Mediterranean parsley salad or tabbouleh, tabouleh, tabouli, probably the best-known Middle Eastern salad recipe, made with lots of parsley, dressed in a simple olive oil and lemon juice dressing.

Mediterranean Parsley Salad – Tabbouleh or Tabouli

115 g/ 4 oz/ ½ cup fine or medium bulgur wheat (Note 1)

250 ml/ 8.4 fl.oz/ 1 cup hot vegetable broth

plum tomatoes (Note 2)

cucumber

spring onions (depending on size)

80 g/ 2.8 oz fresh parsley leaves (Note 4)

g/ 0.7 oz fresh mint leaves (Note 4)

lemon

extra virgin olive oil

fine sea salt and pepper

Place the bulgur into a heatproof bowl and cover it with the hot vegetable broth. Let stand for 5 to 10 minutes or according to the packet's instructions. Drain well, if you notice that not all liquid has been absorbed. Place the drained bulgur into a large bowl and let cool while you prepare the rest of the ingredients.

Halve the tomatoes and deseed them, if necessary. Chop them very finely. Deseed the cucumber, if necessary, and chop it finely as well. Thinly slice the spring onions.

Remove the stems from the parsley and weigh the leaves, you should have about 80 g/ 2.8 oz parsley leaves. Do the same with the mint, you should have about 20 g/ 0.7 oz mint leaves. Chop both kinds of herbs very finely with a sharp knife to avoid bruising them too much.

Add all the chopped herbs and vegetables to the bulgar bowl. Mix carefully but thoroughly and add the lemon juice and the olive oil. Adjust the taste with salt and pepper and more lemon juice, if necessary.

Lebanese taboule salad (tabouli) is fresh, light and easy to make. Finely sliced parsley with tomato, onion and bulgur in a lemon dressing.

Fresh Taboule Salad (Authentically Lebanese)

Flat leaf parsley (finely sliced)

medium - large Tomatoes (finely diced)

Onion (finely diced)

Mint leaves (finely sliced)

Fine burgul

Lemons (juiced)

Olive oil (extra virgin)

Salt (to taste)

Wash fine bulgur in water, strain and then add to a small bowl, add the lemon juice and olive oil on top, give it a stir and set aside for the bulgur to absorb the juice and double in size. This is best done before slicing/dicing the fresh ingredients. 

In a large bowl, add all the fresh ingredients, the soaked bulgur and salt. Toss everything together, do a taste test and adjust salt, olive oil and or lemon juice to taste. Serve cold.

Lebanese taboule salad, aka tabouli, is fresh, light and super easy to make. The star ingredient is finely sliced parsley paired with tomato, onion and bulgur in a lemon dressing. Naturally vegan.

Taboule (Lebanese Salad Recipe)

Tabouleh is extra lekker als je het een dag van tevoren maakt. Zo kunnen de smaken goed intrekken. Voeg de olie en het citroensap altijd pas op het laatste moment toe.

Tabouleh, peterseliesalade met smaak

bulgur

½ granaatappel

200 gr platte bladpeterselie, blaadjes gewassen, gedroogd en fijngesneden

½ bosje verse munt, blaadjes gewassen, gedroogd en fijngesneden

tomaten, zaad verwijderd, in kleine blokjes

rode ui, heel fijn gesnipperd

bosje lente-uien, in schuine ringen

komkommer, in een kleine blokjes

Geraspte schil en sap van 1 citroen

Zout en versgemalen zwarte peper

el olijfolie (of citroenolie)

Doe de bulgur in een kleine kom en voeg zoveel kokend water toe dat de bulgur onderstaat. Laat afgedekt 10 minuten wellen.

Halveer de halve granaatappel en pulk de pitten eruit (zonder witte vliesjes).

Meng de bulgur met de granaatappelpitten, peterselie, munt, tomaat, rode ui, lente-ui, komkommer en citroenrasp en breng op smaak met zout en peper.

Roer de tabouleh goed door elkaar zodat alle smaken gemengd worden. Besprenkel vlak voor het serveren met het citroensap en de citroenolie.

Verse munt is zeer smaakbepalend en veel meer dan een blaadje voor de sier. Dit zoet-frisse kruid voelt zich thuis in heel veel keukens en past perfect in zoete én hartige gerechten. Bijvoorbeeld in deze verrukkelijke Midden-Oosterse tabouleh. Verse munt vind je op de markt, in de supermarkt en bij tuincentra. Steeds vaker zijn ook andere muntsoorten verkrijgbaar, als appel-, chocolade-, aardbeien- en de sterk aromatische pepermunt. Leuk om mee te experimenteren op je balkon, in de tuin en vooral ook in de keuken! Maar voor nu pakken we deze tabouleh goed in en nemen we ‘m mee naar het park.

