Instead of beef I used button mushrooms to make it vegetarian. It came out ok but I don't think 20 minutes is enough cook time for the bell pepper so the second time I made it I left the bell peppers in the oven while I stir-fried the onions, garlic and mushrooms and it came out great

Made this for the first time and we thought it was bland. Very disappointed.

Made this last night and the whole family finished every bite! My husband made the pico, and I added a dollop of sour cream and sliced avocado. The seasonings were really perfect. This is going in my regular rotation!

These were really tasty! I covered with mozzarella cheese and topped with the cilantro and some nonfat greek yogurt (I'm not on keto) and it was delicious

3 stars, good, not hard to make.  A touch on the bland side, I'll try again & double the chili powder, and don't forget to serve w/salsa.  My peppers were small so I used 4 & it worked out perfect.

Roasted bell peppers stuffed with a super yummy southwestern ground turkey and rice mixture and topped with cheese.

Southwest Turkey Taco Bell Peppers

red/yellow/orange bell peppers (cut

onion

lb turkey

tomato sauce ((equals about 3/4 cup))

garlic powder

1½ tsp EACH chili powder and cumin

tsp smoked paprika

rice

water

cheese

cooking spray

kosher salt and pepper

lime crema (*recipe in blog post and notes*)

avocado, pico de Gallo cilantro, pickled red onion, guacamole, sour cream

Preheat oven to 425 degrees. Slice the peppers in half from stem to base and clean out all the seeds and membranes.

Place peppers on a sheet pan and spray with cooking spray and season the inside and outside with salt and pepper. When you start to cook the rice, place peppers in a preheated oven so the stuffing and peppers are done at about the same time.Roast peppers for about 20 minutes.

Prep the peppers

In a large skillet over medium heat, heat olive oil and add diced onions. Season with salt and pepper and cook until softened.

When the onions are soft, add in the ground turkey and break up with a spatula. Add garlic powder, chili powder, cumin, smoked paprika, and 1/2 tsp kosher salt. Continue to cook til the ground turkey is browned and cooked through. 

When the turkey is cooked, add better than bouillon, tomato sauce, water, and uncooked rice to the pan. Stir together well and bring to a gentle boil. Reduce heat to a gentle simmer and cover the pan with a tight fitting lid.

Cook the mixture for about 20-22 minutes until rice is cooked. Check rice by scooping a few grains out gently with a spoon. If it still has a bite, put the lid back on, and continue to cook for another couple of minutes. When the rice is all cooked remove the lid and fluff with a fork or gently toss with a wooden spoon*Note: If your lid has a hole in it that releases steam stuff a little piece of aluminum foil in it to block it. 

Make Turkey Taco and Rice Stuffing

Evenly stuff the taco meat and rice mixture into each pepper, evenly sprinkle shredded cheese onto each pepper.Place sheet pan back into the oven to let the cheese melt, about 5 minutes.If you want to, top stuffed peppers with favorite taco toppings like diced avocado, pickled red onions, pico de Gallo, cilantro, lime crema, crushed tortilla chips, guacamole for an even more delicious and impressive meal!

Make Turkey Taco Stuffed Peppers

Easy Taco Stuffed Peppers are a fun low carb dinner ready in 30 minutes. One pound of ground beef is cooked with beans, seasoned with a homemade spice blend, stuffed into bell peppers, then topped with cheese.

Preheat oven to 400 degrees F.

Slice the bell peppers in half. Spoon out the seeds and membranes. Place the peppers cut side up in a large baking dish.

Bake the peppers for 20 minutes until softened.

While the peppers are baking, prepare the taco meat. Place the ground beef into a medium size skillet, cook over medium heat while breaking up the meat.

Add in the garlic and cook an additional 30 seconds.

Mix in the salt, garlic and onion powders, cumin, chili powder, and oregano.

Stir in the Rotel and black beans until the entire mixture is combined.

When the bell peppers are done baking, if needed carefully drain out any excess moisture that accumulated in the bottom of them.

Spoon the cooked meat mixture into the peppers. Top with grated cheese.

Bake the stuffed peppers for 5 minutes until the cheese is fully melted.

Remove from the oven and serve with additional taco toppings as desired.

Preheat your oven to 400ºF.

Slice peppers in half lengthwise then place in a casserole dish and bake for 10 minutes.

While the peppers cook, brown the beef in a large skillet, then add the water, tomato paste, seasonings, and black beans. Simmer for a couple of minutes then add the shredded zucchini. Cook until the sauce reduces and thickens.

Remove the peppers from the oven and carefully remove any water that has pooled in the bottom of them. Divide the beef mixture amongst the halved peppers then top with shredded cheese.

Bake in the oven for 20 minutes.
