the stuffed pitas on the pan. Cook for 5 minutes on each side until the beef is fully cooked and the pita is crispy.

To cook on the stovetop:

Preheat the oven to 400°F and brush the stuffed pitas with olive oil on both sides. Place them on a baking sheet and bake them in the oven for 12 to 15 minutes, flipping halfway through.

Serve with tahini sauce or yogurt.

Grilled Chickpea Veggie Pitas - za’atar spiced chickpea filling, stuffed into whole grain pitas then grilled until the outside is crispy. High protein, high fiber, and highly nutritious meal that will keep you satisfied.

Grilled Chickpea Veggie Pita

chickpeas,

yellow onion, finely diced

red bell pepper, finely diced

oz of mushrooms, finely diced

garlic,

tomato paste

tbsp soy sauce or coconut aminos

tsp za’atar

tsp coriander

fennel seeds

parsley,

Salt and pepper

whole grain pitas

plain, unsweetened vegan Greek-style yogurt

lemon

garlic, crushed

cilantro, finely minced

tsp extra virgin olive oil, optional

Place your chickpeas in a bowl and roughly mash them with a fork to crumble it, then set aside.

To a sauté pan over medium heat, heat up a tablespoon of oil then add in the onion, bell pepper and mushrooms. Give the mixture a quick toss and let it sit for 2-3 minutes to release some of the moisture. Add a pinch of salt and continue to sauté until the mixture has cooked down and most of the liquid has cooked off.

Add the garlic and sauté till fragrant, then add the tomato paste, mashed chickpeas, soy sauce, za’atar, cumin, coriander, and fennel seeds and sauté for an additional 2-3 minutes.

Stir in the parsley, taste and adjust seasoning to your liking then set aside.

Preheat a griddle then cut your pita in half and open the pocket. Carefully stuff each pita half until it is filled to the top. Brush or spray the pita with the remaining oil.

Place the pita filling side down on the grill for 3-4 minutes until grill marks appear then flip and sear it for about 3 minutes on the remaining sides. Repeat with the remaining pitas.

To make the yogurt sauce, combine the yogurt sauce ingredients in a bowl and whisk to fully combine then add salt and pepper to taste. Serve the grilled pita with the sauce and any fresh veggies you like.

You know what&#039;s better than warmed Chicken Gyros slathered with tzatziki sauce, crunchy cucumbers, fresh tomatoes and some herbs.... NOTHING! Seasoned chicken that&#039;s grilled to perfection and wrapped up in a warm pita is the epitome of happiness in my book and we all deserve that in our lives.

Chicken Gyros

lemons (juiced)

salt

black pepper

cumin

oregano

red-pepper flakes

chicken thighs

pita bread

tbsp Chopped Parsley

Cherry Tomatoes (halved)

Cucumbers (cubed)

recipe Homemade Tzatziki Sauce

Romaine lettuce

In a large zip-top bag, combine the lemon juice, 1/2 cup olive oil, garlic, salt, pepper, cumin, paprika, oregano and red-pepper flakes.  Add the chicken, zip the top of the bag and give it a quick shake to combine. Refrigerator for at least 1 hour and up to 12 hours.

Pre-heat a cast iron to medium high heat. Remove the chicken from the marinade and grill each chicken thigh for 4-5 minutes on each side until done. Remove and set aside to rest.

Slice the chicken against the grain into thin strips and transfer back into the skillet and sauté for 2 minutes until just slightly crispy around the edges.

Transfer the chicken to a large bowl and toss to combine with the parsley, cherry tomatoes and cucumbers.

Place the chicken in the middle of a pita and top with the assorted toppings. Fold the pita up and wrap with parchment to hold it together.

Delicious!   I grilled the chicken. This is going to be my go to marinade for chicken.

Fantastic and easy!  I used boneless skinless chicken breast and subbed marjoram for oregano and it tasted great.  I use marjoram in a lamb/beef gyros recipe and thought it would be OK.  It was. Family loved it too!

Gaby does it again! Absolutely delicious, the chicken is juicy, flavorful, tender and crispy! I made the homemade tzatziki on the side and that was great as well. The meal is so fresh it felt like it was from a nice restaurant. 
If you prep a little ahead of time this is definitely a quick week night meal! My husband said this should be called marry me chicken!

Very simple recipe. Thought it seemed kind of boring before I made it but the marinade is to die for.

Delicious!  Fam raved about it.  Taste like a restaurant!  Substituted breast for thighs because that is what si had in fridge.  Can’t wait to make it for my extended family when they visit in May.
