Ground Beef Taco Meat

Heat a large skillet over medium-high heat. Add the oil and diced onion and sauté for 4-5 minutes, or until the onions are soft. Stir often to prevent burning and reduce heat to medium if needed.

Add the ground beef to the skillet. Use a large wooden spoon or spatula to break the beef into smaller and smaller bits and pieces. Fully cook your ground beef before draining approximately 3/4 of the liquid and fat from the skillet.

Return the skillet to medium-high heat. Add the spices and tomato sauce to the beef and mix well to combine. Continue to cook for an additional 5 minutes or so, stirring often.

Heat a large skillet over medium-high heat. Add the beef to the skillet and cook, crumbling with a spoon or spatula, until browned. Drain any excess grease from the skillet. (If you used 90% or 93% lean ground beef there may not be any extra grease to drain.)

Reduce the heat to medium and add the chili powder, cumin, garlic powder, dried oregano, onion powder, salt, pepper, tomato sauce and water to the skillet. Stir to combine and cook, stirring often, for 5 minutes, until taco meat is fully cooked and has reached your desired texture.

Serve the taco meat in warmed tortillas, with toppings as desired.

Spicy Taco Meat

guajillo chiles (seeds and stems removed)

ancho chile (seeds and stems removed)

water (for soaking)

small chipotle in adobo

vegetable oil

oregano (or Mexican oregano)

paprika (or smoked paprika)

Bring 4 cups of water to a boil. Place the guajillo and ancho chiles in a heat-proof bowl. Pour the water over them until they&#39;re completely submerged. Let them soak for 10-15 minutes, until soft. Strain the chiles and reserve the liquid. Set them aside.

Add the soaked chiles, chipotle in adobo, salt, and pepper to a blender. Pour in 1/2 cup of the chile&#39;s soaking liquid. Process everything until you get a smooth mixture. Season with more salt and pepper to taste. Strain the sauce and set it aside.

Place a large pan over medium-high heat. Add the vegetable oil and let it heat for 1-2 minutes. Add the ground beef. Let it cook for 8-10 minutes, until browned. Use a spatula to break up the meat as it cooks.

Sprinkle in the cumin, oregano, paprika, salt, and pepper. Mix to combine.

Reduce the heat to medium-low and pour the blended sauce in. Mix well. Let it simmer for 15-20 minutes, but don&#39;t let the sauce be completely absorbed so keep an eye on the stove.

Season with more salt and pepper, to taste. Remove from the heat and serve as desired.