175 g bulgur (fijn)

kropje little gem (in dunne reepjes)

komkommer (kleine, geschild, zonder zaden in blokjes)

el muntblad (fijngesneden + hele muntblaadjes voor erover)

lente-uitjes (fijngesneden)

el citroen (sap)

el olijfolie (extra vergine)

500 ml Griekse yoghurt (dik)

el muntblaadjes (fijngesneden)

teen knoflook (fijngesneden)

tl olijfolie (extra vergine)

ook nodig: kaasdoek of fijne linnen theedoek

Doe voor de labne 80 ml yoghurt in een keukenmachine en voeg de munt, knoflook, olie en 1 tl zout toe. Pureer grof met de pulseerknop. Roer de resterende 420 ml yoghurt erdoor en schep dit in een met kaasdoek beklede zeef. Hang de zeef boven een kom, vouw de punten van het kaasdoek samen en knoop ze bijeen. Leg er een schoteltje op en zet er iets zwaars op, bijv. een conservenblik. Laat 24 uur uitlekken in de koelkast.

Doe de volgende dag de bulgur in een hittebestendige kom en overgiet met kokendheet water. Laat de bulgur 10-20 min. wellen tot deze beetgaar is. Zeef de bulgur, spreid uit op een schone theedoek en laat 15 min. uitdampen.

Schep de bulgur in een grote kom. Voeg de sla, komkommer, munt, lente-ui, het citroensap, de olie en wat zout en peper toe. Schep op een grote platte schaal. Breng de munt-labne hier en daar aan en strooi de resterende muntblaadjes erover.

Neem de tabouleh en een citroen los mee en stel je salade ter plekke samen. Het vlees verwarm je in een… tostigrill! Vegavariant: met tofoe of halloumi.

400 g procureur (varkensschouder of -nek, in lange, dunne repen)

ook nodig: satéprikkers

bosje munt (blaadjes fijngesneden + extra als garnering)

bosje bladpeterselie (blad fijngesneden)

½ bloemkool (zonder stronk, in roosjes)

broccoli (zonder stronk, in roosjes)

citroenen (bio, sap en rasp)

500 g kerstomaatjes (gehalveerd)

80 g tamari-amandelen* (grof gehakt + extra als garnering)

Meng in een kom de rijstmoutstroop met de granaatappelmelasse, sumak, oregano en wat zout en peper. Schep de procureur hiermee om. Laat 10 min. intrekken en rijg telkens 1 lange reep al zigzaggend aan een spies.

Leg intussen de kruiden voor de tabouleh in een kom ijskoud water. Laat 5 min. weken en giet af. Hak de bloemkool en broccoli in de keukenmachine tot kruim ter grootte van couscous. Schep in een kom en meng met de kruiden, de citroenrasp en het -sap, de olie, tomaatjes, amandelen, wat zout en peper.

Verhit een grillpan op matig vuur of maak de barbecue aan. Gril de vleesspiesen in ± 4 min. gaar terwijl je ze regelmatig keert en met extra marinade bestrijkt. Schep op een bord en laat 5 min. rusten. Serveer met de tabouleh, extra munt en amandelen.

Recipe is adapted from our cookbook, Bountiful. Homemade tabbouleh made with a mix of fresh parley and mint leaves is such a treat, especially when we add in some cooked garlic corn. The sweet pops of corn kernels in this salad make it one of the highlights of summer. If you really love your corn, just double the amount of corn in the recipe. You won’t be disappointed. Cook the corn however you prefer, sautéed, roasted, grilled... any variation will be delicious. If you want to mellow the garlic taste in the tabbouleh, when sautéing or roasting the corn, add the garlic and cook them together instead of using raw garlic in the tabbouleh.  Cook the bulgur a few hours ahead or the day ahead so it can cool completely before mixing all the ingredients together.

Cook bulgur

In a saucepan, combine the bulgur with 1 cup water. Bring the water to a boil, then remove the pan from the heat. Cover, and allow to sit for 20 minutes, until the water has been absorbed. Set aside to cool completely.

Cook corn

If desired, cook the corn to your preferred method: For Sautéing: cook over medium-high heat with 2 Tablespoons of olive oil and the garlic until tender (about 3 minutes). For Roasting: combine the corn, garlic, and 2 Tablespoons olive oil on a baking sheet pan and roast at 450°F (230°C) for 8 to 10 minutes, or until tender. Allow to cool.

Make dressing

In large bowl, combine the remaining 2 Tablespoons olive oil, lemon zest, lemon juice, garlic (if not cooked with the corn), salt, and pepper to taste.

Add remaining ingredients

Add to the bowl of dressing: cooked bulgur, corn, parsley, mint, tomato, and cucumber.

Stir and serve

Stir to combine. Taste for seasonings and add more salt, pepper, and/or lemon juice if necessary. Serve immediately or chill until ready to serve. Gentle stir before serving.
