Mashed sweet potatoes make for the perfect healthy side dish recipe. It comes together with just a couple simple ingredients and it&#x27;s perfect for the holidays or any day of the week.

Mashed Sweet Potatoes

butter (or ghee)

milk (dairy-free milk also works)

salt and pepper (to taste

parsley (finely diced)

Bring a large pot of water to boil on high heat.

Peel the sweet potatoes with a hand peeler.

Dice the potatoes into chunks and place them into the pot. Cook the potatoes for 20-30 minutes, or until the potatoes are fork tender.

Drain the potatoes over a colander.

Place the potatoes in a large mixing bowl and mash them with a hand masher or electric beater.

Then, pour the butter and milk into the mixture and continue mixing until creamy. Season with salt and pepper.

Scoop the mashed sweet potatoes into a bowl, sprinkle with chopped parsley and serve!

Weaning recipe: Slow-cooked lamb & veg with sweet potato & carrot mash

Heat oven to 160C/fan 140C/gas 3. Melt the butter in a big ovenproof casserole dish. Brown the lamb shank on all sides for a few minutes and then remove from the pan. Gently cook the onion for 7-8 mins until well softened, adding a little more butter if necessary. Add the garlic and cinnamon and cook for a further minute.

Return the lamb shank to the pan, along with the carrot and celery. Pour in the water or veg stock (bear in mind water is better for baby). Bring to the boil, then put on the lid and transfer to the oven. Cook for 2 - 2 1/2 hours until the lamb is very tender.

Meanwhile wrap the sweet potatoes in tin foil and roast in the oven for 45 mins to 1 hour until completely tender. Scoop out the insides and mash with a little butter. For baby, shred the meat into small pieces and serve with the soft vegetables and mash. Serve everyone else with a whole shank and some veg, spoon over a little of the cooking liquor and put a dollop of mash on the side.

Roasted Sweet Potato Mash

Preheat oven to 200°C/180°C fan/gas mark 6.

Prick the sweet potatoes all over with a fork.

Place the sweet potatoes directly onto the oven’s wire rack and bake for 45 minutes or until soft. Be sure to place a tray underneath to catch the syrup of the vegetables.

When the sweet potatoes are cooked, remove from the oven and make a slit down the side on each sweet potato.

The flesh should slide easily out of its jacket. Place all the sweet potato flesh in a large bowl or pot, and discard the skins.

Mash the sweet potato with a fork or masher, along with fat and spice of your choice. Season to taste.

Serve immediately as a side dish to a meal.

Not sure what universe these were cooked in that led to these instructions, but 200 degrees means far FAR longer than 45 minutes.

Loved it...I usually skin, cube and boil mine until soft. Add a knob of margarine, (not butter), salt, black pepper a dessert spoon of mixed spice (UK) and mash it all together until creamy. (sometimes, I even mash swede with it). Serve it with any roast meal.

Creamy garlic, lemon & spinach salmon

Heat oven to 200C/180C fan/gas 6. Pierce the sweet potatoes a few times each and microwave on high for 5 mins until soft (alternatively, bake for 35-40 mins). Keep warm until ready to serve.

Heat half the oil in a frying pan and lightly brown the salmon on both sides – don’t worry about it being cooked through at this point. Transfer the salmon to a plate, wipe out the pan and heat the remaining oil. Cook the garlic for 30 seconds, without letting it brown, then add the spinach, lemon zest and juice and some seasoning. Stir in the mascarpone and 2 tbsp of the milk and cook until the spinach has wilted.

Tip the spinach mix into an ovenproof dish and top with the lemon slices and salmon fillets. Bake for 5-8 mins until the salmon is cooked through.

Meanwhile, scoop the sweet potato flesh from the skins and mash with the remaining milk and some seasoning. Serve the sweet potato mash alongside the salmon and creamy spinach.
